1 1/4 cups warm water (105-110˚F)
1/2 tsp active dry yeast
1 tsp honey
1/2 Tbsp fine sea salt
3 1/3 cups all-purpose flour

Steps:

  • In a small bowl, stir together water, honey, and salt then sprinkle the top with 1/2 tsp yeast and let sit 5 minutes then stir.
  • Measure 3 1/3 cups flour in a large mixing bowl and make a well in the center. Pour yeast mixture into the center then stir with a firm spatula until the dough comes together. Knead by hand 2 minutes (dough will be sticky). Cover the bowl with plastic wrap and let rise at room temperature 4-5 hours or until doubled in size.
  • Transfer dough to a floured surface, turn to coat lightly in flour so it isn't sticky then divide in half. Fold each piece of dough in half 8 times, gently pulling the sides over the center like closing a book, turning the dough each time and repeating for 8 folds. Form a ball in your hands and transfer each piece of dough to a lightly oiled bowl seam-side-down, cover and refrigerate overnight (18 hours) or up to 1 week.
  • PREP: Remove the dough 1 hour before using to let it relax and come to room temperature. Before forming the pizza crust, fully preheat your oven so pizza can be baked right away. Place a pizza stone or inverted baking sheet onto the center rack of the oven and preheat to 550˚F. Also, lightly flour a pizza peel and prep toppings.
  • When dough is about room temperature and oven is preheated, transfer 1 piece of dough to a floured surface, turning to lightly coat in flour. Pat the center of the dough gently with fingertips. DO NOT pop any bubbles present.
  • Lift the dough over both knuckles and roll your knuckles under the center of the dough, working outward as you rotate the dough along your knuckles and leaving a thicker crust at the edge. Continue working the dough until a 10-12" pizza has formed. It will shrink slightly so make it a little bigger than you think. Place the dough down on a lightly floured pizza peel. Give the pizza peel a little shake to make sure the pizza slides over it and is not sticking.
  • Spread on desired pizza sauce and toppings. Give the pizza another jolt to make sure it slides on the pizza peel (you don't want it to stick while transferring it into the oven). Slide pizza onto the preheated pizza stone and bake at 550˚F for 8-10 minutes or until crust is golden brown and some of the larger bubbles on the crust are lightly scorched to ensure a crisp crust.

2 teaspoons active dry yeast
7 cups all-purpose flour, plus more for dusting

28 oz canned whole tomatoes
1 tablespoon kosher salt

Steps:

  • "Bloom" the yeast by sprinkling the sugar and yeast in the warm water. Let sit for 10 minutes, until bubbles form on the surface.
  • In a large bowl, combine the flour and salt. Make a well in the middle and add the olive oil and bloomed yeast mixture. Using a spoon, mix until a shaggy dough begins to form.
  • Once the flour is mostly hydrated, turn the dough out onto a clean work surface and knead for 10-15 minutes. The dough should be soft, smooth, and bouncy. Form the dough into a taut round.
  • Grease a clean, large bowl with olive oil and place the dough inside, turning to coat with the oil. Cover with plastic wrap. Let rise for at least an hour, or up to 24 hours.
  • Punch down the dough and turn it out onto a lightly floured work surface. Knead for another minute or so, then cut into 4 equal portions and shape into rounds.
  • Lightly flour the dough, then cover with a kitchen towel and let rest for another 30 minutes to an hour while you prepare the sauce and any other ingredients.

  • Then, stretch and press the dough into a thin round. Make it thinner than you think it should be, as it will slightly shrink and puff up during baking.
  • Sprinkle semolina onto an upside down baking sheet and place the stretched crust onto it. Add the sauce and ingredients of your choice.
  • Slide the pizza onto the preheated pizza stone or pan. Bake for 15 minutes, or until the crust and cheese are golden brown.
  • Add any garnish of your preference.

1 envelope instant dry yeast

2 tablespoons olive oil, plus 2 teaspoons

Steps:

  • Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. My all-time favorite homemade pizza dough recipe, this recipe has been tried and tested week after week, making the best homemade pizza. My family now likes homemade pizza better than take-out!

2 1/2 cups warm water
1/4 cup sugar
3 teaspoons instant yeast
1/4 cup vegetable oil
6 cups all-purpose flour
2 teaspoons salt

Steps:

  • In the bowl of a stand mixer, combine the water, sugar and yeast. Allow the mixture to sit for a few minutes until frothy. Add in the vegetable oil.
  • In a bowl, combine the flour and the salt. Add the flour to the yeast mixture, 1/2 cup at a time, mixing well between additions. Continue adding the flour until the dough can be pulled away from the sides of the bowl with a spatula, but the dough will still be quite sticky. You may need to add in a little bit more or less flour, but the key is to remember that the dough will still be sticky and will stick to your fingers when you try to pull it apart.
  • Grease a large bowl, then scrape the dough into the bowl. Turn the dough to coat it in oil. Cover the bowl with plastic wrap or a towel and a let the dough rise at room temperature until doubled, about 1 hour.
  • Turn the dough out onto a well-floured work surface. Pull the dough around to the bottom, stretching it to create a smooth ball. Cut the dough into 3 equal portions. Each ball will be approximately 1 pound of dough.
  • Roll out the dough to use in your favorite pizza recipe, or refrigerate until needed. (I have refrigerated it for several hours, up to overnight, but the dough will continue to rise, even in the refrigerator, so I try to use it before 24 hours.
  • To bake, preheat a pizza stone in the oven as hot as you can go for at least 30 minutes. (I usually go between 475ºF and 500ºF.)
  • Prepare your pizza with your desired toppings and bake until the crust is golden, 8-10 minutes.

