This was a family favorite when I was growing up and became a must-have with my young sons. Zesty thick chili served over Fritos - This recipe will become a family favorite!!!

Steps:

In large skillet, cook onion, celery, bell pepper and corn (if using) in oil til tender but not brown. Add beef; brown lightly. Add remaining ingredients except chips and cheese. Simmer uncovered for 1 hour, stirring occasionally. Serve over corn chips, top with grated cheese.

2/3 cup chopped green bell pepper
2 (6 ounce) cans tomato paste
1 cup water
2 teaspoons chili powder
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon dried thyme
1/8 teaspoon pepper
1 dash hot sauce
corn chips
2 cups shredded cheddar cheese

Steps:

Combine ground beef and next 3 ingredients in a large skillet; cook until meat is browned, stirring to crumble.
Drain off pan drippings.
Stir in remaining ingredients except corn chips and cheese; bring to a boil.
Cover, reduce heat, and simmer 20 minutes, stirring occasionally.
Serve over corn chips, and top with cheese.

My boys used to eat this in the school cafeteria and just loved it! They described it to me so I could make it for them at home. This is my version.

1 lb lean ground beef
2 (6 ounce) cans tomato paste
1 cup water
1 1/2 tablespoons taco seasoning mix
corn chips
2 -3 cups shredded cheddar cheese
salsa
1 cup onion, chopped (optional)
2 cups lettuce, shredded (optional)
2 cups diced tomatoes (optional)
sour cream (optional)
black olives (optional)

Steps:

Brown the ground beef in a skillet. Add the tomato paste, water and taco seasoning and simmer for 10-15 minutes Put a nice pile of corn chips on your plate. Add the ground beef mixture, cheese and salsa. Then, pile on whatever optional toppings you prefer and enjoy!

12 ounces tomato paste
2 cups water
2 teaspoon s Worcestershire sauce
Tabasco to taste
Corn chips
2 cups Kraft Shredded Cheddar Cheese

Steps:

In large skillet, cook onion, celery and green bell pepper in olive oil until tender, not brown.
Add ground beef (browned and lightly drained). Add remaining ingredients except the corn chips and cheese. Simmer uncovered 1 hour, stirring occasionally.
Serve meat sauce on top of corn chips. Top with cheese.

1 packet of taco bell taco mix (you can use any brand - I use Taco Bell)
1 bag of frito chips
1 bag shredded cheddar cheese (2 cup size is enough)

Steps:

Brown the ground beef. Cook on low temp to brown. Add taco mix and water as directed on the taco mix packet. Simmer for 10 minutes. Place frito chips on plate. Cover with taco meat. Cover with shredded cheddar cheese. Enjoy!
