TEX-MEX TOFU AND QUINOA BOWL

1 cup quinoa
1/2 cup fresh cilantro, plus more for topping
3 tablespoons fresh lime juice (from about 2 limes)
1 tablespoon plus 2 teaspoons honey
Kosher salt and freshly ground pepper
1/3 cup plus 1 tablespoon vegetable oil
2 teaspoons chipotle hot sauce
1 14-ounce block extra-firm tofu, sliced 1/2 inch thick from the short side
1 teaspoon ground cumin
2 carrots, shredded
4 radishes, thinly sliced
1 avocado, sliced

Steps:

  • Cook the quinoa as the label directs. Meanwhile, puree the cilantro, lime juice, 2 teaspoons honey, 3/4 teaspoon salt and a few grinds of pepper in a blender. With the blender running, slowly drizzle in 1/3 cup vegetable oil. Toss the cooked quinoa with 3 tablespoons of the cilantro dressing and season with salt and pepper; set aside.
  • Stir the remaining 1 tablespoon honey and the hot sauce in a small bowl. Lay out the tofu slices on a double layer of paper towels and gently press with another double layer of paper towels to dry. Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Season the tofu on both sides with the cumin and salt and pepper to taste. Add the tofu to the skillet in a single layer and cook until browned and crisp, 4 to 5 minutes per side. Remove from the heat and spread the tops of the tofu slices with the honey-hot sauce mixture.
  • Divide the quinoa among bowls; top with the tofu, carrots, radishes and avocado, and season with salt and pepper. Top with the remaining dressing and cilantro.

1 cup uncooked quinoa
1 1/2 cups chicken or vegetable broth
1 package extra firm tofu ( 15 oz), diced
1 cup shredded carrots
2/3 cup chopped scallions
1/2 cup slivered almonds
1 tablespoon sesame seeds (optional)
1/2 cup fresh cilantro
2 tablespoons soy sauce
1 tablespoon sesame oil
1/2 tablespoon vegetable oil
3 tablespoons sweet chili sauce
2 tablespoons rice wine vinegar
3 tablespoons coconut milk
1 teaspoon Srircha
1/2 tablespoon brown sugar
2 teaspoon creamy peanut butter
1 garlic clove, minced
1/2 lime, juice
1 teaspoon grated ginger

Steps:

  • 30 Minutes Before Cooking: Drain and rinse the block of tofu. Wrap it in a clean dish towel (or paper towels), and place it on a rimmed dinner plate. Place another plate on top and weight it down with something heavy, like a can of tomatoes or a heavy skillet, to press out some of the excess liquid. Let sit 15 – 30 minutes. Preheat the oven to 350°. Toss the tofu, soy sauce, and sesame oil in bowl. Place the tofu in a single layer on a lined baking sheet. Bake for 35-40 minutes tossing every ten minutes to crisp the tofu on all sides. Toast the quinoa: Place a medium sized saucepan on medium low heat. Add in the dry quinoa and toast for 5 minutes, stirring occasionally, until golden brown and nutty in scent.Pour toasted quinoa in a fine mesh strainer and rinse thoroughly. Return to pot and add in the broth, lower heat slightly, cover, and cook for 12-15 minutes until all liquid is absorbed. Fluff quinoa with a fork once cooked, and set aside. Make the sauce: Place the peanut butter in the bowl first and throw in the microwave for 10 seconds to melt slightly. Add in remaining ingredients and whisk well to combine. Set aside. Toast the almonds: Place the almonds, sesame seeds, and vegetable oil in a small saucepan. Cook or medium low heat, stirring occasionally, until the almonds are a deep golden brown. Toss together the quinoa, vegetables and herbs, tofu, and 3/4 of the nut mixture. Pour over the sauce and toss well to combine. Spoon into bowls, top with remaining nuts, extra lime and Sriracha if desired. Can be stored in fridge up to one week.

1 pork tenderloin (about 1 1/4 pounds)
1 tablespoon plus 2 teaspoons chili-garlic sauce, plus more for serving
3/4 cup quinoa
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
1/3 cup crunchy peanut butter
2 tablespoons low-sodium soy sauce
1 teaspoon grated lime zest, plus 2 tablespoons fresh lime juice
1 cup frozen shelled edamame, thawed
1 large carrot, shaved into ribbons with a vegetable peeler
2 cups bean sprouts
1 cup fresh cilantro

Steps:

  • Preheat the oven to 450 degrees F. Cut the pork tenderloin in half crosswise, then in half lengthwise. Rub with 1 tablespoon chili-garlic sauce, and set aside to marinate at least 10 minutes. Meanwhile, cook the quinoa as the label directs.
  • Season the pork generously with salt and pepper. Heat the olive oil in a large ovenproof skillet over medium-high heat. Add the pork and cook, turning, until browned all over, about 5 minutes. Transfer the skillet to the oven and roast until a thermometer inserted into the pork registers 140 degrees F to 145 degrees F, 4 to 6 minutes. Transfer to a cutting board to rest.
  • Meanwhile, whisk the remaining 2 teaspoons chili-garlic sauce, the peanut butter, soy sauce, lime zest and juice, 1/4 teaspoon salt, a few grinds of pepper and 1/4 cup water in a medium bowl.
  • Divide the quinoa among bowls; top with the edamame, carrot ribbons and bean sprouts. Thinly slice the pork and add to the bowls. Drizzle with the peanut sauce and top with the cilantro.

This recipe uses quinoa which is gluten-free, high in protein and fiber, and has a nice nutty flavor. But you can always substitute for either rice or noodles. Take out the chicken and add extra edamame and you have a great vegetarian meal instead. Or add shrimp if you like. A seriously good, versatile recipe!

4 cups low-sodium chicken broth
2 cups quinoa, rinsed and drained
1 tablespoon coconut oil, divided
1 large boneless, skinless chicken breast, cut into thin strips
¾ cup shredded cabbage
½ cup edamame
¼ cup diced broccoli stems
2 carrots, cut into matchsticks
2 green onions, chopped
3 eggs
1 teaspoon sesame oil
¼ cup natural peanut butter
¼ cup reduced-sodium soy sauce
3 tablespoons rice vinegar
2 tablespoons chili garlic sauce
2 tablespoons chopped fresh ginger
3 cloves garlic, minced
1 teaspoon sesame oil
½ cup salted peanuts, chopped
3 tablespoons chopped fresh cilantro

Steps:

  • Bring chicken broth and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes. Set aside.
  • Heat 1 1/2 teaspoons coconut oil in a wok or large skillet over medium-high heat. Add chicken; stir until cooked through; about 5 minutes. Remove chicken from wok. Heat remaining 1 1/2 teaspoons coconut oil. Add cabbage, edamame, broccoli, carrot, and green onions and saute until vegetables soften slightly, 2 to 3 minutes.
  • Whisk eggs with sesame oil in a small bowl. Push vegetables to the sides of the wok to make a well in the center; pour eggs in and stir to scramble, about 3 minutes.
  • Combine peanut butter, soy sauce, rice vinegar, chili garlic sauce, ginger, garlic, and sesame oil together in a small bowl. Pour Thai peanut sauce over vegetable and egg mixture in the wok.
  • Return chicken to the wok and add quinoa; mix well to combine. Stir in chopped peanuts and cilantro and serve.
