MEXICAN BREAKFAST PIZZA

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until cooked through, 5 to 7 minutes; drain and discard grease.
- Spread pizza crust dough onto the prepared baking sheet; top with a layer of nacho cheese sauce. Layer hash brown potatoes evenly over the nacho cheese layer. Sprinkle chorizo over potatoes.
- Beat eggs, salsa, and taco seasoning together in a bowl using a whisk until smooth.
- Melt butter in a skillet over medium heat; cook and stir egg mixture until eggs are set and scrambled, 5 to 7 minutes. Transfer scrambled eggs to a plate; allow to cool until easily handled. Sprinkle scrambled eggs over chorizo layer and top with Mexican cheese blend.
- Bake in the preheated oven until crust is golden brown and cheese is melted and bubbling, 15 to 20 minutes.

- Combine first 6 ingredients in a bowl and mix.
- Press out 2 pizza shells on 2 cookie sheets. Spread 3/4 cup salsa on each pie and top with each pie with half of the shredded smoked cheese. Top each pie with half the vegetable blend and half of the sliced chorizo. Top with the shredded Monterey Jack and bake the pizzas for 15 minutes, until cheese is golden and toppings tender. Cut pizzas into squares and serve.

Steps:
- Heat a skillet that has been sprayed witn nonstick cooking spray over medium heat.
- Add in the potatoes, green onions, peppers, cumin, and garlic.
- Stir/saute for about 3 minutes or until the vegetables are tender.
- In a bowl, combine the egg beaters, milk, amd cilantro; add to the skillet.
- Cook, without stirring, until mixture begins to set on the bottom and around the edge.
- Using a spatula, lift and fold the partially cooked mixture so uncooked portion flows underneath.
- Continue cooking and folding until egg is cooked through, but still glossy and moist.
- Remove skillet from heat.
- Place bread shell on a 12-inch pizza pan or pizza stone.
- Sprinkle half of the cheese over the shell.
- Top with egg mixture, tomato, and remaining cheese.
- Bake at 375° for 8-10 minutes or until cheese is melted.
- Season as needed with salt, pepper, hot sauce.
- Cut into wedges and serve.
