1 tablespoon finely chopped walnuts
8 dried Calimyrna figs, cut crosswise into 1/4-inch thick slices, end slices

Steps:

  • Form 1/4 teaspoon of the blue cheese into a small ball; repeat with remaining cheese. Press the cheese balls into the walnuts to coat on one side. Place a cheese ball, nut side up, onto the top of each fig slice.

16 dried figs
1/3-1/2 cup crumbled blue cheese (Danish, Maytag, or Gorgonzola)

Steps:

  • Preheat oven to 400°; line a baking sheet with foil.
  • Lay bacon on the baking sheet and bake for 5-7 minutes, until the bacon has rendered some fat but is still pliable; drain on paper towels.
  • Cut each strip of bacon in half and lay it on a cutting board.
  • Slit the figs lengthwise, making a small pocket.
  • Push about 1 teaspoon of the crumbled cheese into the pocket and close the slit.
  • Place the fig on the bacon and roll the bacon around the fig, securing with a toothpick.
  • Repeat with the remaining bacon, figs, and cheese.
  • Transfer figs to a 9 x 13 inch baking dish, placing them about ½ inch apart.
  • Bake in 400° oven for 10 minutes, or until bacon is crisp; remove from baking dish and serve hot or warm.

1 sheet frozen puff pastry (from a 17.3-ounce package), thawed
Flour, for dusting
3/4 to 1 cup store-bought fig jam
4 strips thick-cut bacon, cut crosswise into 1/2-inch pieces
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 teaspoon whole-grain mustard
4 to 6 cups arugula
Kosher salt and freshly cracked black pepper
2 ounces blue cheese, crumbled (about 1/2 cup)
6 small fresh figs, cut into 1/4- to 1/3-inch-thick slices (optional depending on season)

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Roll the puff pastry out on a floured work surface to a rectangle about 12-by-10 1/2 -inches. Transfer the pastry to the prepared baking sheet. With the tines of a fork, dock a 1/2-inch border around the edge of the sheet and dock the center of the sheet a few times as well; this will prevent the dough from rising as it cooks. Spread the fig jam evenly over the pastry, leaving a small border around the edge of the pastry. Bake until the pastry is golden brown and the border is puffed, 20 to 25 minutes.
  • In the meantime, cook the bacon in a saute pan over medium heat, stirring frequently, until crisp, about 8 minutes. Transfer to a paper towel-lined plate to drain.
  • In a mixing bowl, add the olive oil then whisk in the vinegar and mustard. Add the arugula to the bowl and toss to fully coat. Season with salt and pepper.
  • Remove the tart from the oven and allow to cool. Finish by topping the tart with the arugula and sprinkling it with the crisped bacon, blue cheese and the fresh figs if using.

Here is a recipe for pizza that calls to mind - at least this mind - the joys of car travel through southeastern France, where pizzas such as this are available at all the imaginary cafes in small towns near the Italian border. It certainly tastes as if it comes from that region and, if you close your eyes as you eat it, you can almost imagine yourself halfway through a drive from Aix to Turin. The time spent caramelizing the onions is more than worth it, so do it the day before you intend to make the pie. Which is when, as it happens, you should make the dough as well. And we have a recipe for that as well - a version adapted from the team behind the magical Roberta's Pizza in Brooklyn.

2 tablespoons butter
1 large Spanish onion
2 teaspoons fresh thyme leaves
2 bay leaves
Kosher salt
4 thick slices bacon, cut into 1/4-inch thick batons
1 ball pizza dough
Flour, for dusting surface
12 dried mission figs, stems trimmed, cut into quarters or small pieces
3/4 cup crumbled Gorgonzola
Extra-virgin olive oil, to drizzle
Freshly cracked black pepper

Steps:

  • At least 45 minutes before cooking, preheat the oven and pizza stone to 550 degrees.
  • Melt the butter in a large sauté pan over high heat. Add the onions, thyme and bay leaves. Cook for 5 minutes, stirring often, until the onions begin to wilt. Reduce the heat to medium-low and cook, stirring occasionally, until the onions have softened and turn a deep, golden brown, about 25 minutes. Season to taste with salt and pepper. Remove the bay leaves and transfer the onions to a small bowl.
  • Place the bacon in the pan and set over high heat. Cook, stirring occasionally, until brown and crispy. Using a slotted spoon, transfer the bacon to a small bowl.
  • Place the pizza dough on a heavily floured surface and stretch and pull, using your hands or a rolling pin, into about a 14-inch round. Place on a lightly floured pizza peel or rimless baking sheet. Cover with the toppings, careful not to press on the dough and weigh it down: the caramelized onions first, then the figs and bacon, and finally the Gorgonzola, leaving roughly a 1/2 inch border. Shake the pizza peel slightly to make sure the dough is not sticking. Carefully slide the pizza directly onto the baking stone in one quick, forward-and-back motion. Cook until the crust has browned on the bottom and the top is bubbling and browning in spots, about 7 minutes. Drizzle with a little olive oil and some cracked black pepper. Serve hot. Makes 1 pizza.

  • Preheat oven to 375°. Cut a slit lengthwise down the center of each fig; fill each with a walnut half., In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Drain on paper towels., Place cheese in a shallow bowl. Dip 1 side of bacon in cheese. Wrap each bacon strip around a stuffed fig, cheese side out; secure with a toothpick. 8 tablespoons (1 stick) unsalted butter, at room temperature
4 ounces blue cheese, crumbled
Freshly ground black pepper
About 3 tablespoons fig preserves

Steps:

  • 1. Heat the oven to 350°F. Line a baking sheet with parchment paper.
  • 2. Place the flour, butter, blue cheese, and a few grinds of black pepper in the bowl of a food processor and process until the dough just comes together and starts to form a ball.
  • 3. Dump the dough out onto a lightly floured surface and knead a few times to pull it together. Then roll out to a 1/8-inch-thick circle with a floured rolling pin. Cut rounds out of the dough with a floured 1-inch round cutter and transfer to the parchment-lined baking sheet. Reroll the scraps (no more than once) and cut more rounds.
  • 4. Using the back of a rounded 1/2-teaspoon measure or your knuckle, make an indentation in the center of each dough round. Spoon about 1/4 teaspoon of the fig preserves into each indentation, using your finger to push the preserves as best as possible into the indentation.
  • 5. Bake the savouries until the preserves are bubbling and the pastry is light golden on the bottom, 10 to 12 minutes. Let cool on the baking sheet for at least 10 minutes, then remove to a wire rack to finish cooling.

Steps:

  • Preheat the oven to 400°F (200°C). Grease a mini muffin tin with nonstick spray.
  • On a lightly floured surface, roll out the sheets of puff pastry and cut into 24 2-inch squares. Place each pastry square in a muffin cup, pressing down so the pastry is flush with the bottom.
  • Fill each pastry cup with ½ teaspoon fig jam, 1 square of Brie, and ½ teaspoon bacon.
  • Brush the edges of the pastry cups with the egg wash.
  • Bake the pastry cups until golden brown and cheese is melted, 10-12 minutes.
  • Garnish the bites with thyme, then let cool slightly before serving.
