1 cup butter, softened
1 ½ cups white sugar
2 eggs, beaten
1 tablespoon almond extract
2 ½ cups all-purpose flour
2 teaspoons baking powder
16 almond halves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 8 inch round cake pans, or 9 inch pie plates.
  • In a large bowl, use an electric mixer to beat butter and sugar until light and fluffy. Add eggs, reserving just enough to brush over the tops, about 1 tablespoon. Stir in the almond extract. Combine the flour and baking powder; stir into the batter by hand using a sturdy spoon. The dough will be stiff.
  • Press evenly into the two prepared pans. Press almond halves into the top where each slice would be. Brush the tops with a thin layer of the reserved egg.
  • Bake in the preheated oven for about 30 minutes, or until the top is golden brown. Cut into wedges to serve.

3 medium tart apples, peeled and cut into 1/4-inch slices (3 cups)
3 tablespoons plus 1 cup sugar, divided
1 teaspoon ground cinnamon
2/3 cup butter, softened
4 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1/8 teaspoon salt

Steps:

  • In a large bowl, combine the apples, 3 tablespoons sugar and cinnamon; let stand for 1 hour. , In another bowl, cream butter and remaining sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Add vanilla. Combine flour and salt; gradually add to creamed mixture and beat until smooth. , Transfer to a greased 9x5-in. loaf pan. Push apple slices vertically into batter, placing them close together. , Bake at 300° for 1-1/2 to 1-3/4 hours or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Serve warm.

10 cooking apples, peeled, cored and cut into small chunks
1/2 cup sugar, or to taste
1 cup raisins
5 tablespoons butter, melted
4 egg yolks, lightly beaten
4 egg whites, stiffly beaten
Butter for greasing the pan
1 1/2 cups toasted bread crumbs
Sweetened whipped cream, optional

Steps:

  • Preheat oven to 350 degrees.
  • In a saucepan over a medium flame, heat the apples without water until very tender, periodically stirring. This requires supervision, otherwise they will burn.
  • Mash the apples and taste them. Add sugar to taste. Add the raisins, melted butter and then the yolks. Gently fold in the egg whites and incorporate thoroughly.
  • Butter a 9-inch springform pan and sprinkle with 1/2 cup of the bread crumbs to make an even coating. Pour half the apple mixture in the pan and sprinkle the top with another 1/2 cup of bread crumbs. Then add the remainder of the apple mixture and top with an even layer of the remaining bread crumbs. Bake for about 50 minutes until the cake is firm and light brown. Remove, cool and remove ring. Serve cut into wedges with whipped cream, if desired.

3/4 cup/170 g butter
4 teaspoons sugar
Pinch salt
1 1/2 cups/185 g all-purpose flour
6 eggs, lightly beaten
1 1/2 teaspoons pure vanilla extract
Milk, for glaze

Steps:

  • Preheat the oven to 375 degrees F/190 degrees C.
  • Put 1 1/2 cups/375 ml water, the butter, sugar and salt in a roomy saucepan and bring to a boil. Remove from the heat and add the flour all at once, beating until it forms a ball and pulls away from the sides of the pan. Return the pan to the heat for a minute or two and beat to dry it out a little. (Removing moisture will allow the paste to absorb more egg, which will ultimately make the puffs lighter.)
  • Remove the pan from the heat. Beat in the eggs, the equivalent of one at a time, until fully incorporated. (Do not try to add them at once because they can't be incorporated quickly enough, it makes a total mess, and furthermore you may not need all of them.) After the third addition of egg, add only enough to make dough that will fall, glossy and heavy, from the spoon. Beat in the vanilla. Spoon the dough into a piping bag.
  • Mix a bit of milk into any remaining egg (if no egg left, use only milk). Have at the ready with a pastry brush for glazing. Pipe the dough into evenly-sized (about 1 inch/2.5 cm) balls on a nonstick baking sheet, leaving a good 2 inches/5 cm between them so they have room to expand. Brush the tops with the glaze and press the snouts down with a fingertip. Bake until puffed up, light, dry and golden, 25 to 30 minutes. Cool on a wire rack, so they can breathe all around and will keep their shape and not go soggy.

