1 (3.9 ounce) package instant chocolate pudding mix
1 ½ cups milk
1 (9 inch) prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
1 cup confectioners' sugar
1 (8 ounce) tub frozen whipped topping, thawed
1 (3.4 ounce) package instant vanilla pudding mix
1 ½ cups milk

Steps:

  • In a medium bowl, mix together the chocolate pudding mix and 1 1/2 cups of milk until smooth and well blended. Pour into the graham cracker crust.
  • In a clean bowl, beat cream cheese with an electric mixer until soft, then mix in confectioners' sugar. Fold in 2 cups of the whipped topping, and spread on top of the chocolate pudding layer.
  • Whisk together the vanilla pudding mix and 1 1/2 cups of milk until well blended. Spread over the top of the cream cheese layer. Spread the remaining whipped topping over the top. Chill for at least 30 minutes before slicing and serving.

I'll prepare this recipe when my family has a taste for Southwestern cooking. It's a good way to use leftover chicken and nice when dinner has to be done in a hurry.

1/4 cup chopped onion
2 tablespoons butter or margarine
1-1/2 cups cubed cooked chicken
1 can (4 ounces) chopped green chilies, drained
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup sour cream
1/4 teaspoon hot pepper sauce
1 cup shredded mozzarella cheese
1 pastry shell (9 inches), baked
1/2 cup shredded cheddar cheese

Steps:

  • In a saucepan, saute onion in butter until tender. Stir in chicken, chilies and mushrooms. In a small bowl, combine soup, sour cream and hot pepper sauce; add to pan. Cook and stir for 5 minutes. Sprinkle mozzarella cheese in the bottom of pie shell; add chicken mixture. Sprinkle with cheddar cheese. Bake at 350° for 25-30 minutes or until filling is bubbly and cheese is melted.

1 (15 ounce) can crushed pineapple with juice
1 (18.25 ounce) package butter cake mix
2 ½ cups flaked coconut
1 cup pecan halves
1 cup margarine, melted

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Pour pie filling into 9x13 inch baking dish. Top with pineapple. Do not stir. Sprinkle cake mix over pineapple. Sprinkle coconut over cake mix. Sprinkle nuts over coconut and pour melted margarine over all.
  • Bake 40 minutes, until top is golden brown.

3 cups Milk
1 cup Sugar
12 Marshmallows
1/4 cup Flour
1/4 cup Corn Starch
1/2 cup Milk
4 beaten Egg Whites
1 pint Whipping Cream
Grated Chocolate (optional)

Steps:

  • Combine first 3 ingredients and heat until marshmallows are melted. Do Not Boil. Mix together the next 4 ingredients. Pour into first mixture and cook until thick, stirring constantly. Let mixture get cold. Beat with mixet until smooth. Whip 1 pint of whipping cream and fold half of it into cold mixture. Top with remaining whipping cream. Grate chocolate over top.

Slightly modified from an old "Texas" cookbook I've had for years....but it does make one delicious pie!

1 unbaked 9-inch pie crust (frozen or refrigerated)
4 cups sliced tart apples, granny smith or other good baking apple (at least 4 cups!)
3/4 cup sugar
2 tablespoons flour
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup heavy cream

Steps:

  • Preheat oven to 450.
  • Combine the sugar, flour, cinnamon and salt.
  • Sprinkle half of this mixture over the unbaked pie shell.
  • Pare and slice the apples.
  • Fill the pie shell with them, mounding slightly in the center.
  • Sprinkle the apples with the remaining sugar mixture.
  • Pour the heavy cream over all.
  • Bake at 450 for 15 minutes, then reduce heat to 350 and bake about 40 minutes longer.
  • Can be served hot or cold, and is especially good with a scoop of Blue Bell Homemade Vanilla!