1 kg white bread flour or Tipo '00' flour, or 800g strong white bread flour or Tipo '00' flour, plus 200g finely ground semolina flour
1 teaspoon fine sea salt
2 x 7 g dried yeast sachets
1 tablespoon golden caster sugar
4 tablespoons extra virgin olive oil

Steps:

  • Sieve the flour/s and salt on to a clean work surface and make a well in the middle.
  • In a jug, mix the yeast, sugar and oil into 650ml of lukewarm water and leave for a few minutes, then pour into the well.
  • Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. Keep mixing, drawing larger amounts of flour in, and when it all starts to come together, work the rest of the flour in with your clean, flour-dusted hands. Knead until you have a smooth, springy dough.
  • Place the ball of dough in a large flour-dusted bowl and flour the top of it. Cover the bowl with a damp cloth and place in a warm room for about an hour until the dough has doubled in size.
  • Now remove the dough to a flour-dusted surface and knead it around a bit to push the air out with your hands - this is called knocking back the dough. You can either use it immediately, or keep it, wrapped in clingfilm, in the fridge (or freezer) until required.
  • If using straight away, divide the dough up into as many little balls as you want to make pizzas - this amount of dough is enough to make about six to eight medium pizzas.
  • Timing-wise, it's a good idea to roll the pizzas out about 15 to 20 minutes before you want to cook them. Don't roll them out and leave them hanging around for a few hours, though - if you are working in advance like this it's better to leave your dough, covered with clingfilm, in the fridge. However, if you want to get them rolled out so there's one less thing to do when your guests are round, simply roll the dough out into rough circles, about 0.5cm thick, and place them on slightly larger pieces of olive-oil-rubbed and flour-dusted tin foil. You can then stack the pizzas, cover them with clingfilm, and pop them into the fridge.

cornmeal, for dusting

  • Mix the flour salt and yeast together in a mixing bowl. Use a mixer or metal spoon and stir in the olive oil and water until the flour is all absorbed about 5 to 7 minutes. if you are having a sticking issue dip the spoon or your hand in cold water.
  • Dust the counter top with flour and transfer the dough over to it. Nead it into a ball and then seperate into six pieces or less dipending on the size of the pizza you want. Take tupaware containers and spray with oil. Add dough to the containers and put in fridge to rise overnight.In the fridge it will keep for 3 days or you can freeze up to 3 months (make sure you cover in oil before freezing).
  • On the day you plan to make the pizza remove the dough from the fridge 2 hours before cooking preheat oven to the highest temp it will go usually about 550F or higher.Toss or role the dough to your desired thickness I prefer thin and place on pan dusted with cornmeal. Add toppings ( remember less is more with a good pizza about 3 to 4 toppings plus cheese and sauce) and bake for 5-8 minutes. If top is done before bottom move pizza to a lower shelf and finish.
  • Let the pizza rest a few minutes before cutting to let the cheese set alittle and enjoy!

1 1/2 cups very warm water
2 t. yeast (one packet)
2 t. sugar (I use brown)
16 ounces (2 3/4 cups) bread flour (or all purpose)
3 1/2 ounces (1/2 cup) semolina flour
1 t. salt
I increase the semolina a little and scale back the regular flour to make it a little crispier
** You'll also use a little olive oil to coat your rising bowl.

Steps:

  • Can do this in a food processor or stand up mixer. Place very warm water, yeast, and sugar in food processor and pulse to mix. Recipe suggests you use "hot to the touch" tap water, when it cools on your way to the processer, it will remain "very warm". Let sit while you measure your dry ingredients. Allow at least 3 miutes for the yeast to work. You should see small bubbles form in the liquid. Dump the dry ingredients in and turn on the fool processor (use the bread attachment if using a stand up). Mix until the dough forms a ball. If the dough is too wet add a bit of flour, but too wet is better than too dry. The dough will also loose some of it's stickiness as it rises. Place a T. of olive oil in a large bow. Lightly coat the ball of dough with the olive oil. Cover with clean kitchen town and let rise for at least an hour.

1 package instant fast rising yeast
3/4 teaspoon salt
3/4 cup milk (plus 2 tablespoons)
1/2 cup extra virgin olive oil (divided)
2 teaspoons sugar

Steps:

  • Adjust oven rack to the bottom position. Preheat to 200 degrees, then turn oven off.
  • Grease a large glass bowl with a little olive oil or non stick cooking spray and set aside.
  • In a large bowl, combine flour, yeast and salt together.
  • In a glass measuring cup, heat milk to approximately 110 degrees in the microwave in 15-30 second increments. Stir between heating.
  • Add sugar to the milk, and stir to dissolve. Stir in 2 tablespoons of the olive oil.
  • Slowly pour the milk mixture into the flour mixture, stirring with a wooden spoon. Incorporate the wet ingredients into the dry ingredients. Stir with a wooden spoon for 5 - 10 minutes, until the dough forms a smooth ball. (You can also use a dough hook mixing attachment.)
  • Place the dough ball into the greased bowl, and flip over. Cover the bowl with a warm damp towel and place in the warm oven. Let double in size, about 30 minutes.
  • Remove from oven and divide the dough into two pieces. Shape into circles according to pan size.
  • For deep dish pizzas, put 3 tablespoons of olive oil into each pan. Carefully place dough on top of oil, and do not allow the oil to seep on top of the dough. For traditional style crust, place in prepared pizza pans or pizza stone and let rise.
  • Cover and let sit in a warm area for 20 minutes.
  • Preheat oven to 400 degrees. Top with your favorite sauce, cheese and pizza toppings. Bake for 15 to 18 minutes, until crust is golden and cheese is bubbly.
