I've made this sweet berry bruschetta recipe by toasting the bread on a grill at cookouts, but any way I serve it, I never have any leftovers. The bruschetta is sweet instead of savory as is often expected, and visitors enjoy that change. -Patricia Nieh, Portola Valley, California

10 slices French bread (1/2 inch thick)
Cooking spray
5 teaspoons sugar, divided
6 ounces fat-free cream cheese
1/2 teaspoon almond extract
3/4 cup fresh blackberries
3/4 cup fresh raspberries
1/4 cup slivered almonds, toasted
2 teaspoons confectioners' sugar

Steps:

  • Place bread on an ungreased baking sheet; lightly coat with cooking spray. Sprinkle with 2 teaspoons sugar. Broil 3-4 in. from the heat for 1-2 minutes or until lightly browned. , In a small bowl, combine the cream cheese, extract and remaining sugar. Spread over toasted bread. Top with berries and almonds; dust with confectioners' sugar. Serve immediately.

2 small Roma tomatoes, diced
½ cup diced fresh pineapple
4 each strawberries, hulled and diced
4 large fresh basil leaves, chopped
¼ cup fresh mint leaves, chopped
3 tablespoons maple syrup
1 baguette, cut into 1/2-inch slices
⅓ cup olive oil
8 slices fresh mozzarella, cut in half

Steps:

  • On a cutting board, cut each raw sausage patty in half and re-form into 16 mini patties. In a nonstick skillet, over medium heat, cook sausage patties for 6-8 minutes, or until cooked through and browned, turning often. Remove to a plate and keep warm. In a bowl, combine tomato, pineapple, strawberries, basil, mint and syrup; set aside.
  • Place oven rack in the top third section of oven; set to broil. On a baking sheet, place 16 slices of bread, brush lightly on one side with olive oil and place oiled side down. Broil for 1 to 2 minutes or until lightly toasted. Using tongs, flip bread slices. Place 1 piece of mozzarella on each bread slice. Return to oven; broil for 1 minute longer. Transfer to a serving plate. Top each with a cooked sausage patty. Spoon 1 tablespoon of fruit mixture onto each patty and serve.

This is one of my family's favorite things that I make. Sage,Thyme, Onions,Tomatoes and Swiss cheese make this a very savory and tasty appetizer. It's very simple and can be tweaked with other additions if you like. I try to buy a few baguettes at a time so I can slice them all up and place them in zip lock baggies and freeze.Then whenever I have tomatoes onions and cheese on hand, I can take out the bread,defrost, and put this quick appetizer together in a matter of minutes.

Number Of Ingredients 9

1 baguette, sliced into 1/2 inch rounds
3 -4 roma tomatoes, sliced into rounds (enough for the rounds)
1 onion, sliced into rings
thyme
swiss cheese cut into small rectangular pieces that will fit the French baguette
sage leaf
olive oil
salt
pepper

Steps:

  • Place your sliced onions into a skillet with a little bit of olive oil, salt, pepper and saute them until they are nicely caramelized. Set them aside when done.
  • Arrange your sliced baguette's onto a baking sheet.
  • Place the sliced Roma Tomatoes on top of baguettes.
  • Now place the caramelized onions on top of the tomatoes.
  • Sprinkle a little bit of Thyme onto the onions.
  • Now the Swiss Cheese on top.
  • Place 1 Sage leaf on top of the Swiss Cheese.
  • Drizzle Olive Oil over all of the assembled baguettes.
  • Bake in preheated 350 degree oven for 8-10 minutes until cheese is brown and bubbly or place under broiler for a few minutes.
  • When done sprinkle a little salt and pepper over it all and enjoy.

2 Tbsp. chopped pitted black olives
1 cup chopped plum tomatoes
1/4 cup chopped fresh basil

Steps:

  • Preheat oven to 400°F. Mix oil and garlic; spread onto cut surfaces of bread. Bake 8 to 10 minutes or until lightly browned. Cool.
  • Mix cream cheese and Parmesan cheese with electric mixer on medium speed until blended. Stir in olives.
  • Spread toasted bread halves with cream cheese mixture; top with tomatoes. Cut into 24 slices to serve. Sprinkle with basil.
