THAI BASIL BEEF
Thai basil beef is simple and delicious! It's made with a homemade Thai sauce that has a bold and brilliant flavor and can be thrown together in less than 30 minutes. It is SOO GOOD!

- Heat a large skillet over medium-high heat. Add the oil. Add the shallots, garlic, ginger, and bell peppers and stir-fry for 3 minutes.
- Push the veggies off to the side. Turn the heat to high and add the ground beef, breaking it up into small bits with a spoon.
- In a small bowl stir together the brown sugar, fish sauce, soy sauce, oyster sauce, cornstarch beef broth, and water and add to the pan. Cook for 2 minutes.
- Add the basil, and stir-fry until wilted.
- Serve over hot cooked rice.

Thin pieces of flank steak are seared in a hot skillet, then bright fresh veggies are sautéed and you'll toss the two together along with a deliciously flavorful sauce. Then serve over tender jasmine rice to complete the dish. A quick weeknight dinner you'll love!

- Prepare rice: Cook rice according to directions listed on package.
- For the sauce: In a small mixing bowl whisk together soy sauce and cornstarch until smooth. Stir in water, fish sauce, oyster sauce, brown sugar, lime juice and Sambal Oelek if using, set aside.
- For the beef: Toss beef with 1 tsp oil and 1 tsp cornstarch. Heat 2 Tbsp oil in a large skillet or wok over moderately high heat. Add beef and cook until browned on both sides but still slightly under-cooked in the center. Transfer beef to a plate while leaving oil in skillet.
- For the veggies: Reduce heat slightly, add bell pepper, onions and garlic and saute until crisp tender, about 2 - 3 minutes (if needed you can add another 1 tsp of oil to the skillet). Add carrots and whisk sauce mixture once more then pour into skillet.
- Allow sauce to simmer, stirring frequently, until thickened, about 1 minute. Return beef to skillet along with basil leaves, toss until basil has just wilted. Serve immediately over cooked rice garnished with small basil leaves and sesame seeds if desired.

- In a medium saucepan, combine rice, coconut milk, 3/4 cup water, and 1/2 teaspoon salt. Cover and bring to a boil; reduce to a simmer, cover, and cookuntil rice is tender and liquid has been absorbed, about 25 minutes.
- When rice is almost done, combinefish sauce, soy sauce, and sugar in asmall bowl; set aside. Heat a cast-ironskillet or wok over high. Add oil andheat; add garlic and half the chiles. - Heat your wok over high heat, and add the oil. Sear the beef until just browned, remove from the wok, and set aside.

- To make the rice. Add the coconut milk and water to a medium size pot. Bring to a low boil and then add the rice, sesame oil and lemongrass. Stir to combine, then place the lid on the pot and turn the heat down to the lowest setting possible. Allow the rice to cook ten minutes on low and then turn the heat off completely and let the rice sit on the stove, covered for another 15-20 minutes (don't take any peeks inside!). After 15-20 minutes remove the lid and fluff the rice with a fork and stir in 1-2 tablespoons chopped peanuts if desired. Note that rice can cook differently for everyone, this is just what works for me.
- While the rice is cooking, make the beef. Add the carrots, peppers, hot red pepper, green onions fish sauce, honey, lime juice and 2 tablespoons soy sauce to a medium bowl. Toss well and set aside.
- Heat a large wok or heavy bottomed skillet over medium heat. Add the oil and once hot add the garlic and ginger. Cook 15-30 seconds then add the beef. Season the beef with black pepper and brown all over, breaking it up as it cooks, about 5 minutes. Once the beef is browned, add 1/3 cup soy sauce, 1/3 cup sweet thai chili sauce and 1 cup of fresh basil. Bring the mixture to a simmer and cook until the sauce coats the beef, about 3-5 minutes. Remove from the heat and stir in the remaining 1 cup fresh basil.
- Divide the rice among the bowls, top with equal amounts of beef. Add the carrots + pepper on top of the beef. Garish with chopped peanuts, fresh basil and toasted sesame seeds. EAT!

- Prepare the cauliflower rice. Chop the cauliflower into florets and add to a food processor with the onion and garlic. Pulse into fine rice like pieces. - Pat the meat completely dry with a paper towel to ensure it browns. Season the meat with sesame oil, salt, pepper, and garlic. Slice the peppers and onions and set them aside.
