BLUE MILL TAVERN-STYLE LOOSEMEAT SLIDERS (LIKE MAID-RITES SORTA)

- In cast iron skillet, sprinkle salt evenly across the bottom add the butter. Melt over medium heat, then crumble in your ground beef. Start sautéing ,break up ground beef by pressing it and chopping it with the back of a wooden spoon constantly! *The meat must end up being cooked into very fine crumbles. Add chopped onion when meat is mostly done and very finely broken up. Keep working it until the meat is fully cooked. When meat is browned, drain off any fat by tilting the pan, and scooping out the grease using a large spoon. Add and stir in mustard, vinegar, sugar, and just enough water to barely cover the meat in the pan. Bring to a boil, lower heat to a simmer, and cook until the water is completely cooked out, about 30 - 40 minutes. (Longer depending on how much water you added.) But more water, and a longer cooking time, is best. Taste, and adjust salt and pepper to taste. Turn off the burner. Steam your hamburger buns by placing them outside-down onto a wire splatter screen placed over the hot skillet, or in the microwave with a glass of hot water. When buns are warmed, use an ice cream scoop to pile a heaping mound of the meat onto the bottom buns. You can serve them as is, or add finely chopped onions, or melt some cheese placed onto the hot meat, or do as I enjoy, and add mustard, onions, and sliced dill or bread 'n butter pickles!

- Preheat the oven to 350°F (175°C).
- Combine the beef, salt, pepper, and garlic powder in a 9x13-inch (23x33-cm) rimmed baking dish, mixing thoroughly, then pressing into a flat, even layer. Bake for 20 minutes. Drain the liquid and set the cooked beef aside.
- Slice the rolls in half lengthwise. Place the bottom half in the same baking dish. Place the cooked beef on the rolls, followed by the onions and cheese. Top with the remaining rolls.
- Brush the tops of the rolls with melted butter and sprinkle the sesame seeds on top. Bake for 20 minutes, or until the bread is golden brown and the cheese is melted.
- Slice into individual sliders, then serve.

Sliders are a small version of a hamburger. A little trick helps you to get them all the same size so they cook evenly and look very professional. Do a couple of tests to determine your perfect degree of doneness and cook all the burgers the same amount of time.

- Place ground beef onto a work surface; divide into 8 equal-size pieces using a knife or pastry cutter. Line 8 muffin cups with paper liners.
- Sprinkle bottoms of paper liners with salt and black pepper. Form each piece of burger into a rough ball and place into a muffin cup. Season tops with salt and pepper.
- Place a second paper liner on top of each piece of meat and gently press it down to shape the mini burger into a round, flat shape. Pull off the paper tops and remove burgers from the muffin cups; remove bottom paper liners from burgers.
- Heat a large nonstick skillet over medium-high heat. Cook burgers in the hot skillet until they have a browned crust and are slightly pink in the middle, about 3 minutes per side. Flip burgers and cook 3 minutes on other side. Remove burgers to a plate to rest for 2 minutes.
- Mix mayonnaise, ketchup, mustard, and pickle relish in a bowl; spoon a dollop onto each bun. Place burgers onto buns, season with more black pepper, and top with a tomato slice. Close buns and serve.

- Place 2 rolls in a food processor; process until crumbly. Transfer to a large bowl; add the salt, pepper and 6 teaspoons chipotle peppers. Crumble beef over mixture and mix well. Shape into 10 patties., Grill burgers, covered, over medium heat for 3-4 minutes on each side or until a thermometer reads 160° and juices run clear. Top with cheese. Grill 1 minute longer or until cheese is melted., Split remaining rolls and grill, cut side down, over medium heat for 30-60 seconds or until toasted. - Season beef with salt and pepper. Form into three equal-size patties; set aside.
- In a large skillet, heat butter over medium-high heat, add onions. Cook, stirring occasionally, until caramelized, about 10 minutes.
- In a cast-iron skillet, heat oil over medium-high heat. Add beef patties and cook about 1 1/2 minutes for medium-rare.
- Place patties between brioche halves; top with onions. Serve immediately with pickles, if desired.
