- Preheat the oven to 180° C and bake the nuts for about 10 minutes. Take them out of the oven and allow to cool.
- Place the nuts in a food processor and blend for 10 minutes, or until they totally break down. You really need to wait until you obtain a perfectly smooth and runny nut butter.
- Add the maple syrup and cacao powder and blend again until all ingredients are well combined. You will now obtain a sticky rather ugly mixture, but don't worry, the water will turn it into a perfectly smooth paste again.
- Now gradually pour in about 1 cup or 250 ml water, or until you obtain the desired texture. Be aware that the paste will harden a bit in the fridge, so a little runnier works best.
- Store in an airtight container in the fridge for up to a week.

- Preheat oven to 350 degrees F (176 C) and add hazelnuts to a baking sheet in a single layer. If raw, roast for a total of 12-15 minutes. If already roasted, roast for 8-10 minutes just to warm the natural oils and loosen the skins. This will make it easier to blend into butter.
- Remove from oven and let cool slightly. Then transfer to a large kitchen towel and use your hands to roll the nuts around and remove most of the skins (see photo). You want to get as much as possible off because it yields a creamier Nutella. But it doesn’t have to be perfect!
- Leaving excess skin behind, add hazelnuts to a food processor or high-speed blender (a high-speed blender yields best results). Blend on low until a butter is formed - about 8-10 minutes total - scraping down sides as needed.
- In the meantime, heat the chocolate over a double boiler or in the microwave in 30 second increments. Set aside.

- In a food processor or high speed blender, blend hazelnuts 5-7 minutes until smooth and a little runny (you will hear a sloshing noise). Scrape down sides when needed.
- Heat water in microwave safe mug for about 20 second or until lukewarm (not boiling). Add in cacao powder (and maca powder if using) and mix until dissolved and smooth.
- Add cacao mixture and maple syrup to food processor and blend for another 2-3 minutes, scraping down sides when needed.
- If texture is too thick, add in more water in small increments until you get desired consistency. (Don’t worry if nutella clumps together at first. Just continue to add water slowly and it should get more runny).
