SWEET CHICKEN CURRY



Sweet Chicken Curry image

This sweet curry uses fruit and nuts to create wonderful depth of flavour and texture. It's an exotic meal you're sure to remember.

Number Of Ingredients 18

3 lb chicken thighs
2 tbsp olive oil
1 clove garlic, minced
1 onion, large, diced
1 ½ tbsp curry powder, mild, medium, or hot
28 fl oz canned diced tomatoes
2 tbsp tomato paste
½ cup sultana raisins
2 apples, peeled, cored, and diced
2 tbsp lime juice
1 bay leaves
sugar, pinch
2 tbsp cilantro, fresh, minced
¼ cup unsweetened coconut, grated
½ cup almonds, sliced, toasted
1 mango, peeled, diced
1 lime, cut into wedges
1 cup brown basmati rice

Steps:

  • Preheat oven to 350°F (175°C).
  • Add oil to a 12 cup (3 L) casserole dish with cover. Heat over medium high heat on stove. Add chicken and brown on both sides.
  • Remove chicken and set aside on plate. Add onion and garlic to casserole and cook until slightly browned and fragrant. Add curry powder and mix well to heat spice and release oils.
  • Add canned tomatoes and tomato paste and mix well. Add raisins, lime juice, sugar, bay leaf and then chicken. Stir mixture to coat chicken. Cover casserole and place in oven for approximately 40 minutes.
  • Prepare brown basmati rice as per package instructions.
  • Remove casserole from oven and add apple. Cover and return casserole to oven for about another 15 minutes or until chicken is thoroughly cooked and the internal temperature reaches 165°F (74°C). Remove from oven and add cilantro. Replace cover and let sit for several minutes.
  • Serve curry over basmati rice with a sprinkling of grated coconut, mango, almonds and a wedge of lime.

1/2 cup red curry paste
4 tablespoons vegetable oil, plus more for the sheet pan
1 heaping tablespoon dark brown sugar, packed
2 1/2 teaspoons kosher salt
1 pound green beans, trimmed
1 pound carrots, halved lengthwise and cut into 1 1/2-inch chunks
12 skin-on chicken drumsticks
1 cup fresh cilantro leaves
Basmati rice, for serving (two to three 8.5-ounce pouches of microwave rice, cooked according to package directions)
12 ounces plain Greek yogurt, for serving
2 limes, cut into wedges, for serving

Steps:

  • Position a rack in the lower third of the oven and preheat to 450 degrees F.
  • In a small bowl, combine the curry paste, vegetable oil, brown sugar and 1 teaspoon of kosher salt.
  • Put the green beans and carrots on an oiled sheet pan and pour slightly less than half the curry mixture over them. Use a pair of tongs to toss and coat them. Season with 3/4 teaspoon of salt.
  • Nestle the chicken drumsticks on the sheet pan. Using a spatula or spoon, spread the remaining curry mixture on the drumsticks. Do your best to coat them evenly. Season the chicken with the remaining 3/4 teaspoon salt.
  • Roast the chicken and vegetables (turning them halfway through to prevent them from getting too dark on the bottom) until they are tender and a thermometer inserted into the thickest part of the chicken (without touching the bone) reads 170 degrees F, about 30 minutes.
  • Scrape the chicken, vegetables, and any browned bits from the pan onto a large serving dish and garnish with the cilantro.
  • Serve with rice, yogurt and lime wedges.

1 cup coarsely chopped fresh cilantro

Steps:

  • Heat oven to 450°F. Grease 16x11-inch roasting pan or 15x10x1-inch pan with 1 tablespoon ghee, coconut oil or olive oil.
  • Arrange cauliflower, carrots, bell pepper and gingerroot in pan. Sprinkle with 2 teaspoons of the curry powder and 1 teaspoon of the salt; toss.
  • Season chicken thighs with remaining 2 teaspoons curry powder and 1 teaspoon salt. Arrange chicken over vegetables.
  • Roast 20 minutes. Remove pan from oven; add green onions, tossing to mix. Return to oven; roast 10 minutes longer or until juice of chicken is clear when thickest part is cut to bone (at least 165°F).
  • Just before serving, sprinkle chicken and vegetables with cilantro.

