1 lb sweet potato, peeled
3 canned chipotle peppers, pureed
1 large egg, beaten
1 tablespoon honey
1/2 cup all-purpose flour
1 3/4 teaspoons chili powder
1 1/2 teaspoons salt
peanut oil, for sauteing
sour cream or creme fraiche, for topping

Steps:

  • Grate sweet potatoes using the grating blade of a food processor or the large holes of a box grater.
  • Transfer grated potatoes to a bowl and add in the chipotles, egg, and honey; stir with a rubber spatula to combine.
  • In a small bowl, whisk the flour, chili powder, and salt together; add the dry ingredients to the potato mixture; stir with spatula just until incorporated.
  • Pour enough peanut oil to come 1/8 inch up the sides of a large cast-iron or other heavy skillet and heat over medium heat until the oil is very hot but not bubbling.
  • While the oil is heating, line a baking sheet with a brown paper bag or a triple thickness of paper towels.
  • For each pancake, drop a rounded tablespoon of batter into the oil and press the cake down with the back of the spoon to create a thin pancake that is about 2 ½ inches across.
  • Be careful not to crowd the pan-leave about 2 inches of space between the pancakes.
  • Cook pancakes until they are deep brown and crispy on the undersides, then turn with a wide spatula and a fork and brown the other sides.
  • Lift the pancakes out of the oil, letting the excess oil drip back into the pan, and place on the brown paper to drain.
  • Pat the tops of the pancakes free of excess oil with paper toweling and serve immediately, or keep, uncovered, in a 200° oven while you make the rest of the batch.

1/2 teaspoon kosher salt
1 chipotle chile pepper in adobo sauce, chopped
1 teaspoon adobo sauce, from the pepper can

Steps:

  • Put the sweet potatoes in a steamer basket and put the steamer in a large pot of simmering water that is 1 inch from the bottom of the basket. Cover and steam over medium-high heat for 20 minutes, or until the sweet potatoes are fork-tender.
  • Remove the steamer basket, pour the water out of the pot and dump the sweet potatoes into the pot. Add the butter and salt and mash with a potato masher. Add the chile and sauce and continue mashing to combine. Serve immediately.

1 large Idaho potato, peeled and shredded
2 medium sweet potatoes, peeled and shredded
1 small onion, peeled
1 egg, beaten
3 tablespoons all-purpose flour, cracker meal, or matzo meal
1 tablespoons chili powder, couple of palm fulls
2 teaspoons smoked sweet paprika, 2/3 palm full
2 teaspoons ground cumin, 2/3 palm full
2 teaspoons coriander, 2/3 palm full
Salt
2 Hass avocados
1 lemon, juiced
1/2 medium red onion, finely chopped
1 small glove garlic, pasted up with some salt
2 jalapenos, seeded and finely chopped
3/4 cup pomegranate juice

Steps:

  • Heat about 1/3 cup of oil over medium to medium-high heat.
  • Drain the shredded potatoes, pressing them down in a colander to get their moisture out. Place the potatoes in a bowl; using a box grater, grate the onion directly into the potatoes so that the onion juices fall into bowl as well. Add the egg and flour or meal to the bowl then season with spices and salt. Combine and drop enough batter into hot oil to make 2 1/2-inch pancakes. Add more oil, as needed, and fry cakes in batches until deeply golden on each side.
  • You will get about 16 pancakes. Drain cooked cakes on paper towels.
  • Cut the avocados in half, all the way around the pit. Remove the pit with a spoon, then scoop the flesh into a bowl and add the lemon juice, onion, garlic, jalapenos and a generous amount of salt. Mash the guacamole to a smooth consistency.
  • Reduce the pomegranate juice to a syrup.
  • Arrange the potato pancakes on a platter and top with heaping spoonfuls of guacamole.
  • Drizzle pomegranate syrup over the guacamole and serve.

3/4 cup all-purpose flour
3/4 teaspoon ground ginger

Steps:

  • Preheat oven to 350°. Place sweet potatoes in a large stockpot; cover with water. Bring to a boil. 1 pound sweet potatoes, peeled
½ cup all-purpose flour
1 teaspoon baking powder
2 teaspoons white sugar
1 teaspoon brown sugar
2 teaspoons curry powder
1 teaspoon ground cumin
2 eggs, beaten
½ cup vegetable oil for frying
½ cup milk

Steps:

  • Shred the sweet potatoes, and place in a colander to drain for about 10 minutes. In a large bowl, stir together the flour, baking powder, white sugar, brown sugar, curry powder and cumin. Make a well in the center, and pour in eggs and milk. Stir until all of the dry ingredients have been absorbed. Stir in sweet potatoes.
  • Heat oil in a large skillet over medium-high heat. Drop the potato mixture by spoonfuls into the oil, and flatten with the back of the spoon. Fry until golden on both sides, flipping only once. If they are browning too fast, reduce the heat to medium. Remove from the oil, and keep warm while the other pancakes are frying.

Sour cream knits the dish together perfectly.

5 pounds sweet potatoes (about 10 medium or 5 large), scrubbed
1/3 to 1/2 cup maple syrup
3/4 cup sour cream or crème fraîche
4 teaspoons purée from canned chipotles
1 1/2 teaspoons ground cinnamon
Salt to taste

Steps:

  • Put oven rack in middle position and heat oven to 375 degrees. Place potatoes on large baking sheet and bake until soft, 35 to 40 minutes for medium potatoes, up to 1 hour for large.
  • Meanwhile, combine syrup, sour cream or crème fraîche, chipotle purée, cinnamon and salt in a small bowl. Whisk until smooth.
  • When potatoes are tender, remove from oven and slice in two lengthwise. Scoop hot flesh into a potato ricer or food mill, and purée into bowl with other ingredients. Stir with rubber spatula to combine. Potatoes should be light and fluffy. Taste for seasoning, transfer to warm serving bowl and serve immediately.

  • Preheat oven to 350°F. Pierce potatoes all over with fork. Place on baking sheet. Toss garlic with 1 tablespoon oil in small bowl. Enclose garlic in foil; place on baking sheet with potatoes. Bake until potatoes and garlic are tender, about 30 minutes for garlic and 1 hour 15 minutes for potatoes. Cool garlic and potatoes slightly. Remove peel from garlic. Remove skins from potatoes.
