2 1/4 cups well-shaken buttermilk
2 1/4 cups all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1 teaspoon ground cardamom
1 teaspoon pure vanilla extract
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon

Vegetable oil, for griddle
Blueberry Syrup, recipe follows
1 1/2 cups real New York State maple syrup

TASTY NECTARINE BUTTERMILK PANCAKES & WILD BLUEBERRY SAUCE

Tasty Nectarine Buttermilk Pancakes & Wild Blueberry Sauce image

This is one of the best tasting pancake recipes, I've ever created. I am very proud of this recipe, the pancakes are tender, light, fluffy and served with a delicious blueberry sauce. If you don't want to use Grand Marnia, I would recommend substituting with ½ tsp of finely grated orange rind. I leave the skin on the nectarine because I like the flavor and texture that it offers. Try these pancakes you will not be disappointed.

  • Combine all ingredients except syrup in a bowl mixing well. Let batter sit for about 30 minutes for fluffier pancakes.
  • While the batter is sitting about 10 minutes before you are ready to cook begin to heat the griddle or skillet to medium heat and spray with non stick cooking spray.
  • Spoon out the batter into about sand dollar size and let it cook on one side until the batter begins to bubble, then flip over and cook until done. This typically just takes 2-3 minutes. It should release fairly easily from the griddle and you can be sure that the bottom is browned.