1 small red onion, cut into 1/2-inch chunks (1 cup)
1 green apple, quartered, cored, and cut into 1-inch chunks (1 1/4 cups)

2 tablespoons ketchup

  • In a 2-quart microwave-safe dish with lid, stir together onion, apple, garlic, ketchup, and curry powder. Add 1/4 cup water. Season with salt and pepper; stir to combine.
  • Add chicken; season with salt and pepper. Cover and microwave on high for 5 minutes. Turn chicken pieces over. Cover and microwave on high for 5 minutes longer or until chicken is opaque throughout. Lift chicken from dish, and divide among four serving plates.

SWEET CURRY CHICKEN

The sweetness of brown sugar and honey collide with the smokey flavor of curry and the tang of soy sauce to make the most incredible, moist chicken you'll ever eat. I got this recipe from a friend and just recently tried it out on my boyfriend. (With modesty), I'll say it was fantastic! When I made this, I only used two chicken breast but used the same amount of sauce that is called for here. We love sauce, and there was still a little too much. I think this amount of sauce would be great for 4 breasts. Also, I'm sure the amount of butter can be adjusted with no real effect on the taste. This is my first posting, so I hope you enjoy!! O.K. This is an update. It seems as if the mediocre reviews are mostly due to the sweetness. I'll admit, it's very sweet. You can try to make it without the brown sugar, or maybe halving it like another reviewer suggested. (I wouldn't change the honey thought, you need that to get the right sauce consistency.) Next time I make it, I will try the same. Hope this helps!

1 cup flour
2 teaspoons salt
1 teaspoon cayenne pepper
1 cup butter (half is for the first cooking part, half for the glaze)
1/2 cup brown sugar
1/2 cup honey
2 tablespoons soy sauce
3 teaspoons curry powder

Steps:

  • Cut the chicken into strips or chunks ( I did 1 inch strips then cut them in half).
  • Mix flour, salt, and cayenne in a big ziploc bag, add chicken and toss until fully coated.
  • Melt half of the butter and spread it in a 13 by 9 casserole dish.
  • Add chicken and coat with the butter as much as you can.
  • Cook, uncovered at 350 degrees for 20 minutes.
  • While it cooks, mix the brown sugar, honey, soy sauce, curry, and remaining butter with a whisk.
  • After it cooks for 20 minutes, take it out and pour the sauce over the chicken.
  • Cook an additional 30 minutes (uncovered).

1 tablespoon unsalted butter
1 tablespoon vegetable oil
6 large chicken legs (about 4 pounds total), skin removed and legs split to separate the drumstick from the thigh
3/4 pound onions, peeled and diced (2 1/2 cups)
1 tablespoon flour
2 tablespoons curry powder
1 teaspoon cumin powder
1/4 teaspoon cayenne pepper
1 1/2 teaspoons freshly ground black pepper
1 1/2 teaspoons salt
1 cup water
5 cloves garlic, peeled, crushed and coarsely chopped (1 tablespoon)
1 unpeeled Granny Smith apple (about 1/2 pound), unpeeled and cut in half, seeded, and cut into 1-inch dice (about 1 1/2 cups)
1 banana (about 1/2 pound), peeled and cut into 1/2-inch slices
1 large tomato, cut into 1-inch cubes (1 cup)
2 tablespoons shredded fresh mint or 1 teaspoon dried mint

Steps:

  • Heat butter and oil in a large skillet. When hot, add chicken and saute (in a couple of batches, if necessary, to avoid crowding) over medium to high heat for a total of 6 to 7 minutes, until brown on all sides. Transfer chicken to a large casserole or Dutch oven and discard all but 2 to 3 tablespoons of the accumulated fat in the skillet.
  • To the hot fat in the skillet add onions and saute for 2 to 3 minutes over medium heat, stirring, then add flour, curry powder, cumin powder, cayenne pepper, black pepper, salt and garlica and mix well with the onions. Add the water, stir, bring to a boil and pour mixture over chicken.
  • Add apple, banana and tomato, bring to a boil, cover, reduce heat and simmer gently for about 25 to 30 minutes. Sprinkle mint on top and serve immediately with brown rice and onion pilaf.

