2 tablespoons reduced sodium soy sauce
2 tablespoons freshly squeezed lime juice
2 tablespoons canola oil, divided
3 cloves garlic, minced
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 1/2 pounds skirt steak, cut into 1/2-inch pieces
12 mini flour tortillas, warmed
3/4 cup diced red onion
1/2 cup chopped fresh cilantro leaves
1 lime, cut into wedges

Steps:

  • In a medium bowl, combine soy sauce, lime juice, 1 tablespoon canola oil, garlic, chili powder, cumin and oregano. In a gallon size Ziploc bag or large bowl, combine soy sauce mixture and steak; marinate for at least 1 hour up to 4 hours, turning the bag occasionally. Heat remaining 1 tablespoon canola oil in a large skillet over medium high heat. Add steak and marinade, and cook, stirring often, until steak has browned and marinade has reduced, about 5-6 minutes, or until desired doneness. Serve steak in tortillas, topped with onion, cilantro and lime.

1 beef top sirloin steak (1 to 2 pounds)
2 tablespoons taco seasoning
2 medium red onions, cut into 1/2-inch slices
2 teaspoons olive oil
8 flour tortillas (6 inches)
2 medium ripe avocados, peeled and sliced
Sour cream, fresh cilantro leaves and lime wedges

Steps:

  • Sprinkle steak with taco seasoning. Lightly coat grill rack. Grill steak, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 5 minutes., Meanwhile, brush onions with oil. Grill, uncovered, over medium heat for 3-4 minutes on each side or until tender., Grill tortillas on each side until warm. Thinly slice steak. Top tortillas with steak, avocado and onions Serve with sour cream, cilantro and lime wedges.

1 garlic clove
1 teaspoon olive oil, plus additional for oiling grill
salt
1 dry ancho chili, seeds removed
1 tablespoon olive oil
3 -4 pinches salt
2 1/2 lbs fresh tomatoes, cored
1 serrano chili, quartered, plus 1 pound Serrano chiles, seeded and roughly chopped
1/4 white onion, roughly chopped
2 tablespoons canola oil
2 garlic cloves
1 fresh bay leaf
2 ounces dried ancho chiles, seeded
2 1/2 tablespoons smoked paprika
1 teaspoon chili flakes
1 cup extra virgin olive oil
2 ounces French bread, toasted under the broiler
1 1/2 tablespoons sherry wine vinegar
kosher salt & freshly ground black pepper
1/4 cup roughly chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon high-quality dried Mexican oregano
2 avocados
2 limes, juice of
1 orange, juice of
1 lemon, juice of
5 sprigs fresh cilantro
salt
3 corn tortillas, lightly toasted in a grill or saute pan
2 teaspoons cojita or queso fresco
1 cup romaine lettuce, shredded

Steps:

  • Special equipment: thin gloves.
  • For the nopales cactus:.
  • Prepare a grill for medium heat. Wearing thin gloves, use a sharp paring knife, held at a 45-degree angle to the paddles, to carefully remove the spines. Make 3 to 5 slits in the skin of the cactus and rub all over with the garlic clove, then the oil. Sprinkle with some salt.
  • Lightly oil the grill grates. Grill the nopales cactus until lightly charred, and the pad becomes tender, flipping once, 10 to 15 minutes total. Set aside to cool, then cut into 1/4-inch strips.
  • For the ancho chile puree:.
  • Place a dry, nonstick pan over medium heat and lightly toast the chile, turning occasionally,10 minutes. Turn the heat off and step back from the pan to add 3 tablespoons of water, being careful not to let the steam burn you. Cover and let the chile soak 15 minutes.
  • Transfer the chile with its water to a blender with a pinch of salt and puree until smooth, adding more water if needed. Combine 3 tablespoons of the resulting paste with the olive oil and the remaining 2 to 3 pinches of salt, or more to taste. (Save the rest of the paste for another use.).
  • For the roasted tomato salsa:.
  • Combine the tomatoes, quartered Serranos and onions in a large bowl. Toss with the canola oil. Spread the tomatoes, onions, quartered Serranos, 1 clove garlic and bay leaf in a baking pan. Place under the broiler and char until nicely colored, stirring occasionally, 5 to 8 minutes.
  • Meanwhile, place the dried ancho chiles in a container of water and allow to hydrate, 20 minutes.
  • Sprinkle the broiled vegetables evenly with the paprika, then toss to coat and return to the broiler, about 1 minute. Watch carefully and do not allow the paprika to burn. Remove from the broiler. Stir in the chopped Serranos, ancho chiles (discard the water), chile flakes and olive oil. Allow to marinate in the pan at room temperature, tossing occasionally, 30 minutes. Remove and discard the bay leaf.
  • Chop the tomatoes and stir them together with the other vegetables in a bowl, tearing off and adding small amounts of toasted bread as needed to thicken. Add the vinegar and salt and pepper to taste.
  • Mince the remaining clove garlic. Stir into the salsa along with the cilantro, lime juice and Mexican oregano. Stir in additional salt to taste.
  • For the avocado crema:.
  • Combine the avocado flesh, lime juice, orange juice, lemon juice, cilantro and salt to taste in a food processor, and pulse until pureed. Pass through a fine-mesh strainer and adjust seasoning to taste.
  • For the tacos:.
  • Place the tortillas on a serving plate. Spread with the ancho chile puree using the back of a spoon. Arrange a thin layer of nopales cactus strips over the ancho chile puree. Add a layer of shredded lettuce and spoon some roasted tomato salsa over the top. Drizzle with some avocado crema, and sprinkle with the cheese. Serve immediately.

