SWISS GREEN BEANS
This is a family favorite of green beans, cheese, sour cream, and cereal crumbs.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- In a 3 quart saucepan combine 2 tablespoons melted butter, flour, onion, sugar, salt, pepper, sour cream and 4 ounces of the cheese. Cook over low heat and stir constantly until thickened. Fold in green beans. Pour into a 2 quart casserole dish and sprinkle the rest of the cheese on top.
- In a small bowl combine cereal crumbs and melted butter; sprinkle over beans.
- Bake in preheated oven for 20 minutes.

BARBECUE GREEN BEAN BAKE
This recipe was given to me at a Bible study picnic by a dear lady who loved to make up her own recipes. I've shared it with many friends, including missionaries who have taken it to other countries!

- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Saute onion in drippings until tender. Add the ketchup, brown sugar and Worcestershire sauce; cook and stir until mixture comes to a boil., Place green beans in a greased 1-1/2-qt. baking dish; top with onion mixture and bacon. Cover and bake at 350° for 30-35 minutes or until beans are tender.

Steps:
- Heat oven to 350.
- Grease 2 qt baking dish.
- In lge bowl combine rice, milk, beans and soup; blend well; pour into baking dish.
- Place 1 chicken breast half between 2 pieces of plastic wrap and working from center, lightly pound chicken with flat side of meat mallet or rolling pin until 1/4 inch thick.
- Remove wrap and repeat with remaining chicken breast halves.
- Place 1/4 cup swiss cheese on each chicken breast half; roll up jello roll style and place over rice mixture in baking dish.
- Cover with foil Bake for 50-55 minutes; top with onions; bake uncovered for about 5 to 10 more minutes.

- COMBINE soup, milk, sour cream, 1 cup cheese and pepper in a 1 1/2 -quart baking dish; stir until blended. Stir in beans and 2/3 cup Crispy Fried Onions.
- Bake at 350°F for 30 minutes or until hot. Stir. Sprinkle with remaining 1/2 cup cheese and 2/3 cup onions. Bake 5 minutes or until onions are golden.
SWISS GREEN BEAN CASSEROLE
This is a nice change from the traditional green bean casserole. I like it much better. This is my sister-in-law's recipe. She knows she has to bring it to all family functions and that the leftovers (if there are any) are all mine! Prep time includes the time it takes to cook the frozen green beans before assembling the casserole.

- Melt 2 tbsp butter, stir in flour, salt, pepper, sugar, onion.
- Add sour cream gradually until smooth.
- Add beans.
- Mix together and heat thoroughly.
- Pour into greased casserole dish.
- Grate cheese over top.
- Crush cornflakes and mix with melted butter.
- Put on top of beans.
- Cover and bake 20 minutes at 400.

When I make this special-occasion veggie dish, I am ALWAYS asked for the recipe. Fresh steamed green beans provide a contrast to decadent melted Swiss cheese and crunchy topping. A family holiday favorite throughout my extended family. You can prepare ahead of time, leaving 4 to 5 minutes to steam the green beans and add other ingredients. Put into oven right before serving dinner (we usually put it in while carving the turkey).

- Preheat oven to 400 degrees F (200 degrees C).
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until slightly tender, about 5 minutes.
- Stir 2 tablespoons butter, flour, onion, sugar, and salt together in a saucepan over medium heat; gradually stir in sour cream. Cook and stir mixture until hot, thickened, and smooth, about 10 minutes. Add steamed green beans to the cream mixture. Pour green bean-cream mixture into a 2-quart casserole dish; sprinkle with Swiss cheese.
- Mix corn flakes and 2 tablespoons butter in a bowl until well coated; sprinkle over Swiss cheese layer.
- Bake in the preheated oven until cheese is bubbling and topping is browned, about 20 minutes.

- Heat oil in a skillet over low heat. Add garlic and cook for 30 seconds. Stir in green beans and brown sugar, and season with sea salt. Add bacon, increase heat to medium, and stir.
- Pour chicken broth into the pan, cover, and let simmer for 10 minutes. Stir, adding more broth if needed. Cover and cook for another 10 minutes. Stir, uncover, and simmer over low heat until liquid evaporates, about 10 minutes more. Serve.
