This sweet-savory recipe is a favorite. Use Brie instead of blue cheese if you like things creamier. My tip? Bake the apples in a muffin tin so they won't roll around. -Jessica Levinson, Nyack, New York

2 medium apples
2 tablespoons crumbled blue cheese, divided
2 tablespoons quick-cooking oats
2 tablespoons bran flakes
1 tablespoon golden raisins
1 tablespoon raisins
1 tablespoon brown sugar

Steps:

  • Cut apples in half lengthwise; remove cores. Place in an ungreased 8-in. square baking dish. Place 1 teaspoon of blue cheese into each half., In a small bowl, combine the oats, bran flakes, golden raisins, raisins and brown sugar; spoon into apples. Top with remaining cheese. Bake, uncovered, at 350° until tender, 35-40 minutes.

3 -4 granny smith apples
1/4 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
3/4 cup butter or 3/4 cup margarine
1 1/2 cups sugar
1 cup flour
1 egg
1/2 cup pecans, chopped (optional)

Steps:

  • Slice and peel the apples and pile into a pie plate or other glass baking dish.
  • Sprinkle with 2 tablespoons sugar.
  • Make a batter of the remaining ingredients and pour over the apples.
  • Bake for 45 minutes at 350 degrees.
  • Serve warm with vanilla icecream or coolwhip.

Real comfort food!! This one comes from a friend I worked with many years ago and one from my hand written cookbook. Makes a golden biscuit topping with a tasty sauce below. Nice with whipped cream and/or custard for a really filling dessert. I have altered the amount of water as suggested by reviewers but I find by allowing the pudding to stand after cooking the 2 cups should be ok.

1 cup flour
1 pinch salt
2 teaspoons baking powder
1 tablespoon sugar
1 cup apple (peeled, cored & chopped)
1/2 cup milk
1 cup brown sugar
1 tablespoon butter
1 lemon, juice of
1 1/2-2 cups boiling water
1/2 teaspoon cinnamon

Steps:

  • Sift flour, baking powder, salt & sugar together.
  • Add the chopped apple & milk.
  • Mix well and place in greased ovenproof dish.
  • Blend together the brown sugar, butter, lemon juice and boiling water.
  • Pour this over the batter in the dish.
  • Sprinkle cinnamon on top and bake at 350'F/180'C for 20 - 25 minutes.
  • After removing from the oven allow to stand for 10-15mins to allow the syrup to thicken and be slightly absorbed.
  • Serve warm with cream or custard.

6 cups water
6 sweet apple tea bags (recommended: Celestial Seasonings Sweet Apple Chamomile)
1 1/3 cups Vanilla Simple Syrup, recipe follows
1 small apple, thinly sliced
1/2 lemon, thinly sliced
Ice
1 cup granulated sugar
1 cup water
1 vanilla bean, cut in 1/2 lengthwise and seeds removed

Steps:

  • In a medium saucepan, bring the water to a boil over high heat. Remove the pan from the heat and stir in the tea bags. Allow the liquid to cool to room temperature, about 1 hour. Remove the tea bags and discard. Add the Vanilla Simple Syrup and stir. Pour the mixture into a glass pitcher. Add the apple and lemon slices and refrigerate for 1 hour.
  • Pour the tea into ice-filled glasses and serve.
  • In a small saucepan over medium heat, combine the sugar, water, vanilla bean, and vanilla bean seeds. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Strain before using.
  • Yield: 1 1/3cups

2 medium apples
¾ cup brown sugar
1 tablespoon ground cinnamon
1 tablespoon unsalted butter, softened

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Use a knife to carve out the core from the top half of each apple; it may be tricky at first, but be aggressive.
  • Combine brown sugar, cinnamon, and butter in a medium bowl. Mix with a fork, pressing butter against the sides of the bowl until covered with sugar and cinnamon and chunky. Scoop mixture into the apples, making sure to pack it tightly. Place apples upright on a small cooking tin.
  • Bake in the preheated oven for 10 minutes. Carefully remove the hot tin from the oven and let apples cool for 10 minutes before serving.
