Number Of Ingredients 22

2 plum tomatoes (3 ounces each)
1/4 cup extra-virgin olive oil
2 large shallots, finely chopped
3 whole cloves
4 cloves garlic, finely chopped
2 ounces eggplant, cut into very small dice (1/3 cup)
2 ounces yellow squash, cut into very small dice (1/3 cup)
2 ounces zucchini, cut into very small dice (1/3 cup)
2 ounces red bell pepper, cut into very small dice (1/3 cup)
Coarse salt and freshly ground pepper
1 teaspoon finely chopped fine herbs (equal parts chive, chervil, tarragon, and flat-leaf parsley)
4 large shrimp, peeled with tails on, butterflied
Fresh lemon thyme sprigs, for garnish
5 red bell peppers, cored, seeded, and thinly sliced
2 shallots, thinly sliced
3 cloves garlic, thinly sliced
Coarse salt
1/2 cup dry white wine
1 star anise
3 whole cloves
2 small dried bay leaves
5 sprigs fresh lemon thyme

Steps:

  • Make the broth: Place peppers, shallots, garlic, and a pinch of salt in a medium stockpot over medium-low heat. Cook, stirring, until vegetables are translucent, about 5 minutes.
  • Increase the heat to medium-high; add wine, and bring to a boil. Cook until reduced by two-thirds, about 4 minutes. Add enough water to come up to the level of the peppers. Bring to a simmer. Stir in the star anise, clove, and bay leaves; cook for 15 minutes. Remove from heat, and add thyme. Let stand until room temperature; strain through a damp cheesecloth-lined sieve. You should have about 2 cups. Refrigerate until chilled, about 1 hour. When cold, season with salt.
  • Make the ratatouille: Bring a large pot of water to a boil. Prepare an ice-water bath; set aside. Cut an x in the bottom of each tomato, and cut out the cores with a paring knife. Drop tomatoes in boiling water, and cook until skins begin to loosen, about 30 seconds. Using a slotted spoon, transfer to ice-water bath until cool enough to handle. Peel off and discard skins. Cut tomatoes in half lengthwise, and remove seeds. Cut tomatoes into a very small dice; set aside.
  • In a small skillet, heat about 2 teaspoons oil over medium-high heat. Add 1/5 of the shallot, and 1/5 of the garlic. Cook until translucent. Add the tomato; season with salt and pepper. Cook, stirring frequently, until soft, about 1 minute. Transfer to a paper-towel-lined baking sheet to drain. Repeat with remaining shallots, garlic, and vegetables, cooking each vegetable separately.
  • Combine the cooked, drained, and cooled eggplant, yellow squash, zucchini, and bell pepper in a medium bowl. Add just enough of the tomato to bind the mixture together. Stir in the herbs. Season with salt and pepper; set aside.
  • In a small saucepan, bring 1 cup of the broth to a simmer. Add shrimp, and remove from heat. Let stand until room temperature. Transfer to refrigerator until chilled, about 30 minutes. Remove and drain on a paper-towel-lined plate.
  • Place a spoonful of ratatouille in the bottom of two soup bowls. Top each with 2 shrimp. Garnish each bowl with a sprig of thyme. Pour 1/2 cup remaining chilled broth into each bowl. Serve immediately.

RED CHILI SHRIMP

Red Chili Shrimp image

Based on the Malay dish called Sambal Udang. Really spicy but not TOO hot and yummy with white rice or coconut rice and thickly sliced cucumbers to cool your tongue. It doesn't look impressive but given the ease of the recipe and the small number of ingredients, I think you will find it surprisingly flavourful.

THAI SHRIMP AND ROASTED RED CHILI STIR-FRY

Thai Shrimp and Roasted Red Chili Stir-Fry image

This recipe tastes just like it came from a restaurant! I found this on the Thai Kitchen website. The sauce can be made to suit your taste. The best part is that it's simple but impressive (and next-day leftovers taste great too!).

Provided by Crystal Rose

Categories     Vegetable

Time 25m

Yield 2-3 serving(s)

Number Of Ingredients 12

2 tablespoons vegetable oil
2 teaspoons garlic, finely chopped (2-3 cloves)
1/2 cup yellow onion, coarsely chopped
1/2-1 tablespoon brown sugar (to taste)
1 tablespoon thai kitchen roasted red chili paste
2 -3 tablespoons thai kitchen premium fish sauce (to taste)
1/2 cup red bell pepper, cut into thin strips
1 cup snow peas or 1 cup sugar snap pea
12 ounces large shrimp, shelled and deveined
1/2 tablespoon cornstarch (optional)
1/2 cup chicken broth (optional) or 1/2 cup water (optional)
toasted sesame seeds (optional)

Steps:

  • In a large wok or skillet, heat the vegetable oil over medium high heat.
  • Add the garlic and onion and stir-fry for 30 seconds.
  • Add the brown sugar, roasted red chili paste and fish sauce and continue stir-frying for 2 to 3 minutes, until the onion starts to wilt and soften. (Tip: start with the minimum amounts of these 3 ingredients and add more to taste. I like mine with more brown sugar and 1/2 Tbsp more chili paste).
  • Add the peppers and peas and cook for 3 minutes.
  • Add the shrimp and cook until the shrimp have turned orange-pink in color and are cooked through, about 1 to 2 minutes.
  • If the sauce needs thickening, combine cornstarch and chicken broth or water and add to wok. Cook until thick and bubbly.
  • Garnish with toasted sesame seeds and serve with hot jasmine rice.

Yield Serves 6

Number Of Ingredients 8

4 thick slices smoked bacon, cut into 1/2 inch pieces
2 cups rice, preferably medium grain
2 cups Mellow Red Chile Salsa
1 1/2 cups hot rich-tasting chicken broth or hot water
1/2 teaspoon salt
4 green onions, sliced crosswise 1/4 inch thick
1 pound medium-large (about 24) shrimp, peeled and deveined
1/2 cup chopped fresh cilantro

Steps:

  • Heat the oven to 350 degrees. In a 3-quart ovenproof saucepan, cook the bacon over medium heat, stirring, until crispy and brown, about 5 minutes. Remove with a slotted spoon, leaving behind the fat (you'll need a generous tablespoon to fry the rice). Set the crisp bacon aside. Add the rice to the pan and cook, stirring, until lightly browned, about 5 minutes.
  • Add the salsa and stir for 1 minute, then add the broth, salt and green onions. Bring to a boil, stir once, cover tightly and bake for 25 minutes. Remove from the oven.
  • Uncover and lay the shrimp on top of the rice mixture; re-cover and bake until the shrimp is opaque, 7 to 10 minutes. Sprinkle with the cilantro and crispy bacon, mix everything thoroughly with a fork and serve.
