- Preheat oven to 350F.
- Heat the oil or the lard in an oven-safe pan, on the stovetop, medium heat.
- Add the cubed pork meat and brown it on all sides.
- Chop the onion and add it to the pan. Saute it until translucent, stirring frequently.
- Add the shredded cabbage and stir well. Add a pinch of salt.
- After the cabbage loses some of its volume, add a little water, tomato sauce, thyme, and bay leaves.
- Add salt and pepper to your taste.
- Allow it to simmer on medium heat on the stove for about 10 minutes until the ingredients get friendly with each other.
- Place the pan inside the oven and bake at 350F for 45-60 minutes. Do not cover it.
- Remove when the sauce is reduced to half, and the cabbage is caramelized on top.
- Serve it with sour cream on top, your favorite bread, and hot peppers, if you like them.

- For the slaw: Toss the green cabbage, red cabbage, vinegar, oil, salt pepper and green onions in a medium bowl to blend. Cover and refrigerate while preparing the pork.
- For the pork: In a medium bowl, whisk together the orange juice, soy sauce, brown sugar, vinegar, sesame oil, pepper, garlic, ginger and orange zest to blend. Add the pork tenderloin and turn to coat. Refrigerate for at least 1 hour, turning occasionally.
- Preheat the oven to 425 degrees F.
- Remove the pork from the marinade. Reserve the marinade. Place the pork on a nonstick heavy baking sheet and roast until an instant-read thermometer inserted into the center of the pork registers 145 degrees F, 25 to 30 minutes. Remove the pork from the oven and let stand 5 to 10 minutes.
- Pour the marinade into a heavy medium saucepan and whisk in the arrowroot. Bring the mixture to a boil over medium-high heat. Reduce the heat and simmer until the sauce thickens slightly, 3 to 4 minutes. Remove the sauce from the heat and cool slightly.
- Transfer the pork tenderloin to a work surface and cut crosswise into 1/4- to 1/3-inch-thick slices. Divide the pork among the bottom halves of the rolls. Top the pork with sauce and slaw. Cover with the top halves of the rolls and serve.

- Heat 1 tablespoon olive oil or sesame oil in a large skillet with high sides. Add the ground pork and let it cook for 2 minutes over high heat undisturbed, so that the bottom browns. Season with salt. Break up the meat with a spatula and continue to cook over high heat stirring frequently for about 5 minutes, or until the pork is fully cooked. Transfer the cooked pork to a large plate or bowl while you work on the rest of the recipe.
- Add a tablespoon of oil to the same skillet and add the chopped onion. Allow to cook over medium-high heat for 1-2 minutes to let the onion caramelize slightly (but don't let it burn), then stir. Add the chopped cabbage and stir. Cover and cook for 3-5 minutes over medium heat. Remove the cover, stir, and continue to cook uncovered for another 3-5 minutes stirring frequently.
- Combine all the ingredients directly in a small saucepan. Stir with a whisk or a fork and cook over medium heat for about 5 minutes stirring every few minutes, or until the sauce thickens, turns translucent, and takes on a shiny reddish brown color. Remove from heat.
- Add the ground pork and the sweet and most of the sour sauce to the cabbage skillet - reserve 2-4 tablespoons of sauce for garnish! Stir and cook for 1-2 minutes, until everything is heated through.
- Transfer the sweet and sour cabbage to a serving dish or directly to your plates. Add a drizzle of the remaining sweet and sour sauce. Garnish however you like - with chopped scallions, toasted sesame seeds, red pepper flakes, or a drizzle of sriracha.

BOHEMIAN SWEET AND SOUR CABBAGE
This recipe is so old it could be considered "antique." It was my Grandmother's recipe. When I prepared it, I was an adult but it definitely rang childhood memory bells. I did remember the delicious taste. My Grandmother wrote out this recipe as I am reproducing it and on the recipe she noted that this dish is good with roast pork or pork chops, dumplings and applesauce. An excellent meal from Central Europe! (Bread dumplings are now available in the freezer section of the supermarket.)

- Brown the onion in the shortening, only to a golden color. Do not brown.
- Add the water, vinegar, sugar, salt and pepper. Bring the liquid to a boil. (This liquid is just enough for this size cabbage.).
- Put cabbage in; sprinkle with caraway seed if you wish.
- Boil for 1/2 hour.
- Sprinkle with flour. Stir it up and boil just a few seconds for the flour to dissolve.

- Place cubed pork in a medium bowl, and season with 1 teaspoon salt, 1/4 teaspoon sugar, and 1 teaspoon soy sauce. Mix in the egg white and green onions. Cover, and place in the refrigerator at least 1 hour.
- Heat 1 quart oil to 365 degrees F (185 degrees C) in a large, heavy saucepan or deep fryer.

- In a bowl, combine all marinade ingredients with the pork. Cover and leave to marinade in the fridge 20 minutes.
- Place the corn flour in a large bowl and toss the marinated pork chunks until liberally coated.

- Place cabbage in salted boiling water for 8 minutes with lemon juice.
- Remove cool and separate into individual leafs. Make sure to slice middle ridge so the leaf is totally flat for rolling, reserve.
- Heat a large sauté pan with olive oil over medium heat.
- Place onions in pan and sweat for 7 minutes.
- Add pork and sauté for another 10 minutes making sure to break up pork with a spoon as you sauté.
- Add garlic puree and cook till garlic is caramelized.
- Now add Teriyaki sauce and reduce till mixture has reduced.
- Drain off excess liquid and cool mixture at room temperature.
- Add cooked rice along with mascarpone cheese and chopped fresh tarragon. Combine well.
- Take a tablespoon of mixture and place in cabbage leaf, roll tightly to form a cabbage burrito roll.
- The Sauce.
- Pulse tomatoes with the liquid in a blender for 20 seconds.
- Add tomatoes to a pot along with vinegar, sugar, white wine and sweet chili sauce and reduce by 1/3.
- Place cabbage rolls in a baking dish and cover with liquid by two thirds.
- Cover with aluminum foil and place in a 350F degree oven for 25 minutes.
- Serve in a bowl and drizzle sauce over cabbage.
