I love banana! And these make the ideal treat for supper for the school lunches. They freeze well so double the recipe and try and leave some for the freezer! Store in an airtight container once cooled.

1 ½ cups mashed banana
⅓ cup oil
⅓ cup milk, or as needed
1 medium egg, beaten
1 ½ teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons cocoa powder
½ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with 12 paper liners.
  • Combine mashed banana, oil, milk, egg, and vanilla extract in a medium bowl. Sift flour and cocoa powder into a large bowl. Add sugar, baking powder, and salt into the flour mixture; mix to combine. Add wet ingredients to dry ingredients, mixing until just combined. Batter should be wet enough to scoop into muffin liners; add a little extra milk if your mixture is too dry.
  • Stir chocolate chips into batter. Scoop batter into muffin liners.
  • Bake in the preheated oven until tops spring back when lightly pressed, 12 to 15 minutes.

These muffins are so moist and full of flavor! I have looked at dozens of recipes and most had too much sugar for my liking. There is absolutely no need for a lot of sugar to make these muffins delicious. Because they have bananas and chocolate chips, I just added 1/2 cup of sugar, which turned out perfect!

1 ½ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup white sugar
½ cup canola oil
1 egg
¼ cup milk
1 teaspoon vanilla extract
2 large very ripe bananas, mashed
¾ mini semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.
  • Combine flour, cocoa, baking powder, baking soda, and salt together in a large bowl.
  • Whisk sugar, oil, egg, milk, and vanilla extract together in a separate bowl. Stir into flour mixture until just moistened. Fold in bananas and chocolate chips.
  • Divide batter among the muffin cups, filling each about 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

Adding chocolate dessert hummus, which takes like brownie batter, to my muffins recipe changed it for the better.

Number Of Ingredients 12

1 cup all-purpose or whole wheat flour
1 teaspoon baking soda
1 teaspoon baking power
2 tablespoon cocoa powder
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon
1/2 cup chocolate chips or chunks
1/2 cup chocolate hummus
2 eggs
3 very ripe bananas, mashed
1/2 teaspoon vanilla extract
2-4 tablespoon sugar, depending on taste

Steps:

  • Preheat the oven to 425°F and prep a 12-cup muffin tray by lining each cup with a cupcake liner and spraying each cup generously with non-stick spray. In a medium-sized bowl, combine flour, baking powder, baking soda, cocoa powder, salt, and cinnamon together using a sift to ensure there are no clumps in the flour mixture. Set aside. In a large bowl, combine eggs, sugar, chocolate hummus, mashed bananas, and vanilla extract until all of the ingredients are fully incorporated. Set 2 tablespoons of the flour mixture to the side and add the remaining amount of flour mix to the wet ingredients in small batches, making sure to stir completely between each batch until the mixture is well-combined until it has reached the consistency of brownie batter. Toss the chocolate chunks or chips in the 2 tablespoons of flour mix that was set aside until the chocolate is fully coated, then add the chips and any remaining flour mix to the batter and gently fold them in until all ingredients are fully combined. Using a small ice cream scoop or a tablespoon, fill each cupcake liner three-quarters of the way full. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Enjoy them warm or store them in the fridge or freezer for a delicious snack on the go!