1 cup flour
2/3 cup brown sugar, firmly packed
1 tablespoon vegetable shortening
1 cup molasses, preferably unsulphered
1 egg, slightly beaten
1 cup hot water
1 teaspoon baking soda
9-inch pie shell, recipe follows
3 cups flour
1 teaspoon salt
1 1/4 cups vegetable shortening
1 egg, beaten
1/3 cup cold water
1 tablespoon white vinegar

Steps:

  • Preheat oven to 425 degrees F.
  • Mix flour, brown sugar and shortening into crumbs with fingers, fork or pastry blender. Reserve 1/2 cup of crumbs for the top of the pie. To remaining crumbs, blend in the molasses, egg, and 3/4 cup hot water. Mix the baking soda with remaining 1/4 cup hot water and promptly add to mixture. Pour into unbaked pie shell and bake for 15 minutes. Top the pie with the reserved crumbs and reduce oven temperature to 350 degrees F. and bake for an additional 40 minutes.
  • The pie can be served at room temperature or chilled.
  • In a large bowl, mix together flour and salt. Cut in shortening until well incorporated. Add remaining ingredients and mix until well blended. Let rest a few minutes, then divide dough into 4 portions. Roll a dough disc out on a lightly floured surface and press into a 9-inch pie plate. Individually tightly cover and freeze remaining 3 portions of dough.

2 cups white flour
2 cups whole wheat flour
1 cup shortening
1 cup white sugar
1 cup brown sugar
1 cup baking molasses (I use Brer Rabbit)
2 teaspoons baking soda (level)
2 cups hot water

Steps:

  • Mix together (like a crumbly pie crust) flour, shortening, sugars in a large bowl, reserving 1/2 cup of the crumbs for top of cake.
  • In another bowl, mix: molasses, baking soda and hot water.
  • Stir until mixed and some of the foam disappears.
  • Add to the crumb mixture and stir until blended.
  • Put in a 9 X 13 inch loaf pan that has been greased and floured.
  • Put the 1/2 cup crumb mixture on top and bake for 1 hour at 350 deg.

1 pound honey-cinnamon graham crackers
2 teaspoons baking powder
6 eggs, lightly beaten
2 cups sugar
2 cups milk
1/2 pound sweet butter, melted
1 1/2 cups walnuts, coarsely chopped
1 1/2 cups pecans, coarsely chopped
7 ounces grated coconut

Steps:

  • Preheat oven to 250 degrees.
  • Roll crackers to make fine crumbs, either with a rolling pin or in a food processor.
  • In a large bowl, blend crumbs with baking powder, eggs, sugar, milk, butter, walnuts, pecans and coconut until thoroughly incorporated.
  • Line a shoe box with waxed paper and fill with cake mixture. Place uncovered box on cookie sheet (save top) and bake for 3 hours. Let cool before slicing. If you put waxed paper on top of cake and cover with shoe box lid, the cake will keep for days. Box is reusable.

1 egg
1 teaspoon baking powder
1 1/2 cups flour
4 ounces sugar
4 tablespoons sugar
4 tablespoons flour
1 teaspoon cinnamon
2 tablespoons butter
1 teaspoon baking powder
1 tablespoon cocoa

Steps:

  • Turn oven on to 350 F.
  • Cake: Cream the butter and sugar, add egg and then the dry ingredients which have been sifted together first.
  • Press into a non-stick flat tin.
  • Topping: Cream the butter and sugar and then add the sifted dry ingredients.
  • Spread over the cake mixture.
  • Bake until cooked which usually takes 20-30 minutes.

1-1/2 cups whole milk, divided
2 unbaked pastry shells (9 inches)

1 teaspoon vanilla extract
Whipped cream, optional

Steps:

  • In a small saucepan, combine 1 cup of sugar and cocoa. Blend in 1/2 cup milk. Cook and stir over medium heat until mixture comes to a boil. Cook and stir until thickened, about 2 minutes. Pour into unbaked pastry shells, tipping to coat the pastry halfway up the sides; set aside. In a bowl, combine flour, baking powder, salt and remaining sugar. Add egg, shortening, vanilla and remaining milk; beat until smooth. Starting at the edge, spoon batter into the pastry shells, completely covering the chocolate. Bake at 350° for 40 minutes or until a toothpick inserted in the center comes out clean. Serve warm or chilled with whipped cream if desired.
