THE AMISH COOK: CRUNCHY ONION RINGS

Steps:
- Pour one inch oil into a deep frying pan, heat to 375 degrees. Beat egg then add rest of ingredients. Cut onions in ¼-inch rings. Separate rings and dip into batter, one at a time, then drop into hot oil. Fry until golden brown; flip and continue to fry other side. Place onto a paper towel-lined platter.

These are delicious onion fritters that I have made many times! This batter would also be great for onion rings! Its so light and crisp! I found this on GroupRecipes and it was posted by a member named Youtoo1955. The photo is my own.

- 1. Mix together dry ingredients.
- 2. add milk and stir.
- 3. batter will be thick.
- 4. add onions and mix throughly.
- 5. heat 1/2 inch oil in skillet over medium high heat.
- 6. drop batter by tablespoons in hot oil, flatten slightly, brown on both sides until nice and crisp.
- 7. drain on paper towels.
- 8. serve warm.

- Whisk together the flour, sugar, baking powder, salt, black pepper and cornmeal in a large bowl. Mix in chopped onions. Pour in milk and mix well with spoon.
- Heat oil in skillet on top of the stove. Drop by spoonfuls into hot oil. Cook on one side until brown and flip to cook on other side. I use a 1/4 cup measuring cup full of batter for each pattie. You can add more oil to the skillet if you need to do so while frying. Makes 10 to 12 onion patties.
