1 large onion, grated
1 pinch garlic powder
1 dash Worcestershire sauce
ground black pepper to taste

Steps:

  • In a medium bowl, mash the pimentos using a fork. Mix in cheese, onion, Worcestershire sauce, and mayonnaise. Season to taste with garlic powder and black pepper. Spoon mixture into a container large enough to hold the pimento spread, and store in the refrigerator.

This is a tart pimiento cheese because of the very sharp cheese plus the addition of the vinegar, and the lemon pepper. If you like tangy foods, then this is a very good recipe to try! We have never gone back to store bought pimiento cheese after this recipe. My aunt's mother-in-law invented this spread and we have been eating it for years.

2 (10 ounce) packages cracker barrell vermont extra-sharp cheddar cheese (this is a white-colored cheese)
1 (8 ounce) package cream cheese, softened
1 (4 ounce) jar pimientos
1/4 cup vinegar
1 tablespoon flour
1 teaspoon lemon pepper
1 teaspoon yellow mustard
1/2 cup mayonnaise

Steps:

  • Bring vinegar to a boil in the microwave.
  • Add flour to vinegar and stir to make a paste.
  • Add softened cream cheese to above mixture and stir thouroughly.
  • Add all other ingredients except cheese to above mixture and mix well.
  • Grate the cheese with manual cheese grater or in your food proccessor.
  • Add cheese into mixture and mix well.
  • Serve on bread as a sandwich or on crackers, wheat thins, etc.

A pimiento cheese sandwich made on very fresh white bread is a true southern staple. Nothing goes better with Gwen's Fried Chicken (page 93). Mama slices the crusts off the sandwiches and cuts them in half for family reunions-very southern belle!

Yield makes 4 cups

Number Of Ingredients 3

2 7-ounce jars canned, sliced pimientos, drained
3 10-ounce bricks sharp Cheddar cheese, finely grated
1 cup mayonnaise

Steps:

  • Place the drained pimientos in a blender or food processor and purée until smooth. Using an electric mixer, combine the cheese and pimiento, beating until smooth. Beat in the mayonnaise. Spread on slices of white sandwich bread while the mixture is room temperature. Trim the bread crusts and cut the sandwiches into triangles.
  • The spread may be stored, covered, in the refrigerator for up to 1 week. Remove the spread from the refrigerator and allow it to reach room temperature before serving.
  • Make a lot of these. One triangle disappears in only three bites!

1/4 teaspoon prepared horseradish
1/2 teaspoon Worcestershire sauce
1 teaspoon white vinegar
1 (4 ounce) jar diced pimentos, drained
8 ounces white extra-sharp cheddar cheese, coarsely shredded
8 ounces sharp cheddar cheese, coarsely shredded

Steps:

  • Mix together all ingredients except cheddar cheeses. Blend well and add shredded cheeses.
  • Cover and chill, removing from refrigerator 15 minutes before serving.
  • Garnish with a sprinkle of bright red paprika and serve with good crackers, baquette slices or vegetable spears.
