PUMPKIN CURRY WITH TOFU



Pumpkin Curry with Tofu image

After eating this squash curry so many times at Nicky's and Typhoon Thai restaurants here in Pittsburgh, I decided to try as many recipes for it as I could. This is what has come to be my special recipe for it. You may peel the pumpkin if you want, but it will fall apart way more easily. The rind will soften during the cooking process and it is perfectly edible. Plan to make jasmine or basmati rice with this recipe. Enjoy.

1 (12 ounce) package firm tofu
1 tablespoon canola oil
1 small Japanese pumpkin (kabocha squash)
4 ounces red curry paste, or to taste
1 (14 ounce) can coconut milk
½ teaspoon grated lime zest
1 tablespoon lime juice
1 tablespoon fish sauce
1 tablespoon white sugar
¼ cup Thai basil leaves
2 teaspoons chopped fresh cilantro leaves

Steps:

  • Wrap tofu in paper towels. Place tofu onto a plate and place another plate on top. Set a 3- to 5-pound weight on top. Press tofu for 20 to 30 minutes; drain and discard the accumulated liquid and paper towels. Cut tofu into 1-inch cubes.
  • Heat canola oil in a frying pan over medium-high heat. Fry tofu in the hot oil until golden on all sides, 10 to 15 minutes. Set aside on paper towels to drain excess oil.
  • Meanwhile, cut pumpkin into 3/4-inch cubes.
  • Place pumpkin in a large saucepan with enough water to cover and bring to a boil. Continue to boil until pumpkin is just cooked through, 3 to 5 minutes. Make sure the rind softens, but not to the point the pumpkin is falling apart. Drain pumpkin, reserving about 1/4 cup cooking liquid. Set pumpkin and liquid aside.
  • Heat a large saute pot over medium-high heat. Add curry paste and stir for 15 to 30 seconds, then add coconut milk and lime zest. Cook for 5 minutes. Add cooked pumpkin, tofu, basil, lime juice, fish sauce, and sugar. Bring to a boil; cook until the pumpkin is soft, about 10 minutes. If you feel there isn't enough curry liquid, add the reserved cooking water. Garnish with cilantro.

1 tablespoon canola oil
1 (12 ounce) package extra-firm tofu, drained and cubed
1 tablespoon seasoned salt, or to taste
1 tablespoon butter or margarine
1 small onion, chopped
3 cloves garlic, minced
1 (10 ounce) can coconut milk
2 teaspoons curry powder
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup chopped fresh cilantro

Steps:

  • Heat oil in a large skillet over medium-high heat. Add tofu cubes, season with seasoned salt and fry until golden on all sides, stirring occasionally, about 15 minutes. Remove to paper towels, and set aside.
  • Melt butter or margarine in the same skillet over medium heat. Add the onion and garlic; cook and stir until tender. Stir in coconut milk, curry powder, salt, pepper and cilantro. Return the tofu to the skillet. Simmer over low heat for 15 minutes, stirring occasionally.

Warming, cozy and easy to make, this Thai Pumpkin Curry Recipe is made in one pot utilizing pureed' pumpkin, red curry paste and rich coconut milk. It's simple to pull together too! Enjoy with tofu or chickpeas. This recipe is vegetarian, vegan and easily gluten free.

14 ounces (397 grams) Firm Tofu (one package, pressed for 30 minutes and drained* (**see notes for chickpea option))
2 teaspoons Vegetable Oil (olive or coconut)
1 cup (110 grams) Yellow Onion (diced medium, about half a medium onion)
8 ounces (225 grams) Shiitake or Crimini Mushrooms (stems removed, sliced thick, into bite size strips or pieces)
1 1/2 tablespoon Fresh Garlic (microplaned or finely minced, about four fat cloves)
1 tablespoon Fresh Ginger (microplaned or finely minced)
1/4 teaspoon Red Chili Flakes (add another 1/8 teaspoon for extra spicy)
3 tablespoons Prepared Thai Red Curry Paste
1 cup (220 grams) Vegetable Broth
1 13 ounce (368 grams) Can Full Fat Coconut Milk
1 cup (235 grams) Pumpkin Puree
2 - 3 tablespoons Maple Syrup (or Brown Sugar, to taste)
1 1/2 tablespoons Tamari (+ more to taste )
Juice from 1/2 a Lime
2 cups (65 grams) Spinach (finely chopped/shredded)
Thai Basil and/or Cilantro
Toasted Cashews or Pepitas (***see note for how to)
Lime Wedges
Sriracha

Steps:

