2 medium acorn squash
1 pound bulk spicy pork sausage
1/2 cup chopped onion
1 cup fresh spinach, finely chopped
1/2 cup dried cranberries
1-1/2 cups soft bread crumbs
1 large egg
2 tablespoons 2% milk

Steps:

  • Halve squash lengthwise; discard seeds. Place squash in a microwave-safe dish, cut side down. Microwave, covered, on high until tender, 10-12 minutes. , Meanwhile, in a large skillet, cook and crumble sausage with onion over medium heat until no longer pink, 5-7 minutes; drain. Remove from heat; stir in spinach, cranberries and bread crumbs. In a small bowl, whisk together egg and milk; add to sausage mixture and toss until moistened. , Turn over squash; fill with sausage mixture. Microwave, covered, until a thermometer inserted in stuffing reads 165°, 2-3 minutes.

Here's what you need: small acorn squashes, onion, celery, olive oil, salt, pepper, fresh rosemary, garlic, sausage, apple, panko breadcrumbs, parmesan cheese

2 small acorn squashes, or 1 large
1 onion, chopped
2 stalks celery, chopped
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon fresh rosemary
3 cloves garlic, chopped
½ lb sausage
1 apple, chopped
1 cup panko breadcrumbs
½ cup parmesan cheese

Steps:

  • Using a sharp knife cut off the very top and bottom of each squash to create a flat base on each side (being careful not to cut through the center cavity).
  • Slice the squash in half, scrape out seeds to create individual bowls for the stuffing.
  • Drizzle each squash half with olive oil, salt, and pepper.
  • Roast in a preheated oven at 400˚F (200˚C) for 40-50 minutes - or until fork tender.
  • While squash is roasting - in a large fry pan over medium heat - heat oil and add Onion, Celery, Salt, Pepper, and Rosemary. Cook until onions begin to soften.
  • Add Garlic and Sausage, until sausage is browned on all sides.
  • Add Apple until slightly softened. Finally mix in Bread Crumbs and Parmesan cheese just until incorporated. Remove from heat.
  • Once Squash has finished roasting (when you can easily poke it with a fork) remove from oven and fill each with prepared stuffing mixture.
  • Return to Oven for 20 minutes - adding a sprinkle of Parmesan cheese to the top for the final 5 minutes.
  • Enjoy!

2 acorn squash, halved crosswise and seeded
1 (8 ounce) package tempeh
¼ teaspoon dried sage, or more to taste
¼ teaspoon ground cloves, or more to taste
salt and ground black pepper to taste
2 Fuji apples - peeled, cored, and chopped
½ cup chopped onion
¼ cup raisins
¼ cup dried cranberries
¼ teaspoon dried thyme
2 tablespoons chopped pecans
¼ cup maple syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut a thin slice from the bottom of each squash half so they can stand upright. Place cavity-side-down in a 9x13-inch baking pan and cover tightly with foil.
  • Bake in the preheated oven until tender when pierced, 45 to 50 minutes. Remove from oven and leave oven on.
  • Break tempeh up into a bowl using your hands. Stir in sage, cloves, salt, and pepper. Transfer to a skillet over medium-high heat. Add apples, onion, raisins, cranberries, and thyme. Cook and stir until apples are tender when pierced, 8 to 10 minutes. Stir in pecans.
  • Turn squash halves upright. Fill equally with tempeh mixture and drizzle with maple syrup. Bake in the hot oven until filling is slightly browned on top, about 15 minutes more.

3 tablespoons soy sauce
1 tablespoon nutritional yeast
2 teaspoons maple syrup
1 ½ teaspoons lemon juice
1 teaspoon dried sage
½ teaspoon hickory bacon-flavored salt, or more taste
1 (8 ounce) package tempeh, cut into 1/4-inch pieces
3 medium acorn squash, halved and seeded
salt and ground black pepper to taste
⅓ cup pecans, or to taste, finely chopped
2 tablespoons vegan butter (such as Earth Balance®), divided
1 medium onion, diced
3 cups chopped kale
1 cup mushrooms, diced
3 cloves garlic, minced
1 tablespoon fennel seeds
1 teaspoon dried oregano
¾ teaspoon dried rosemary
¾ teaspoon dried thyme
½ teaspoon red pepper flakes

Steps:

  • Mix water, soy sauce, nutritional yeast, maple syrup, lemon juice, sage, and bacon salt together to make the marinade. Place tempeh in marinade; refrigerate for 1 hour to overnight.
  • Preheat the oven to 375 degrees F (190 degrees C). Line two baking sheets with parchment paper.
  • Sprinkle squash with salt and pepper. Place squash cut-side down on a baking sheet; spread pecans over the other.
  • Bake pecans in the preheated oven until browned, 8 to 10 minutes. Bake squash until tender, 30 to 40 minutes.
  • Meanwhile, heat 1 tablespoon vegan butter in a large skillet over medium heat. Add onion and cook until translucent, about 5 minutes. Add the tempeh and marinade, kale, mushrooms, garlic, fennel seeds, oregano, rosemary, thyme, and red pepper flakes. Increase heat to medium-high. Cook until water has evaporated and tempeh and kale are crispy and browned, about 7 minutes. Season with salt and pepper and more bacon salt if needed.
  • Dollop remaining vegan butter into each cooked squash half. Stuff with the tempeh mixture and top with pecans.

4 medium acorn squash (about 1-1/2 pounds each)
1 cup cherry tomatoes, halved
1 pound Italian turkey sausage links, casings removed
1/2 pound sliced fresh mushrooms
1 medium apple, peeled and finely chopped
1 small onion, finely chopped
2 teaspoons fennel seed
2 teaspoons caraway seeds
1/2 teaspoon dried sage leaves
3 cups fresh baby spinach
1 tablespoon minced fresh thyme
1/4 teaspoon salt
1/8 teaspoon pepper
8 ounces fresh mozzarella cheese, chopped
1 tablespoon red wine vinegar

Steps:

  • Preheat oven to 400°. Cut squash lengthwise in half; remove and discard seeds. Using a sharp knife, cut a thin slice from bottom of each half to allow them to lie flat. Place squash in a shallow roasting pan, hollow side down; add 1/4 in. of hot water and halved tomatoes. Bake, uncovered, 45 minutes., Meanwhile, in a large skillet, cook sausage, mushrooms, apple, onion and dried seasonings over medium heat 8-10 minutes or until sausage is no longer pink, breaking up sausage into crumbles; drain. Add spinach, thyme, salt and pepper; cook and stir 2 minutes. Remove from heat., Carefully remove squash from roasting pan. Drain cooking liquid, reserving the tomatoes. Return squash to pan, hollow side up., Stir cheese, vinegar and reserved tomatoes into sausage mixture. Spoon into squash halves. Bake 5-10 minutes longer or until heated through and squash is easily pierced with a fork.
