This glossy teriyaki sauce is easy to make and perfect to have in your fridge to add to stir fries, marinades or even as a dipping sauce with Asian crackers

Yield Makes 1 medium sized jar

Number Of Ingredients 8

85g light brown soft sugar
70ml light soy sauce
1 large garlic clove, crushed
4cm piece ginger, peeled and finely grated
1 tbsp cornflour
1 tbsp rice wine vinegar
sesame seeds (optional)
2 spring onions, finely sliced (optional)

Steps:

  • Pour 350ml water into a small saucepan with the sugar, soy sauce, garlic and ginger. Slowly bring to a simmer, stirring occasionally until the sugar has dissolved. Cook for 5 mins more or until glossy and slightly thickened. Combine the cornflour with 1 tbsp water and quickly whisk through the sauce. Whisk through the rice wine vinegar. If it's still too thick, add a splash more water. Pour into a clean jar and leave to cool at room temperature.
  • Once cooled, will keep in the fridge for up to 1 week. Sprinkle with sesame seeds and spring onions just before serving, if you like.

1/2 tablespoon cornstarch
1 tablespoon water

Steps:

  • Combine ingredients in a saucepan on medium heat until the sugar is dissolved.
  • To make glaze: Mix 1/2 tablespoon cornstarch with 1 tablespoon water. Heat sauce on medium high heat and add cornstarch water mixture. Simmer until thickened.

½ cup dry mustard
3 tablespoons water
5 tablespoons all-purpose flour
1 cup water
1 (10 fluid ounce) bottle Kikkoman Lite Teriyaki Marinade & Sauce
¾ cup white wine vinegar
⅔ cup honey

Steps:

  • Blend mustard and 3 Tbsp. water to make a smooth paste; cover and let stand 20 minutes.
  • Meanwhile, combine flour, 1 cup water, lite teriyaki marinade & sauce, vinegar and honey in medium saucepan. Bring to boil, stirring occasionally. Reduce heat and simmer, covered, 5 minutes, stirring occasionally. Remove about 1/4 cup hot liquid and pour into mustard paste, blending until smooth. Repeat procedure with additional 1/4 cup liquid. Stir mustard mixture into hot liquid in saucepan, blending until smooth. Pour into tight sealing plastic container; cover and store in refrigerator. Stir mustard thoroughly before serving or pouring into sterilized jars and wrapping for gift giving.

1/4 cup salad oil
2 tablespoons honey
2 teaspoons ground ginger

Steps:

  • Combine everything that's not meat. Mix well.
  • Add meat. If whole poke holes with fork so the teriyaki penetrates. I think the best flavor is from chunks.
  • Let stand 24 hours in fridge. Sometimes I let it go longer. The longer the better as long as it doesn't start decaying.
