SHRIMP WITH RED PEPPER BROTH AND RATATOUILLE
This is one of chef Troy Dupuy's signature dishes at La Caravelle restaurant in New York City.

Steps:
- Make the broth: Place peppers, shallots, garlic, and a pinch of salt in a medium stockpot over medium-low heat. Cook, stirring, until vegetables are translucent, about 5 minutes.
- Increase the heat to medium-high; add wine, and bring to a boil. Cook until reduced by two-thirds, about 4 minutes. Add enough water to come up to the level of the peppers. Bring to a simmer. Stir in the star anise, clove, and bay leaves; cook for 15 minutes. Remove from heat, and add thyme. Let stand until room temperature; strain through a damp cheesecloth-lined sieve. You should have about 2 cups. Refrigerate until chilled, about 1 hour. When cold, season with salt.
- Make the ratatouille: Bring a large pot of water to a boil. Prepare an ice-water bath; set aside. Cut an x in the bottom of each tomato, and cut out the cores with a paring knife. Drop tomatoes in boiling water, and cook until skins begin to loosen, about 30 seconds. Using a slotted spoon, transfer to ice-water bath until cool enough to handle. Peel off and discard skins. Cut tomatoes in half lengthwise, and remove seeds. Cut tomatoes into a very small dice; set aside.
- In a small skillet, heat about 2 teaspoons oil over medium-high heat. Add 1/5 of the shallot, and 1/5 of the garlic. Cook until translucent. Add the tomato; season with salt and pepper. Cook, stirring frequently, until soft, about 1 minute. Transfer to a paper-towel-lined baking sheet to drain. Repeat with remaining shallots, garlic, and vegetables, cooking each vegetable separately.
- Combine the cooked, drained, and cooled eggplant, yellow squash, zucchini, and bell pepper in a medium bowl. Add just enough of the tomato to bind the mixture together. Stir in the herbs. Season with salt and pepper; set aside.
- In a small saucepan, bring 1 cup of the broth to a simmer. Add shrimp, and remove from heat. Let stand until room temperature. Transfer to refrigerator until chilled, about 30 minutes. Remove and drain on a paper-towel-lined plate.
- Place a spoonful of ratatouille in the bottom of two soup bowls. Top each with 2 shrimp. Garnish each bowl with a sprig of thyme. Pour 1/2 cup remaining chilled broth into each bowl. Serve immediately.
RED CHILI SHRIMP STIR-FRY RECIPE BY TASTY

- Heat 1 tablespoon of sesame oil in a large, nonstick skillet over medium heat.
- Pour in the shrimp and season with ¼ teaspoon of the salt.
- Fry the shrimp for 1 minute on each side.
- Remove the shrimp from the pan and pour in the remaining 1 tablespoon of oil.
- Toss in the red bell pepper, remaining ¼ teaspoon of salt, and red pepper flakes and sauté for a few minutes until they begin to soften.
- Add in the soy sauce and sauté about 1 more minute.
- Toss the shrimp back into the pan and mix until everything is well incorporated and the shrimp is fully cooked, about 1 minute.
- Divide the mixture evenly between 4 bowls and top with green onion.
- Enjoy!

RED CHILI SHRIMP
Based on the Malay dish called Sambal Udang. Really spicy but not TOO hot and yummy with white rice or coconut rice and thickly sliced cucumbers to cool your tongue. It doesn't look impressive but given the ease of the recipe and the small number of ingredients, I think you will find it surprisingly flavourful.

Steps:
- Cut up chilies, shallots and garlic and pop in the blender. Process with minimal water till you get a not too smooth paste.
- Heat 5tbs oil in a wok or deep pan till very hot then fry shrimp only till they change colour. Remove from pan, leaving oil behind and set aside.
- Add another tbs oil to pan and when hot, add chili paste and fry till fragrant and glistening. Return shrimp to pan and stir for about 3 minutes.
- Season and add lime juice (to taste) and water. Stir well. Turn off heat and serve with white or coconut rice and sliced cucumbers if you like.

SHRIMP IN RED CHILI SAUCE

- In large skillet over medium-high heat, dry-roast chilies, pressing down on all sides until fragrant and toasted, 4 minutes. Do not burn. In bowl, soak in warm water for 20 minutes. Drain, seed and chop coarsely; set aside.
- In skillet over medium-high heat, roast tomatillos and red pepper, turning often, until charred all over and softened, about 30 minutes. Let cool slightly; skin and seed.
- In blender or food processor, combine chopped chilies, tomatillos, red pepper, onion, garlic, vinegar, oregano, salt and pepper, purée until smooth. Using wooden spoon, press through fine sieve into bowl.
- In clean skillet, heat half of the oil over medium heat. Add chili sauce; cook, stirring often, for about 10 minutes or until thickened and slightly darkened. Transfer to bowl; cover to keep warm.
- Add remaining oil to skillet; stir-fry shrimp over high heat for 2 to 3 minutes or until bright pink and opaque. Immediately pour sauce over shrimp. Let stand at room temperature for shrimp to absorb flavour, 5 to 10 minutes. Serve slightly warm with toothpicks.
STEAMERS IN RED CHILE PESTO BROTH
Steps:
- Heat grill to high.
- Place a large kettle on the grill, add wine and bring to a boil. Add the steamers, cover and steam until opened, discarding any that do not open. Remove steamers to a large bowl with a slotted spoon.
- Bring liquid back to a boil and reduce by half. Whisk in the red chile pesto and honey. Season with salt and pepper and stir in the cilantro. Pour the mixture over the steamers and serve immediately.
- Place chiles in a bowl and cover with boiling water; let sit until soft, at least 30 minutes.
- Remove the chiles from the liquid, reserving the liquid, and coarsely chop. Place the chiles in the bowl of a food processor along with 1/4 cup of the soaking liquid, honey, cilantro, garlic and pine nuts and process until smooth. With the motor running, slowly add the oil until emulsified; season with salt and pepper.

