COCONUT SHRIMP AND MANGO DIPPING SAUCE

1 cup diced fresh ripe mango
2 tablespoons BBQ sauce
1 tablespoon honey
1 tablespoon lime juice
1/2 teaspoon kosher salt
Vegetable oil, for frying
1/2 cup cornstarch
1/2 cup all-purpose flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 large eggs
1 cup shredded sweetened coconut flakes
1 cup panko breadcrumbs
1 1/2 pounds peeled and deveined jumbo shrimp, butterflied (about 36)
Lime wedges, for garnish

Steps:

  • For the mango dipping sauce: Add the mango, BBQ sauce, honey, lime juice and salt to a blender and blend until smooth. Transfer to a small bowl; set aside.
  • For the shrimp: Heat about 1/2 inch of vegetable oil in a nonstick skillet over medium heat to 350 degrees F.
  • Combine the cornstarch, flour, salt and pepper in a bowl. Beat the eggs and 1/2 cup water in a second bowl. In a third bowl, combine the coconut flakes and breadcrumbs.
  • Bread the shrimp by dipping them first in the flour mixture and shaking off any excess, then in the egg wash and finally in the coconut breadcrumbs, pressing to make sure each shrimp has an even coating.
  • Fry the shrimp in the oil in batches of 8 to 12 until golden and crispy, approximately 2 minutes per side. Drain on a paper towel-lined plate.
  • Arrange on a platter and serve immediately alongside the dipping sauce. Garnish with lime wedges.

1 medium sweet potato, cubed
10 ounces uncooked medium shrimp, peeled and deveined
¾ cup coconut milk
1 (5 ounce) container plain yogurt
3 tablespoons tomato paste
2 ½ tablespoons curry powder
2 cloves garlic, minced
1 (1 inch) piece fresh ginger, grated
⅛ teaspoon cayenne pepper
1 red bell pepper, chopped
1 mango, cubed
2 cups cauliflower, or more to taste
2 cups cooked rice

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place sweet potato on a greased baking sheet.
  • Bake in the preheated oven until fork-tender, about 30 minutes.
  • Meanwhile, cook shrimp in boiling water until pink, about 5 minutes.
  • Stir coconut milk, yogurt, tomato paste, curry powder, garlic, ginger, and cayenne together in a large skillet. Bring to a boil and then turn heat to low and add red bell pepper, mango, and cauliflower. Add sweet potato once done. Simmer for at least 20 minutes.
  • Serve curry over cooked rice.

•1/2 cup reduced-sodium chicken broth
•1 tablespoon red curry paste
•1 to 2 tablespoons fish sauce
•1 tablespoon plus 1 teaspoon firmly packed brown sugar
•1 pound large raw shrimp, peeled and deveined
•1 firm ripe mango, peeled, seeded and diced
•2 medium scallions, sliced
•1/2 cup chopped fresh cilantro (optional)
•1/2 cup chopped fresh basil
•Hot cooked brown rice

Steps:

  • In a large nonreactive skillet, heat the oil over medium heat. Add the chopped onion and mushrooms and cook, stirring often, until the onion is tender and the mushrooms are beginning to brown, about 6 minutes. Add the garlic and bell pepper strips and cook until the garlic is fragrant, about 45 seconds. Stir in the coconut milk, chicken broth, red curry paste, fish sauce and brown sugar; bring to a simmer and cook for about 5 minutes. Stir the shrimp into the coconut sauce and simmer for 2 to 3 minutes, turning the shrimp over if they are cooking unevenly. Stir in the mango, scallions, cilantro and basil and serve over hot rice.

1 cup tomato puree
1/2 cup diced red pepper
1/4 cup soy sauce
3 tablespoons white vinegar
2 tablespoons Thai red curry paste
1 cup eggplant
1 cup diced onion
2 tablespoons fish sauce
3 tablespoons sugar
1 teaspoon lime zest
8 basil leaves
3 tablespoons canola oil

Steps:

  • Heat canola oil in a large pot or wok.
  • Add onions and eggplant and cook until eggplant is cooked through (about 5 minutes). Add peppers and cook for 1 more minute.
  • Add shrimp and calamari and cook for 1 more minute.
  • Add rest of ingredients and bring up to a boil while stirring.
  • Immediately turn off heat.

1 1/2 cups light coconut milk
2 tablespoons red curry paste
1/3 cup water
2 tablespoons fish sauce
1 tablespoon sugar
1 cup canned pineapple chunk, drained
1/2 lime, juice of
1 lb shrimp, precooked and shelled
1/3 cup basil leaves, minced (Asian, if available, but Italian will do)

Steps:

  • In a medium skillet or saucepan, heat 1/2 cup of the coconut milk over medium high heat, stirring often, until it starts to thicken and smell fragrant. This usually takes 3 minutes.
  • Add the curry paste and cook a minute or two, pressing and stirring it in the milk, to dissolve it. Stir in remaining coconut milk, water, fish sauce, sugar, pineapple and lime juice and bring to a gentle boil. Do not cover. Let cook a couple of minutes, then add shrimp and basil. Let all the flavors simmer for a few minutes. There's lots of liquid, so serve over rice.

1 (14 ounce) can coconut milk
4 tablespoons green curry paste (such as Thai Kitchen®)
2 cups chicken broth
¼ cup chopped fresh Thai basil
¼ cup chopped fresh mint
4 cloves garlic, minced
2 tablespoons brown sugar
1 tablespoon red pepper flakes
1 ½ teaspoons dried basil
½ teaspoon curry powder
½ teaspoon minced fresh ginger
1 (8 ounce) can sliced bamboo shoots, drained
1 medium red bell pepper, sliced
1 medium green bell pepper, sliced
1 tablespoon vegetable oil
½ pound uncooked medium shrimp, peeled and deveined
1 pinch garlic powder, or to taste
salt and ground black pepper to taste

Steps:

  • Bring coconut milk and curry paste to a boil in a large saucepan; boil for 5 minutes. Add chicken broth, Thai basil, mint, garlic, brown sugar, pepper flakes, dried basil, curry powder, and fresh ginger. Return to a boil and cook, stirring occasionally, for another 5 minutes.
  • Add bamboo shoots and bell peppers; boil for 2 minutes. Reduce heat and simmer until all flavors have combined, about 12 minutes.
  • Meanwhile, heat oil in a large skillet over medium heat. Add shrimp and season with garlic powder, salt, and pepper. Saute until shrimp is bright pink on the outside and the meat is opaque, 4 to 6 minutes.
  • Transfer shrimp into the simmering sauce and simmer for 5 more minutes.

1/4 cup creamy peanut butter
2 tablespoons red curry paste
1-1/2 teaspoons garlic salt

1 medium onion, cut into 1/2-in. pieces
1 medium sweet red pepper, cut into 1/2-in. pieces
3 garlic cloves, thinly sliced
1 pound uncooked medium shrimp, peeled and deveined

1/4 teaspoon pepper
Hot cooked rice
3/4 cup salted peanuts
1/3 cup sweetened shredded coconut, toasted

Steps:

  • In a small saucepan, whisk the first six ingredients until blended. Bring to a boil over medium heat, stirring occasionally; remove from heat., In a large skillet, heat 1 tablespoon oil over medium-high heat. Add onion and red pepper; cook and stir 4-5 minutes or until onion is golden brown. Add garlic; cook 1 minute longer. Remove from pan., In the same skillet, heat remaining oil over medium-high heat.