1 1/2 lbs steak (rib steak,New york 1 - 1 1/4 inches thick)
6 garlic cloves, mashed with
1 teaspoon kosher salt, in a mortar and pestle (or a cutting board)
3/4 cup fresh sour orange juice (from Seville oranges, OR 1/4 c. fresh orange juice plus 1/2 c lime juice.)
2 tablespoons tequila (I would say it is not optional) (optional)
2 tablespoons ground red chili pepper (Ancho or New Mexico)
1 cup chopped fresh cilantro
1 tablespoon chopped fresh oregano or 1 1/2 teaspoons dried oregano
2 teaspoons salt
1 tablespoon fresh coarse ground black pepper
1/4 cup olive oil or 1/4 cup vegetable oil
24 corn tortillas (handmade or the freshest you can find)
1 lb ca monterey jack cheese (mild white cheese) or 1 lb wisconsin muenster cheese, cut into strips 1/4 x 1 x 3 to 4 inches (mild white cheese)
6 fire roasted peeled and seeded poblano chiles, sliced or 6 canned Ortega green chilies
guacamole
salsa, of your choice
1 large red onion, thinly sliced
1/4 cup fresh lime juice
1 tablespoon olive oil
1/2 teaspoon salt
2 tablespoons chopped fresh cilantro
1 teaspoon chopped fresh oregano or 1/2 teaspoon dried oregano

Steps:

  • Mix all marinade ingredients.
  • Pierce the steaks all over, on both sides.
  • Pour over marinade, cover with plastic wrap and refrigerate over night.
  • Lime pickled red onions: Mix all the ingredients and let marinate for at least 3 hours at room temperature.
  • Will keep for up to 4 days in the fridge.
  • About an hour before grilling the meat remove the steaks from the refrigerator.
  • Preheat the oven to 300 degrees.
  • Remove meat from marinade and pat dry with paper towels.
  • Season lightly with salt and pepper.
  • Cook over hot coals with mesquite until done to your liking.
  • Set the meat aside and cover loosely with foil to keep warm.
  • Briefly heat each tortilla, either over the direct heat of the grill or in a heavy skillet.
  • Only enough to make them pliable.
  • Place 2 pieces of cheese on each tortilla, fold in half.
  • Wrap these (about 6 each) in foil and place in the preheated oven just long enough to barely melt the cheese, approximately 20 minutes.
  • To serve, cut the steaks against the grain into strips 3 to 4 inches long and about 1/4" thick.
  • Set out the fire roasted chiles, pickled onions, tortilla/cheese setups, guacamole and salsa.
  • Fill the tortillas and enjoy.

2 beef skirt or flank steaks (1 pound each)
1 bottle (12 ounces) beer
1/4 cup lime juice
3 tablespoons olive oil, divided
8 spring onions or green onions
1-1/4 teaspoons salt, divided
3/4 teaspoon pepper, divided
Corn tortillas, minced fresh cilantro and lime wedges

Steps:

  • Pound beef with a meat mallet to tenderize. In a large bowl, mix beer, lime juice and 2 tablespoons oil until blended. Add beef to marinade; turn to coat. Refrigerate, covered, at least 30 minutes., Meanwhile, cut partially through onions, leaving tops intact. Drizzle with remaining oil; sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper., Drain beef, discarding marinade; sprinkle with the remaining salt and pepper. On a greased grill rack, grill steaks and onions, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°) and onions are crisp-tender, 2-4 minutes on each side. Fresh Tomatillo Sauce
2 fresh small cactus paddles, thorns cut off and trimmed (optional)
2 thin (1/4-inch) beef steaks, about 8 ounces total
1/2 medium white onion, thinly sliced
vegetable oil
salt, to taste
4 (6- to 7-inch) blue corn or white corn tortillas

Steps:

  • 1. Prepare the salsa if using the cactus. Then cut finger-like strips of each cactus paddle lengthwise to within 1 1/2 inch of the edge to resemble the palm of a hand. Heat a flat griddle or large cast iron skillet until hot. Put the cactus paddles on the griddle. Cook about 1 minute. 2. Turn the cactus, and add the steaks and onion to the griddle. Brush everything with oil. Cook, turning everything, 2 to 3 times, until the meat is done and the cactus and onion are tender. Season with salt. 3. Transfer everything to a cutting board. Chop the steaks into small pieces. Cut each cactus paddle in half. Warm the tortillas on the griddle until pliable. Divide the cactus, meat, and onion among the tortillas.
