The absolute best shrimp marinade made with garlic, herbs, spices and lemon. You can cook your marinated shrimp on the grill, stove top or in the oven for perfect results every time.

1 pound shrimp (peeled and deveined, leave tails on for a nicer presentation)
4 tablespoons olive oil
1 1/2 tablespoons honey
1 1/2 tablespoons soy sauce
1 teaspoon lemon zest
2 teaspoons fresh parsley leaves (chopped)
2 teaspoons fresh thyme leaves (chopped)
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 teaspoon minced garlic
1/4 teaspoon chili flakes (optional)

Steps:

  • Place the olive oil, honey, soy sauce, lemon zest, parsley, thyme, salt and pepper in a bowl. Whisk to combine.
  • Reserve 1 tablespoon of the marinade for later use. Add the garlic and chili flakes to the bowl.
  • Add the shrimp and marinade to a resealable freezer bag and seal. Shake to coat the shrimp with the marinade.
  • Marinate in the refrigerator for at least 1 hour, or up to 8 hours.
  • At this point you can broil, grill or saute the shrimp for 2-3 minutes per side or until pink and opaque.
  • Drizzle the reserved marinade over the cooked shrimp, then serve.

2 quarts water
3 small onions, sliced, divided
1 garlic clove, minced
1 bay leaf
3 teaspoons salt, divided
2-1/2 pounds uncooked shrimp, peeled and deveined
3/4 to 1 cup ketchup
1/2 cup vinegar
6 tablespoons vegetable oil
1 tablespoon chopped chives
1-1/2 teaspoons Worcestershire sauce
1/4 teaspoon pepper
1/8 teaspoon curry powder

Steps:

  • In a large kettle, combine water, 1 onion, garlic, bay leaf and 1 teaspoon salt; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Add shrimp; simmer for 5-7 minutes or until shrimp turn pink. Drain immediately; rinse in cold water. Place in a large glass or plastic bowl with remaining onions. In a small bowl, combine ketchup, vinegar, oil, chives, Worcestershire sauce, pepper, curry powder and remaining salt. Pour over shrimp. Cover and chill for 6 hours or overnight. Drain before serving.

Steps:

  • In a large stainless steel or glass mixing bowl, combine the oil, vinegar, hot sauce, celery seed and salt. Mix thoroughly. Place the chopped onions and shrimp into the oil mixture. Toss to coat evenly. DO NOT use an aluminum mixing bowl! The high acid content in the vinegar could cause a reaction with the aluminum and poison the food.
  • Place the mixture in the refrigerator and chill over night.

I was really surprised at the results! I get wonderful compliments for this recipe. Should marinate 1-2 lbs. of shrimp--adjust to taste.

Steps:

  • Remove zest from lemons with a vegetable peeler and remove any white pith from zest strips with a sharp knife. Squeeze 1 1/2 cups lemon juice. Finely grind coriander seeds in an electric coffee/spice grinder. Whisk together zest, juice, coriander, vinegar, oil, water, sugar, chile flakes, and 6 tablespoons kosher salt in a large bowl until sugar and salt are dissolved.
