Steps:

  • Mix 1 tablespoon tahini, 2 teaspoons low-sodium soy sauce and 1 teaspoon each rice vinegar, sugar and water until smooth. Cook 1 pound spinach (not baby) in salted water until tender, 1 to 2 minutes. Plunge into a bowl of ice water, drain and squeeze dry. Toss with 1 teaspoon sesame oil and season with salt. Drizzle with the tahini sauce and toasted sesame seeds.

This is my version of something I had in Tanzania. It is very easy to cook but amazingly tasty! If you like it and prefer a creamier sauce you can add 1/4 block of creamed coconut to the water. If you like your meat you can add pieces of chicken or pork when frying up the onions.

1 medium onion, diced
180 ml water
2 tablespoons crunchy peanut butter
2 medium tomatoes, diced
2 lbs spinach, roughly chopped
1 pinch salt
1/4 teaspoon chili powder (or more if you prefer a more spicy dish)
2 teaspoons honey

Steps:

  • brown off the onions in oil in a sauce pan on medium heat.
  • add the water and peanut butter on a low heat, stir until dissolved and simmer for a few minutes.
  • add salt, honey, chilli pepper and tomatoes, stir together.
  • add the spinach on top and put a lid on, leave for approx 5 minute.
  • stir everything together, cook a further 5 minute.
  • serve with rice.

1/2 cup natural-style peanut butter
1/2 cup hot water
1 tablespoon low sodium soy sauce
1 tablespoon white vinegar
1 pinch red pepper flakes
4 garlic cloves, minced
2 onions, chopped
2 carrots, thinly sliced
4 mushrooms, halved and sliced or 1 cup mushroom
20 ounces frozen chopped spinach
1/2 teaspoon oil (to coat pan)

Steps:

  • Sauce: Place peanut butter, hot water, soy sauce, vinegar, and pepper flakes in a medium bowl. Whisk until smooth. Set aside.
  • Slice carrots, chop garlic, onion and mushrooms and set aside.
  • Coat covered non-stick frying pan or pot (at least 5 quarts) with oil. Add carrots, garlic, onion, mushrooms and spinach.
  • Cook over medium heat, stirring frequently, adding small amount of water as needed to prevent sticking. Continue cooking until carrots begin to soften and spinach is totally thawed.
  • Add sauce and mix well.

1 cup peanut butter
1/4 cup soy sauce
1/4 cup sesame oil
3 tablespoons rice vinegar
2 tablespoons finely chopped garlic
2 tablespoons grated gingerroot
1 1/2 teaspoons Asian chili sauce or 1 teaspoon dried red pepper flakes
1 tablespoon hoisin sauce
2 tablespoons fresh lime juice (lemon at a pinch - use a little less)
3/4 cup water
1/2 teaspoon salt
1 lb noodles, of your choice
finely chopped scallion
chopped roasted unsalted peanuts

Steps:

  • Blend all ingredients in blender until smooth.
  • Transfer to a jar with a tight-fitting lid (keeps 1 week, chilled; or distribute among 3 small containers and freeze what you don’t want to use within a week).
  • To use: Boil 1 lb Asian noodles or spaghetti until al dente.
  • Toss with ¾ cup of sauce (or more to taste), finely chopped scallions and chopped peanuts.
  • Note: In the winter, I eat these noodles hot.
  • In summer I rinse under cold water, cool and drain and serve them as a spicy noodle salad, often adding shredded bok choy, carrots, snowpeas, lots more of the peanut sauce, etc.

1 beef top round steak, cut 3/4-inch thick (about 1 pound)
2 baby bok choy, cut lengthwise in 1/2
4 spinach sandwich wraps or tortillas (8 to 10-inch diameter)
2 tablespoons reduced fat or regular mayonnaise
2 tablespoons finely chopped dry roasted peanuts
1 1/2 teaspoons minced fresh ginger
1 to 1 1/2 teaspoons chili-garlic paste
3/4 teaspoon reduced-sodium or regular soy sauce
3/4 teaspoon rice wine vinegar
1/2 teaspoon dark sesame oil

Steps:

  • Combine marinade ingredients in small bowl. Cover and refrigerate 1 tablespoon for the bok choy. Place beef steak and remaining marinade in a food-safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight.
  • Preheat charcoal grill to medium heat.
  • Remove steak from marinade; discard marinade. Place steak on grid over medium, ash- covered coals. Grill, uncovered, 8 to 9 minutes for medium-rare doneness, turning occasionally. Do not overcook. Brush bok choy with reserved 1 tablespoon marinade. Grill bok choy, uncovered, over medium, ash-covered coals 4 to 5 minutes or until tender and lightly browned, turning once.
  • Meanwhile combine Spicy Peanut Mayonnaise ingredients in medium bowl; mix well.
  • Carve steak into thin slices. Cut each bok choy half lengthwise in half again, forming quarters. Cut core from each quarter. Spread mayonnaise mixture evenly on spinach wraps. Divide steak slices and bok choy among wraps. Roll up tightly.

  • To use peanut sauce:
  • Boil 1 pound Asian noodles or spaghetti until al dents and drain in a colander. Rinse noodles under cold water until cool and drain. Toss noodles with about 3/4 cup sauce and finely chopped scallion to taste. Serves 4 to 6.
