Wanting to switch up your starchy mashed potatoes for something more healthy? Try this cheesy mashed cauliflower recipe to reinvent this classic recipe.

1 cauliflower, chopped into small pieces
1.5 tbsp butter
3 garlic cloves
1 tablespoon reduced fat cream cheese
1/4 cup grated Parmesan
1/2 tsp. salt
1/4 tsp pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the cauliflower and cook for 6-8 minutes until tender. Drain and use a dish towel or paper towels to pat the cauliflower dry. This will ensure the mash is fluffy and thick.
  • While the cauliflower is cooking, melt the butter in a small sauce pan. Add the garlic and cook for 2-4 minutes until very fragrant and tender. Remove from heat.
  • Add the cauliflower, garlic butter, cream cheese, Parmesan cheese, salt, and pepper to a food processor or blender. Puree until smooth and fluffy.

1 head cauliflower, cut into florets
2 tablespoons butter
½ cup milk
½ cup sour cream
1 cup Italian-seasoned bread crumbs
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bring a large pot of water to a boil. Cook cauliflower in the boiling water until tender, about 10 minutes; drain and set aside.
  • Melt butter in the same pot over medium heat. Stir cauliflower, milk, and sour cream into melted butter.
  • Mash cauliflower in the pot using a hand blender until creamy.
  • Transfer cauliflower mixture to a baking dish; evenly cover with bread crumbs and season with salt and black pepper.
  • Baking in the preheated oven until bread crumbs are lightly browned, about 30 minutes.

1 medium head cauliflower, broken into florets
1/2 cup shredded Swiss cheese
1 tablespoon butter
3/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon garlic powder
2 to 3 tablespoons 2% milk

Steps:

  • In a large saucepan, bring 1 in. water to a boil. Add cauliflower; cook, covered, until very tender, 8-12 minutes. Drain., Mash cauliflower, adding cheese, butter, seasonings and enough milk to reach desired consistency.

This recipe is so easy and healthy. I love mashed potatoes, and when I started the South Beach Diet® and couldn't have them, I had to find an alternative. This is an awesome alternative, and people who hate vegetables love it. I do recommend using a large food processor for this recipe.

1 head cauliflower, cut into florets
1 tablespoon olive oil
1 clove garlic, smashed
¼ cup grated Parmesan cheese
1 tablespoon reduced-fat cream cheese
½ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
  • Meanwhile, heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.
  • Transfer half the cauliflower to a food processor; cover and blend on high. Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in garlic, Parmesan cheese, cream cheese, salt, and black pepper.
