These juicy, flavoursome pork patties are served atop a noodle salad brimming with colourful veggies. Finish with a generous sprinkle of roasted peanuts and a sweet chilli soy dressing.

Number Of Ingredients 23

3 Tbsp lime juice
2 Tbsp soy sauce
2 Tbsp sweet chilli sauce
1 tsp sesame oil
1 large carrot
1 Lebanese cucumber
2 spring onions
1 large handful fresh coriander
400 g pre-cooked flat ribbon noodles ((14oz))
50 g sango sprouts ((1.8oz))
1/2 cup roasted, salted peanuts ((100g))
1 spring onion
1 large handful fresh coriander
600 g pork mince ((1lb 5oz))
2 Tbsp sweet chilli sauce
2 tsp finely grated ginger
2 tsp fish sauce
2 tsp sesame oil
1/2 Tbsp lime juice
1 tsp cornflour
1 tsp salt
1/2 tsp garlic powder
1/ Tbsp peanut oil

Steps:

  • MAKE DRESSING Place all dressing ingredients in a jar and shake to combine. Season to taste with salt and pepper.
  • PREPARE SALAD INGREDIENTS Cut carrot and cucumber into matchsticks. Thinly slice spring onions and roughly chop coriander.
  • MAKE PORK PATTIES Thinly slice spring onion and finely chop coriander for patties. Place in a bowl and add pork mince, sweet chilli sauce, ginger, fish sauce, sesame oil, lime juice, cornflour, salt and garlic powder. Use your hands to mix well, then shape into approximately 20 large meatballs and gently press down to form patties.
  • Heat peanut oil in a large frying pan on medium (not too hot as the patties burn easily). Fry patties for approximately 4 minutes each side, until browned and fully cooked through. Remove from heat and cover to keep warm.
  • MAKE SALAD Place noodles in a large bowl and pour boiling water over the top. Leave for 2 minutes, then drain well. Return noodles to bowl and add carrot, cucumber, sprouts and half the spring onions, coriander and peanuts. Pour dressing over the top and toss until well combined.
  • SERVE Divide noodle salad between individual serving plates or bowls. Top with pork patties and sprinkle remaining spring onions, coriander and peanuts over the top.

8 ounces medium width rice vermicelli noodles
3 tablespoons vegetable oil
¼ pound ground chicken
1 teaspoon hot pepper sauce
1 red pepper, thinly sliced
½ pound peeled, deveined raw shrimp
3 cloves garlic, minced
2 teaspoons freshly grated gingerroot
½ cup vegetable or chicken broth
½ cup Heinz Tomato Ketchup
¼ cup lime juice
3 tablespoons granulated sugar
3 tablespoons fish sauce
1 ½ cups bean sprouts
3 green onions, thinly sliced
¼ cup fresh coriander or parsley leaves
chopped peanuts

Steps:

  • Cover noodles with boiling water and let stand for 5 minutes; drain well and reserve.
  • Heat half the oil in a wok or deep skillet set over high heat. Crumble in chicken and add hot sauce; stir-fry for 3 to 5 minutes or until browned. Reserve on a platter.
  • Add remaining oil and peppers to pan; stir-fry for 3 minutes. Add shrimp and stir-fry for 2 minutes. Stir in garlic, ginger, broth, ketchup, lime juice, sugar and fish sauce. Bring to a boil. Add noodles and reserved meat; toss mixture to combine. Heat through.
  • Add sprouts and toss gently. Sprinkle with onions, coriander and peanuts.

400 g ground pork
1 inch fresh ginger
1/2 inch galangal
1 stalk lemongrass
1 tablespoon chili paste
1 teaspoon brown sugar
1 tablespoon turmeric powder
2 tablespoons fish sauce
5 kaffir lime leaves
10 basil leaves
1 egg

Steps:

  • Marinate the minced pork with fish sauce and chili paste. Add the turmeric powder. Add chopped the Kaffir lime leaves and basil leaves.
  • Pound to paste, the brown sugar with lemongrass, ginger and galangal; add them to the minced pork, then add an egg, Stir well, marinate for half hour. Scoop with tablespoon and fry with oil. Serve with tomato sauce.

250g minced pork
1 garlic clove , finely chopped
3 lemongrass stalks, outer layers removed and the bottom thirds of the stalks finely chopped
1 tbsp fish sauce
handful coriander , chopped
1 tbsp sesame oil
1 tsp sugar
100g fine rice noodle
4 spring onions , chopped
sweet chilli dipping sauce , to serve

Steps:

  • Heat the grill. In a bowl, mix together the pork, garlic, lemongrass, fish sauce and half the coriander. Season with pepper. Mix well and form into 8 patties. Rub each one with the oil and a sprinkling of sugar, then place on a rack in a baking tray.
  • Grill the patties for 3 mins each side until golden brown. Meanwhile, in a large bowl, cook the rice noodles following pack instructions. Drain the warm noodles and serve with the patties, chopped spring onions, remaining coriander and a drizzle of sweet chilli dipping sauce.
