THE ORIGINAL DONAIR FROM THE EAST COAST OF CANADA
In the early 70's, a Greek restaurateur in the city of Halifax introduced the Donair. Within a few short years, virtually all pizzerias had added their version of the dish to their menus. Not to be confused with gyros, the Donair has a vastly different flavor. Originally the dish was made with ground lamb, but this proved too costly and ground beef was later substituted. Technically, this resulted in an aberration of sorts, as the final product was not what the originator had intended. What resulted, however, is the legendary East Coast Donair.

Steps:
- In a bowl, thoroughly mix together the ground beef, black pepper, onion powder, garlic powder, salt, paprika, cayenne pepper, and oregano. Pack the spiced meat into a thick loaf shape, cover, and let rest in the refrigerator overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Place the meat loaf onto a baking sheet, and bake for 1 hour, flipping the loaf over halfway through cooking. Allow the meat loaf to cool so it holds together for slicing.
- Mix together the evaporated milk and white sugar in a bowl, stirring until the sugar is dissolved, and then add the vinegar by teaspoons, mixing together after each addition, to taste. Refrigerate the sauce until serving.
- Slice the meat loaf into 1/4-inch thick slices, and brown the slices in a skillet over medium heat until both sides are brown and crisp, about 5 minutes per side.
- Sprinkle the pita bread rounds with a little water, and press each onto a heated skillet to warm up.
- To serve, place several slices of meat into a warmed pita bread, and spoon about 2 tablespoons of sauce over the meat. Roll the pita bread into a cone shape, wrap in aluminum foil to keep the sauce from dripping out, and serve.

CAESAR SALAD (THE ORIGINAL)
This is from Margaret Fultons revised 1968 cookbook (a Christmas present from the DD - my original is rather dog eared and stained) in which she states "This is the authentic recipe made for me by the Cardini family in Mexico, the creataors of the caesar salad. Particular care was taken to lay the tender, elongated cos leaves all in the one direction." Times are estimated.

- To make croutons -.
- Preheat oven to 180°C.
- Cut baguette into thick slices.
- Mash the anchovy fillets and garlic with the butter and spread over the bread slices.
- Place on a baking tray and bake until pale and gold and crisp.
- For the Dressing -.
- With the exception of the egg mix/whisk or put in a jar, seal and shake, all the ingredients together to make the dressing.
- Coddled egg -.
- Lower the egg into a small saucepan of simmering water and simmer for 1 minute, lift out with a slotted spoon.
- Arrange the crisp lettuce leaves in a bowl.
- Add the croutons and break in the coddled egg and add the dressing and turn the salad gently, until the dressing coats the lettuce leaves evenly.
- Serve as soon as possible after dressing (better immediately) - keeps o'kay but not the best. (haven't done myself but from family members that have).

THE ORIGINAL CABBAGE SOUP DIET
I got this out of the National Enquirer in 1995-1996 when the soup diet originally came out. I don't remember the rules of the diet other than you could eat as much of this as you wanted.

THE ORIGINAL WALDORF SALAD
"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.

10 TIPS FOR WRITING YOUR OWN ORIGINAL RECIPES - DELISHABLY
From delishably.com
Estimated Reading Time 8 mins
- Document Your Original Recipe as You Make It. I keep a pad of large, unlined paper in the kitchen for taking notes about how I prepare a recipe I’m about to write.
- Be Specific About Ingredient Measurements and Forms. If I were writing a recipe for my Grandma Ellie, one of the most accomplished cooks I’ve ever known, I could safely substitute a “pinch” for 1/8 teaspoon or a “handful” for 1/3 cup.
- Use Commonly Accepted Terms To Describe Ingredient Preparation and Cooking Methods. There are worlds of differences between chopping and mincing, grilling and frying, and too many more similar terms to mention.
- Use a Template When Writing Your Recipe. Using a template makes your recipe writing process more efficient, since you don’t have to make format or organization decisions as you write.
- Rewrite Your Draft Notes Into Recipe Form. The organization of a finished recipe is quite different from the notes you make while documenting the cooking process.
- Write a Brief Introduction. A good time to write an introduction is after you’ve re-written your draft notes, or even later. By that time, most of the pieces of your recipe will have come together, and you may have fresh insights about what you want to tell readers about your recipe.
- Include Images. There is no doubt that food photography is an art and a profession as well, but absent a professional photographer, don’t hesitate to include your own photos or drawings of ingredients, equipment, and the finished dish.
- Include Serving Suggestions. This is your opportunity to help the reader complement your recipe with foods that you know add health benefits and other enhancements.
- Use a Spell Checker. No matter how careful you’ve been in the writing process, I guarantee a spell checker is going to find misspellings.
- Ask for a Review From a Fresh Pair of Eyes. By the time you’ve written your recipe, spellchecked it, and re-read it too many times, you are now blind to whatever faults it may contain.
