PORK MEATBALL TAQUITOS WITH AVOCADO VINAIGRETTE
Steps:
- Preheat the oven to 350 degrees F.
- For the meatballs: In a bowl, mix the pork, Flip-Sides, soy sauce, cilantro, shallots, egg, jalapeno, hot sauce, lemon zest, salt and pepper. Form the mixture into small meatballs, about 2 to 3 inches in diameter, and set aside.
- Heat the olive oil in a saute pan, and, working in batches, fry the meatballs until golden brown, 5 to 7 minutes. Finish them in the oven for another 10 minutes.
- While the meatballs are in the oven, make the vinaigrette: Whisk the lemon and lime juice with the mustard and agave. Add the fish sauce, fresh herbs and avocado. Whisk until the avocado breaks down just a bit and everything is incorporated.
- Pull the meatballs from the oven and serve on lettuce cups, garnished with the vinaigrette.
CHEESY TAQUITOS (CHEQUITOS) RECIPE BY TASTY

Steps:
- In a large saucepan over medium heat, brown the ground beef. Once the beef is browned, add the onion and garlic. Cook until the onion is translucent, about 5 minutes. Add the salt, cumin, chili powder, cayenne, paprika, and oregano. Cook for 2-3 minutes more to allow the flavors to meld and ensure the beef is cooked through. Remove the beef mixture from the pan and set aside.
- In a clean large saucepan over medium heat, combine the shredded chicken and crushed tomatoes. Add the salt, cumin, chili powder, cayenne, paprika, and oregano. Cook until warmed through, about 5 minutes. Remove from the pan and set aside.
- In a medium bowl, mix together the Parmesan and Mexican-blend cheeses.
- Heat a medium nonstick pan over medium heat. Add about ¼ cup (25 G) of cheese to the center of the pan and spread into a circle. Let the cheese melt, then add a spoonful of beef or chicken filling to the bottom of the circle.
- Slide the cheese shell out of the pan onto a cutting board and let cool for 30 seconds, then roll tightly to encase the filling. The melted cheese should stick to the outside, sealing the taquito. Repeat with the remaining ingredients.
- Serve the taquitos with lime wedges, sour cream, and fresh cilantro.

Steps:
- Brown the beef and drain.
- Add the onion and garlic and cook until soft.
- Add the tomato sauce, cumin, and chiles.
- Simmer for 5 minutes.
- Set aside.
- Briefly heat each tortilla in a pan with a little oil until soft enough to roll.
- Fill each tortilla with some of the meat mixture.
- Roll tightly (into the shape of a medium-sized cigar).
- Set aside.
- Heat 1/3 inch of oil.
- Quickly brown each taquito (about one minute).
- Serve warm with sides of salsa, sour cream, and guacamole.

- Preheat the oven to 350 degrees.
- In a large bowl combine the cooked steak, cheese, salsa, sour cream, salt and pepper to taste.
- Spread 2 heaping spoonfuls of steak mixture in the center of the tortilla. Roll it up and place seam side down on a cookie sheet. Repeat until all the tortillas are filled and rolled.
- Place cookie sheet in the oven and cook for 20 minutes or until the tortillas turn a little brown. Watch them to make sure they don't burn.
- Serve with your choice of dipping sauce (I chose guacamole)
