Mexican Breakfast Pizza image

Breakfast pizza is topped with chorizo, nacho cheese sauce, spiced-up eggs, and frozen hash browns using refrigerated pizza crust. A tasty pizza for anyone who enjoys spicy foods. You can adjust the heat intensity to satisfy any taste buds by choosing mild cheese sauce and chorizo.

1 (1 pound) chorizo sausage
1 (10 ounce) container refrigerated pizza crust
1 (15 ounce) jar nacho cheese sauce, or to taste
1 (16 ounce) package frozen hash brown potatoes, thawed
6 eggs
½ cup salsa
1 tablespoon taco seasoning mix, or more to taste
2 tablespoons butter
1 cup shredded Mexican cheese blend, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until cooked through, 5 to 7 minutes; drain and discard grease.
  • Spread pizza crust dough onto the prepared baking sheet; top with a layer of nacho cheese sauce. Layer hash brown potatoes evenly over the nacho cheese layer. Sprinkle chorizo over potatoes.
  • Beat eggs, salsa, and taco seasoning together in a bowl using a whisk until smooth.
  • Melt butter in a skillet over medium heat; cook and stir egg mixture until eggs are set and scrambled, 5 to 7 minutes. Transfer scrambled eggs to a plate; allow to cool until easily handled. Sprinkle scrambled eggs over chorizo layer and top with Mexican cheese blend.
  • Bake in the preheated oven until crust is golden brown and cheese is melted and bubbling, 15 to 20 minutes.

2/3 cup chopped red onion
2 garlic cloves, minced
1 cup salsa
1 can (4 ounces) chopped green chilies, drained
1 prebaked 12-inch pizza crust
1-1/2 cups shredded cheddar cheese
1 cup canned black beans, rinsed and drained
1/2 cup frozen corn, thawed
1 can (2-1/4 ounces) sliced ripe olives, drained
1 medium ripe avocado, peeled and cubed
2 teaspoons lemon juice
1/2 cup sour cream

Steps:

  • In a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in salsa and chilies., Place crust on an ungreased pizza pan. Top with the beef mixture, cheese, beans, corn and olives., Bake at 425° for 15-20 minutes or until edges are lightly browned and cheese is melted. Toss avocado with lemon juice. Serve pizza with avocado and sour cream.

4 mushroom caps, thinly sliced
2 tablespoons sliced salad olives with pimento, drained
1 small onion, chopped
1 handful cilantro, chopped
1/2 small red bell pepper, seeded and diced
1 jalapeno, chopped
2 tubes refrigerated pizza dough (found on dairy aisle)
1 1/2 cups prepared salsa, any variety (I like smoky chipotle salsa)
8 ounces smoked cheddar, shredded
1/2 pound chorizo, casing removed and sausage thinly sliced
1 cup shredded Monterey Jack (found on dairy aisle)

Steps:

  • Preheat oven to 450 degrees F.
  • Combine first 6 ingredients in a bowl and mix.
  • Press out 2 pizza shells on 2 cookie sheets. Spread 3/4 cup salsa on each pie and top with each pie with half of the shredded smoked cheese. Top each pie with half the vegetable blend and half of the sliced chorizo. Top with the shredded Monterey Jack and bake the pizzas for 15 minutes, until cheese is golden and toppings tender. Cut pizzas into squares and serve.

1/4 cup sliced green onion
1 -2 canned jalapeno pepper, drained, seeded, and chopped (can use mild whole green chile peppers)
1/4 teaspoon ground cumin
2 garlic cloves, minced
1 cup refrigerated fat-free liquid egg product (Egg Beaters)
1/4 cup nonfat milk
1 tablespoon snipped fresh cilantro
1 (16 ounce) prepared pizza crust (Boboli)
1/2 cup shredded low-fat monterey jack cheese
1 small tomatoes, seeded and chopped

Steps:

  • Heat a skillet that has been sprayed witn nonstick cooking spray over medium heat.
  • Add in the potatoes, green onions, peppers, cumin, and garlic.
  • Stir/saute for about 3 minutes or until the vegetables are tender.
  • In a bowl, combine the egg beaters, milk, amd cilantro; add to the skillet.
  • Cook, without stirring, until mixture begins to set on the bottom and around the edge.
  • Using a spatula, lift and fold the partially cooked mixture so uncooked portion flows underneath.
  • Continue cooking and folding until egg is cooked through, but still glossy and moist.
  • Remove skillet from heat.
  • Place bread shell on a 12-inch pizza pan or pizza stone.
  • Sprinkle half of the cheese over the shell.
  • Top with egg mixture, tomato, and remaining cheese.
  • Bake at 375° for 8-10 minutes or until cheese is melted.
  • Season as needed with salt, pepper, hot sauce.
  • Cut into wedges and serve.
