1/2 cup salted butter (softened)
2 tablespoons olive oil
1 tablespoon dried basil
1 teaspoon dried oregano
1/2 cup grated parmesan cheese
4 cloves garlic (minced)
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Slice the bread in half lengthwise and place each half on a baking sheet.
  • In a small bowl, mix together the butter, olive oil, basil, oregano, parmesan, minced garlic, salt and pepper. Mix it well.
  • Spread the butter in a generous, even layer on each half of the French bread.
  • Put the baking sheet underneath the broiler in the oven. Broil until it just starts to brown. Watch it closely because how fast it cooks is dependent on how hot your broiler is and how close your rack is to the heating element. It shouldn't take more than 5 minutes.
  • Devour.

Steps:

  • Preheat oven to 425 degrees F and line a large baking sheet with parchment paper or foil. Slice bread in half lengthwise and place on a large baking sheet, cut sides up.
  • In a medium bowl, mix butter, garlic, parsley and salt together until well combined. Spread evenly over bread.
  • Bake for 10-15 minutes or until slightly golden brown on the edges. If you want to add cheese, add it the last 2 minutes of baking. If you like a crispier garlic bread, bake for 3-5 minutes more, watching carefully until it is as golden as you like.

1 1/2 sticks (12 tablespoons) unsalted butter
4 cloves garlic, finely chopped
1 large soft Italian or French loaf
1/4 cup grated Parmesan
Kosher salt
2 tablespoons flat-leaf parsley leaves, finely chopped

Steps:

  • Arrange a rack in the center of oven and preheat to 450 degrees F.
  • Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
  • Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
  • Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

1 head garlic, cloves separated and peeled
1 cup freshly grated Italian Parmesan cheese
2 tablespoons minced fresh parsley
2 teaspoons grated lemon zest
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 (20 to 24-inch-long) crusty French baguette
Fleur de sel or sea salt

Steps:

  • Preheat the oven to 450 degrees F. (Make sure your oven is clean or it will smoke!)
  • Melt the butter in a small saucepan over low heat. Add the garlic, stir to coat with the butter, and cook, covered, for 20 minutes, stirring occasionally, until the garlic is very tender. Transfer to a small bowl and set aside until cool enough to handle. Mash the garlic in the butter with a fork. Stir in the Parmesan, parsley, lemon zest, red pepper flakes, 1 1/2 teaspoons kosher salt, and 1/2 teaspoon black pepper.
  • Slice the baguette in half lengthwise and place both halves, cut sides up, on a cutting board. Score each half diagonally (don't cut all the way through) in large serving-size pieces. Spoon all of the garlic mixture generously on the cut sides of the bread. Cut each half of the baguette in half crosswise along a score and place the 4 pieces on a sheet pan lined with parchment paper.
  • Bake for 5 to 7 minutes, until the topping is bubbly and starting to brown and the bread is crisp. Transfer to a board, cut in serving pieces along the scores, sprinkle with fleur de sel, and serve warm.

I've tried to copy the garlic bread from a neighborhood bakery back home, but I can't come close to the quality of bread that they bake. My grandmother and uncles would always buy 2 half loaves each Sunday morning, one for the ride home and one for Sunday lunch. I use fresh baked French loaves or a chewy Italian loaf.

Number Of Ingredients 10

1 loaf bread (uncut and fresh as possible)
3 -4 garlic cloves, crushed to a paste (I use a mortar and pestle but you can probably use your press or processor)
2 teaspoons dried chili pepper flakes
2 teaspoons dried basil
2 teaspoons dried thyme
2 teaspoons salt
1 teaspoon pepper
1/4 cup olive oil
1 tablespoon butter (adds a little more depth and richness)
2 cups parmesan cheese (not out of a store-bought shaker) or 2 cups romano cheese, grated (not out of a store-bought shaker)

Steps:

  • The trick with this recipe is to infuse the oil with the garlic. There are a couple of ways to accomplish this.
  • Using a small skillet and over medium-low heat, heat the olive oil, butter, and garlic until butter melts. Make sure you add garlic to the cold pan and let it warm along with the oil and butter.
  • Once butter is melted, reduce heat to low and let the oil/butter/garlic mixture cook for another 5 minutes.
  • Make sure you do not brown the garlic. If it starts to brown, remove from heat alltogether and let sit for 5 minutes off-heat to further infuse the oil.
  • You can also microwave the oil, butter, and garlic for 45 seconds to a minute to speed this up, but this doesn't give the mixture near the flavor as the skillet method.
  • While oil infuses, cut loaf of bread length-wise so you have two long halves.
  • Brush or spoon oil onto the cut-sides of the bread, making sure to cover all the way to the edges. It's okay to have some of the garlic from the mixture added as well, in fact it's preferred.
  • Sprinkle the dry seasons on the loaves (basil, thyme, and chili).
  • Salt and pepper the loaves.
  • Spread the parm or romano cheese on both loaves (I've even used some mozzarela for the string effect).
  • Bake incovered at 350 degress for 20 minutes or until cheese is completely melted and begins to brown.
  • Slice in big chuncks and serve alongside your favorite pasta or lasagna.

olive oil
5 cloves garlic, minced
3 -4 tablespoons butter, softened
1 1/2-2 tablespoons mayonnaise
1 tablespoon dried oregano
1 teaspoon dried basil
1 tablespoon parsley flakes
salt, pepper,cayenne,to taste
parmesan cheese, grated (optional)
mozzarella cheese, thinly sliced or shredded (optional)
1 loaf good Italian bread or 1 loaf French bread

Steps:

  • Preheat oven to 350.
  • Take a piece of foil and place whole garlic cloves in it, coating with a generous amount of olive oil.
  • Wrap tightly.
  • Bake until done, 20 min to 1/2 hour.
  • Cloves will be done when sweet smelling, soft and golden brown.
  • Split bread lengthwise.
  • Remove excess dough.
  • Mash roasted garlic with all other ingredients except cheeses.
  • Spread cut surfaces of bread with butter mixture.
  • Sprinkle with parmesan and layer bottom half with mozzarella.
  • Press halves together and wrap tightly in foil.
  • Bake at 350 degrees until outer crust is crispy and cheese is melted, about 15 minutes.
  • Let cool slightly and cut into thick vertical slices.
  • I like it just as it is, crispy outside, moist and chewy (and slightly saturated!) inside, but you could bake this open faced on a cookie sheet for a crisper texture.
  • If you do this, put mozzarella on both sides.
  • You can make the garlic butter ahead of time and refrigerate it.
  • It's also to die for melted over hot pasta!