OVEN ROASTED SHRIMP WITH TOASTED GARLIC AND RED CHILE OIL

- Preheat oven to 500 degrees F.
- Place the shrimp in a cazuela or an ovenproof casserole and season with salt and pepper, to taste. Drizzle olive oil over shrimp, add crushed garlic, and toss to coat. Roast in the oven until pink and cooked through, about 4 to 5 minutes. Drizzle generously with Red Chile Oil and sprinkle with thyme and Toasted Garlic Chips. Serve with crusty bread.
- 1 cup olive oil
- 6 dried chiles de arbol, lightly toasted and crushed
- 6 cloves garlic, finely chopped
- Pinch salt
- 3 sprigs fresh thyme, leaves removed
- Blend all ingredients including the thyme leaves in a blender until smooth.. Strain through a fine mesh strainer into a bowl.

- 8 cloves garlic, thinly sliced

- Heat the oil in a small skillet until it begins to shimmer. Add the garlic and cook until the slices begin to brown and curl. Remove with a slotted spoon to a plate lined with paper towels and season with salt.
SHRIMP BROTH

- Heat olive oil in a large saucepan over medium-high heat. Add shrimp shells and heads, onion, garlic, celery, carrot, chile, and tomato paste; cook, stirring, until vegetables are golden. Add chicken stock and bring to a simmer; simmer for 30 minutes.
- Strain mixture through a fine mesh sieve into a medium saucepan; discard solids. Place saucepan over medium-high heat and cook until reduced by half. Use immediately or cool and keep refrigerated in an airtight container until ready to use, up to 3 days.
THAI SHRIMP AND ROASTED RED CHILI STIR-FRY
This recipe tastes just like it came from a restaurant! I found this on the Thai Kitchen website. The sauce can be made to suit your taste. The best part is that it's simple but impressive (and next-day leftovers taste great too!).

- In a large wok or skillet, heat the vegetable oil over medium high heat.
- Add the garlic and onion and stir-fry for 30 seconds.
- Add the brown sugar, roasted red chili paste and fish sauce and continue stir-frying for 2 to 3 minutes, until the onion starts to wilt and soften. (Tip: start with the minimum amounts of these 3 ingredients and add more to taste. I like mine with more brown sugar and 1/2 Tbsp more chili paste).
- Add the peppers and peas and cook for 3 minutes.
- Add the shrimp and cook until the shrimp have turned orange-pink in color and are cooked through, about 1 to 2 minutes.
- If the sauce needs thickening, combine cornstarch and chicken broth or water and add to wok. Cook until thick and bubbly.
- Garnish with toasted sesame seeds and serve with hot jasmine rice.

RED CHILE RICE WITH SHRIMP AND BACON

- Heat the oven to 350 degrees. In a 3-quart ovenproof saucepan, cook the bacon over medium heat, stirring, until crispy and brown, about 5 minutes. Remove with a slotted spoon, leaving behind the fat (you'll need a generous tablespoon to fry the rice). Set the crisp bacon aside. Add the rice to the pan and cook, stirring, until lightly browned, about 5 minutes.
- Add the salsa and stir for 1 minute, then add the broth, salt and green onions. Bring to a boil, stir once, cover tightly and bake for 25 minutes. Remove from the oven.
- Uncover and lay the shrimp on top of the rice mixture; re-cover and bake until the shrimp is opaque, 7 to 10 minutes. Sprinkle with the cilantro and crispy bacon, mix everything thoroughly with a fork and serve.

- 1. Put the shrimp in a large saucepan with 4 cups water, 2 slices of the onion, 2 of the garlic cloves, and 1/2 teaspoon of the salt. Bring to a boil, lower the heat, cover and simmer until the shrimp are pink and curled, 5 to 6 minutes. 2. With a slotted spoon, remove the shrimp and save the stock. Cool the shrimp under cold running water. Remove the shells and put the shells back into the stock. Devein the shrimp and refrigerate in a covered bowl. Boil the shrimp stock 10 minutes, uncovered, to reduce and intensify the flavor. Pour the stock through a strainer, pressing on the solids to extract all the liquid. Discard the pulp and shells. Reserve the stock in the pan. 3. Soak the toasted and seeded chiles in a bowl of hot water 20 minutes. Heat the oil in a large nonstick skillet and fry the tortilla quarters until crisp and golden brown on both sides. Transfer to a blender. 4. In the same skillet, cook the remaining onion slices until translucent, about 3 minutes. Add the rest of the garlic and cook, stirring, one more minute. Transfer to the blender. 5. In the same skillet, cook the tomatoes on both sides until soft and the skins are charred with black spots. Transfer to the blender. Drain the chiles and add them to the blender. Add 1 cup of the chicken broth. Blend as smoothly as possible. 6. Pour the mixture through a strainer into the reserved shrimp stock. Add the remaining chicken broth and epazote. Bring to a boil. - Peel and devein shrimp; reserve shells. Halve shrimp lengthwise. Transfer shrimp to small bowl. Cover and chill.
