- Break the tamarind into small pieces, then cover with 375 ml (approximately 13 ounces) of water. Simmer the mixture for 15 minutes, then pass through a fine strainer. Press down on the tamarind through the strainer, so that only the seeds and fibers are left behind.
- Finely dice the pineapple. Add the pineapple, spices, lemon juice, and sugar to the tamarind mixture and bring to a boil. Remove from the heat and let cool for 1 hour before serving (or place into screw-top jars while still hot and seal tightly).

This is the most favorite Mexican candy of all 10 of my children...sweet, spicy, and so yummy. Full of tamarind fruit. Makes a great activity for children to help with on a long rainy or hot summer day...and homemade has no traces of lead...like some store-bought tamarind candies.

Steps:
- Bring tamarind pulp, water, and orange to a boil in a pot; continue to boil for 30 minutes. Remove from heat and let cool for 30 minutes.
- Pour tamarind mixture into a colander placed over a large bowl. Mash and scrape against the side of the colander until all the juice and pulp drips into the bowl. Dump remaining seeds into a strainer and repeat the process; remove the outer casing around the seeds by hand and toss out the seeds.
- Blend outer casings with juicy pulp in an electric blender.
- Return mixture to the large pot and add sugar, Tajin®, and butter. Bring to a soft boil, stirring constantly. Heat to 240 degrees F (115 degrees C) or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from water and placed on a flat surface.
- Remove from heat and let cool, about 2 hours.
- Fill a pastry or plastic sandwich bag with the candy mixture and squeeze onto plastic spoons. Place plastic spoons onto a cookie sheet and chill until firm, about 1 hour. Coat with more Tajin® if desired, wrap with plastic, and close with a twist tie.

TAMARIND-PINEAPPLE MARGARITA
Steps:
- Gather the ingredients.
- Rim a cocktail or margarita glass with cinnamon sugar: Wet the rim with a piece of lime, then roll the rim in a small dish of ground cinnamon and granulated sugar.
- In a blender, add the tequila, tamarind nectar, pineapple and lime juices, and ice.
- Blend until smooth .
- Pour the drink into the prepared glass.
- Serve and enjoy.

- Wrap ham in aluminum foil, and place on a rimmed baking sheet. Bake until warmed through, about 1 1/2 to 2 hours. Pull back foil from ham.
- Whisk together preserves, pineapple juice, tamarind paste, and pepper in a small bowl. Baste ham with one fourth of pine-apple preserves mixture. Bake ham, uncovered, basting with pineapple preserves mixture every 10 minutes, until glazed, about 30 minutes. Remove from oven, and let rest 5 minutes. Serve ham with any remaining pineapple preserves mixture.

- To prepare chutney, melt butter in a small saucepan over medium heat. Add onion, ginger, and chile to pan; cover and cook 6 minutes or until onion is tender. Uncover. Stir in pineapple and next 3 ingredients (through 1/4 teaspoon salt); bring to a boil. Reduce heat, and simmer, uncovered, 20 minutes or until pineapple is tender, stirring occasionally. Cool 20 minutes; stir in cilantro and red pepper.
- To prepare pork, combine chili sauce and next 3 ingredients (through tamarind), stirring to combine. Reserve half of soy mixture. Heat a cast-iron grill pan over medium-high heat. Sprinkle pork with 3/4 teaspoon salt and black pepper; coat pork with oil. Add pork to pan; sauté 4 minutes on 1 side or until browned. Brush pork with half of soy mixture; turn pork over. Place pan in oven; bake at 400° for 16 minutes or until a thermometer inserted in the thickest portion of pork registers 155° (slightly pink). Remove pork from pan; let stand 10 minutes. Brush pork evenly with reserved soy mixture. Slice pork crosswise into 1/2-inch-thick medallions. Serve with chutney.