This is an adaptation of my mother's curry recipe. It produces a delightfully mild (depending on your curry mix) and sweet stew. This mixture makes enough mild, sweet curry to feed six unashamedfly hungry people, and freezes well.To lose the syrupy/sweet aspect, use plain coconut cream instead of the colada mix. If you can't find coconut milk, use some plain yogurt and brown sugar or honey instead.

3 -4 medium onions, quartered
2 -3 cloves garlic, sliced
3 -7 tablespoons curry powder

1 can coconut cream pina colada mix
1 can low-fat coconut milk

Steps:

  • In a pot, brown the meat, onions and garlic in oil (Chicken should be skinned). Generously sprinkle curry powder on meat (commercial preparations are fine on their own or cut with some homemade).
  • Mix your stock and thickener in a cup.
  • Add stock mixture, coconut milk and cream to the chicken.
  • If you don't want to break the bank over one meal, forage in your refrigerator for any questionable vegetables you want to use up and start dicing potatoes and throw them in now.
  • Season to taste. Simmer for at least 10 minutes- thickening your sauce to desired consistency, though feel free to torment your family and/or guests by cooking this for a few hours.
  • Serve with rice, thick pita bread, salad and your fave condiments.
  • Suggested condiments include corn kernels, peanuts (or other nuts), raisins, chopped hard-boiled eggs, sliced banana in lemon or lime juice, sliced cucumber in yoghurt (or in a cream dressing- we like garlic), dried coconut, raisins and other dried fruits, and chutney.

This Trinidadian version of curried chicken is an earthy, rich stew of whole chicken pieces in an aromatic, vibrant broth, spiked with hot chile and a traditional herb paste.

2 tablespoons Green Seasoning
1 teaspoon coarse salt
1 Scotch bonnet pepper or other hot red chili pepper, finely chopped
2 cloves garlic, crushed
¼ cup Trinidad Curry Powder
2 tablespoons canola oil
1 medium onion, chopped
1 cup chicken stock or water
Roti or white rice, for serving

Steps:

  • Place the chicken pieces in a bowl and toss with the lime juice. Drain, rinse the chicken with cold water, and drain again. Remove the chicken from the bowl and pat dry with paper towels.
  • Place the chicken in another bowl with the Green Seasoning, salt, chili pepper, and garlic. Toss well to coat and refrigerate for at least 30 minutes but ideally overnight.
  • Combine the curry powder with just enough water to form a thick paste. Heat the oil in a heavy-bottomed pot. Add the curry paste and onion. Cook, stirring constantly, for 1 to 2 minutes over medium-low heat-do not allow the curry to scorch. Add the chicken pieces and stir well to coat. Add the stock or water, cover, and simmer for 30 to 40 minutes, or until the chicken is tender.
  • Remove the lid and simmer for 5 minutes more over medium-high heat, until the sauce reduces by one-third. Serve with roti or white rice.

1 pound skinless, boneless chicken breast, cut into 1-inch cubes
1 tablespoon olive oil
1 large onion, chopped
2 ½ tablespoons curry powder
1 teaspoon coarse salt

½ teaspoon ground cinnamon
½ teaspoon garlic powder

Steps:

  • Pour flour into a wide, shallow bowl. Dredge chicken pieces in flour to coat completely.

  • Add chicken and peas to sauce. Simmer until chicken is almost cooked through, about 3 minutes. Add sour cream and coconut milk. Reduce heat to medium-low. Stir until chicken is cooked through and sauce thickens enough to coat spoon, about 3 minutes (do not boil). Season with salt and pepper. Transfer to bowl. Garnish with cilantro sprigs.
