2-1/2 pounds sweet potatoes, peeled and cubed
2-1/2 pounds Yukon Gold potatoes, peeled and cubed
1-1/2 cups milk, divided
1 package (8 ounces) cream cheese, softened, divided
2 tablespoons butter, divided
2 green onions, finely chopped
1-1/2 teaspoons salt, divided
1/4 teaspoon pepper
1/2 teaspoon dried thyme

Steps:

  • Place sweet potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook 20-25 minutes or just until tender. , Meanwhile, preheat oven to place 350°. Place Yukon Gold potatoes in another large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook 15-20 minutes or until tender. Drain; mash with 3/4 cup milk, half of the cream cheese and 1 tablespoon butter. Add onions, 3/4 teaspoon salt and pepper; mix well. Spoon into a greased 13x9-in. baking dish. , Drain sweet potatoes; mash with the thyme and remaining milk, cream cheese, butter and salt. Spread over potato mixture. Cut through layers with a knife to swirl. Bake, uncovered, 25-30 minutes or until heated through.

3 medium sweet potato, peeled and quartered
3 ounces cream cheese, softened
2 to 8 tablespoons whole milk

2 tablespoons orange juice
1 tablespoon honey

Steps:

  • Place the russet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Place sweet potatoes in another saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes until tender., Drain russet potatoes and place in a large bowl; mash until smooth. Add cream cheese, 2 tablespoons milk and 1 tablespoon butter; beat until light and fluffy, adding more milk as needed. , Drain sweet potatoes and place in another bowl; mash until smooth. Add the orange juice, honey and remaining butter., Insert tip #409 into a pastry bag. 1 pound sweet potatoes (about 2)
Kosher salt
6 tablespoons unsalted butter, diced
1/3 cup heavy cream, warmed
1/3 cup sour cream
Freshly ground black pepper
1 tablespoon packed light brown sugar
Pinch of cayenne pepper

Steps:

  • Put the potatoes and sweet potatoes in a large saucepan and cover with cold water by 1 inch. Add a generous pinch of salt, bring to a simmer and cook until the potatoes are easily pierced with a knife, 35 to 40 minutes. Drain and let cool slightly. Peel the Yukon gold potatoes and transfer to a medium bowl. Peel the sweet potatoes and transfer to a separate bowl.
  • Divide the butter between the 2 bowls. Add the heavy cream and sour cream to the Yukon gold potatoes and mash well with a potato masher; season with salt and black pepper. Add the brown sugar and cayenne to the bowl with the sweet potatoes and mash well; season with salt and black pepper.
  • Dollop the potatoes and sweet potatoes into a warmed serving dish and swirl using a large spoon. (The potatoes can be made up to 2 hours ahead; set aside in a baking dish. Reheat, covered, at 350 degrees F, 15 to 20 minutes.)

2 large sweet potatoes, peeled, chopped and cooked
8 ounces chive & onion cream cheese, divided
1/2 cup sour cream, divided
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup parmesan cheese, shredded, divided
1/4 cup cheddar cheese, shredded, divided

Steps:

  • Preheat oven to 375°F Place white and sweet potatoes in separate bowls.
  • Add half each of the cream cheese and sour cream to the potatoes in each bowl; season with salt and pepper.
  • Mash with potato masher or fork until creamy.
  • Stir half of the parmesan into the bowl of white potato mix.
  • Mix half of the cheddar cheese into the bowl of sweet potatoes.
  • Alternately layer half each of the white potato mixture and sweet potato mixture in a 2 qt clear glass casserole dish.
  • Repeat layers.
