3 medium ripe avocados, peeled
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup sour cream
1/2 cup mayonnaise
1 envelope taco seasoning
2 cups shredded cheddar cheese
1 cup sliced ripe olives
4 green onions with tops, sliced
1 large tomato, chopped and seeded
Tortilla chips

Steps:

  • Spread bean dip on a 12-in. serving plate. In a small bowl, mash avocados with lemon juice, salt and pepper; spread over bean dip. Combine the sour cream, mayonnaise and taco seasoning; spread over the avocado layer. Sprinkle with cheese, olives, onions and tomato. Serve with tortilla chips.

20 flour tortillas (8 inches)
Cooking spray
1/2 to 1 teaspoon seasoned salt
2 cans (9 ounces each) bean dip
3 medium ripe avocados, peeled
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup sour cream
1/2 cup mayonnaise
1 envelope taco seasoning
2 cups shredded cheddar cheese
1 cup sliced ripe olives
4 green onions, sliced
1 large tomato, seeded and chopped

Steps:

  • Cut tortillas with a ghost- or pumpkin-shaped 3-1/2-in. cookie cutter. Place on baking sheets coated with cooking spray. Spritz tortillas with cooking spray; sprinkle with seasoned salt. Bake at 350° for 5-8 minutes or until edges just begin to brown. Remove to wire racks. , Spread bean dip onto a 12-in. serving plate. In a small bowl, mash avocados with lemon juice, salt and pepper; spread over bean dip. In a small bowl, combine the sour cream, mayonnaise and taco seasoning; spread over avocado layer. 8 large eggs
Kosher salt and freshly ground pepper
2 cups tortilla chips, crushed
3 tablespoons extra-virgin olive oil
8 ounces fresh chorizo, casings removed
1 bunch scallions, chopped (white and green parts separated)
1/2 cup shredded Mexican cheese blend
2 romaine lettuce hearts, roughly chopped
3 radishes, thinly sliced
1/2 cup fresh cilantro, plus more for topping
Juice of 1 lime
1/2 cup salsa, for serving

Steps:

  • Preheat the oven to 400 degrees F. Whisk the eggs in a large bowl with 1/4 cup water, 1/4 teaspoon salt and a few grinds of pepper. Stir in the crushed tortilla chips and let soak 5 minutes.
  • Heat 1 tablespoon olive oil in a 10-inch nonstick ovenproof skillet over medium heat. Crumble in the chorizo and cook, stirring, until no longer pink, 3 to 4 minutes. Add the scallion whites and cook until softened, 1 to 2 minutes. Spread the chorizo evenly in the bottom of the skillet and pour the egg mixture on top. Top with the cheese and bake until the eggs are browned around the edges and a knife inserted into the center comes out clean, 12 to 14 minutes.
  • Meanwhile, combine the lettuce, radishes, scallion greens and cilantro in a large bowl. Drizzle with the lime juice and the remaining 2 tablespoons olive oil; season with salt and pepper and toss. Slide the frittata onto a cutting board; sprinkle with cilantro. Slice into wedges and serve with the salsa and the salad.

In Corsicana TX there is a restaurant called Old Mexican Inn and this is served with Tortilla Chips and I crave it all the time since I've moved to Tennessee. I've even called them and asked for the recipe. They laugh and hang up because they are called so often. Once I saw how much mayo was in it I was kinda worried at how much I had consumed lol. It is delicious. Serve it at partys and tell them it's a family secret so they will eat it and love it. You will not regret this recipe!!!!

Steps:

  • Spread beans in bottom of serving dish.
  • Top with guacamole. You can use any recipe you like or even use a good guacamole dip.
  • Mix sour cream and taco seasoning and spread over guacamole.

2 pounds Monterey Jack cheese, grated
1/4 cup all purpose flour
1 1/3 cups beer
1/2 cup chopped fresh cilantro
4 teaspoons minced jalapeño chilies
Blue corn tortilla chips

Steps:

  • Place cheese in large bowl. Add flour and toss to coat. Bring beer to boil in heavy large saucepan. Reduce heat to low. Add 1 handful of cheese to beer; stir constantly until cheese melts. Repeat with remaining cheese; stir until thick and creamy (do not boil). Stir in cilantro and chilies. Season with salt and pepper. Pour into flameproof baking dish.
  • If desired, preheat broiler. Broil cheese dip until top is golden, about 2 minutes. Set dish over candles or Sterno on serving table. Serve with tortilla chips.