  • While pressing the tofu preheat the oven to 375 Fahrenheit (190 Celsius). Slice the pressed/drained tofu into (about) 1 inch (2.5cm) cubes and place on a parchment lined sheet pan. Bake for 15 minutes or until golden and slightly puffy. Set aside.**See notes if using chickpeas.
  • In a medium (4 quart) Dutch oven, add the oil and heat until it shimmers and add the onion. Turn the heat down to medium low and stir fry for about 6-8 minutes or until the onions begin to soften.
  • Stir in the mushrooms and cook, stirring occassionally for about 3-4 minutes, or until the mushrooms soften and turn a darker shade of brown.
  • To the mushroom mixture, add the garlic, ginger, chili flakes and red curry paste. Stir coating the mushrooms and onions for about one minute.
  • Deglaze the pan with veggie broth. Stir in the coconut milk, pumpkin puree, maple syrup, Tamari and tofu (or chickpeas). Bring to a simmer, turn to medium low, and gently simmer for about 10 minutes, stirring occassionally.
  • Remove from heat and stir in the lime juice. Taste for seasoning adjustment. If more salty is desired, add a bit of Tamari. Sweeter? Add a bit of maple syrup/brown sugar.
  • Ladle into bowls and top with desired toppings: spinach or shredded purple cabbage, fresh herbs, toasted pumpkin seeds or cashews. Share with Jasmine rice, lime wedges, additional Tamari and/or Sriracha.
  • Store in lidded containers in the fridge for up to three days. To freeze, cool completely, then store in the freezer for up to two weeks. Thaw in the fridge overnight and gently reheat stovetop.

1 teaspoon pre-made Thai red curry paste (or to taste, check for spiciness)
1 14 ounce can coconut milk (light is ok)
½ teaspoon lime zest
1 small pumpkin or kabocha squash; peeled and cut into 3/4 inch cubes
1 package firm tofu, drained and cut into 1-inch cubes
1 tablespoon sugar
1 tablespoon fish sauce or soy sauce
¼ cup basil leaves
1 teaspoon lime juice
Cilantro leaves to garnish (optional)

Steps:

  • In a large saucepan, cook the cubed pumpkin in boiling water until it is just cooked through, about 6 minutes (or microwave with about 1 cup water for 6 minutes) Drain and set aside. Heat a large sauté pot over medium-high heat. Add the red curry and stir for a few seconds, then add the coconut milk and lime zest. Cook for five minutes, then add the cooked pumpkin, sugar, fish sauce, basil leaves, and lime juice. Bring to a boil again and cook until the squash is soft, about 10 minutes. Garnish with cilanto leaves if desired. Serve with rice.

1 -2 tablespoon Thai red curry paste
1 cup vegetable stock
400 ml coconut milk
1 1/4 kg pumpkin, peeled and sliced
200 g asparagus, halved
200 g pattypan squash, halved
1/2 cup fresh Thai basil or 1/2 cup fresh basil

Steps:

  • Heat wok or deep frying pan over high heat.
  • Add oil, onions, ginger and curry and cook 1 minute.
  • Add stock and coconut milk and bring to simmer.
  • Add the pumpkin, cover and cook for 5 minutes.
  • Add the eggplants and beans and cook another 5 minutes until the pumpkin is soft.
  • Stir in basil.
  • Serve with rice.

1 small butternut squash (about 2 lb/1 kg)
1 tablespoon vegetable oil
1 onion, sliced
2 garlic cloves, minced
2 teaspoons Thai red curry paste
14 ounces light coconut milk
1/2 cup vegetable stock
2 tablespoons soy sauce
1 tablespoon packed brown sugar
1 tablespoon fish sauce or 1 tablespoon soy sauce
1/2 teaspoon salt
1 sweet red pepper, thinly sliced
1/4 cup chopped fresh cilantro
2 tablespoons lime juice
2 tablespoons salted peanuts, chopped

Steps:

  • Pat tofu dry with paper towels; cut into 3/4-inch (2 cm) cubes. Set aside.
  • Peel and seed squash; cut into 3/4-inch cubes to make 3 cups. Set aside.
  • In skillet, heat oil over medium heat; cook onion, garlic and curry paste, stirring occasionally, until onion is softened, about 5 minutes.
  • Add squash, coconut milk, stock, soy sauce, sugar, fish sauce and salt; bring to boil.
  • Reduce heat to low; partially cover and simmer until squash is almost tender, about 12 minutes.
  • Add red pepper; simmer for 5 minutes. Add tofu; simmer until heated through, about 2 minutes.
