ITALIAN SAUSAGE & ALFREDO PASTA BAKE
This Italian Sausage & Alfredo Pasta Bake is easy to make and is fairly economical. You could add other veggies if you'd like, but usually, I like to keep it pretty simple. I like to keep my veggies "noticeable" in this dish, however, feel free to make them smaller if you want.

Steps:
- Preheat oven to 375°F. Spray a 9x13-inch baking pan with cooking spray and set aside.
- Cook pasta according to package directions and drain.
- Meanwhile, in a skillet, brown and crumble the sausage over medium-high heat until no longer pink. Drain. Set the sausage aside.
- In the same skillet, melt the butter. Saute the red onion and bell pepper for 2-3 minutes. Add the mushrooms and continue to saute for an additional 2-3 minutes.
- In a large bowl (or the same pan the pasta was cooked in), combine the pasta, sausage, veggies and Alfredo sauce. Mix well. Spread evenly into the prepared 9x13-inch pan. Top with Mozzarella cheese.
- Bake 20-30 minutes, or until the cheese is melted and the mixture is heated through. Serve immediately.

THREE-CHEESE LASAGNA WITH ITALIAN SAUSAGE
An easy three-Cheese Lasagna with Italian Sausage.

- FOR SAUCE:
- Heat oil in heavy large saucepan over medium heat. Add onion, carrots and garlic; sauté until softened, about 12 minutes. Add beef and sausages to pan; sauté until cooked through, breaking up meat with back of spoon, about 5 minutes. Add remaining ingredients. Cover and simmer until flavors blend and sauce measures about 5 cups, stirring occasionally, about 15 minutes. Discard bay leaf. Cool.
- FOR LASAGNA:
- Preheat oven to 350°F. Cook noodles in large pot of boiling salted water until almost tender, about 7 minutes. Drain; cover with cold water.
- Combine ricotta and 3/4 cup Parmesan cheese in medium bowl. Mix in spinach. Season to taste with salt and pepper. Mix in eggs.
- Drain pasta and pat dry. Spread 1/2 cup sauce over bottom of 13x9-inch glass baking dish. Place 5 noodles over sauce, overlapping to fit. Spread half of ricotta-spinach mixture evenly over noodles. Sprinkle 2 cups mozzarella cheese evenly over ricotta-spinach mixture. Spoon 1 1/2 cups sauce over cheese, spreading with spatula to cover (sauce will be thick). Repeat layering with 5 noodles, remaining ricotta-spinach mixture, 2 cups mozzarella and 1 1/2 cups sauce. Arrange remaining 5 noodles over sauce. Spread remaining sauce over noodles. Sprinkle remaining 3/4 cup mozzarella cheese and 1/4 cup Parmesan cheese evenly over lasagna. (Can be prepared up to 1 day ahead. Cover tightly with plastic wrap and refrigerate.) Cover baking dish with aluminum foil. Bake lasagna 40 minutes; uncover and bake until hot and bubbly, about 40 minutes. Let lasagna stand 15 minutes before serving.
THREE CHEESE PASTA WITH ITALIAN SAUSAGE
While surfing Pinterest one day, I stumbled upon this recipe that sounded so good and comforting. The Gouda cheese puts this one over the top creamy and rich. Don't forget the nutmeg!!! I served this with homemade Bruschetta but a side salad would be perfect too.

Steps:
- Bring a large pot of slightly salted water to boil. Add the pasta once it is boiling and cook until the pasta is just under al dente (slightly resistant still). Preheat the over to 350 degrees.
- Shred all the cheeses and set aside. Begin to cook the sausage by heating a small skillet to medium heat & removing the meat from the casing. Use a wooden spoon to break apart the sausage for even cooking.
- In a medium saucepan, melt the butter over medium heat then add the onion. Saute until translucent and very fragrant about 5 minutes. Add the garlic and cook an additional minute.
- Mix in the flour, let it cook for about 30 seconds.
- Add the chicken stock & milk, continuously whisking. SLOWLY add the 3 cheeses to the mixture about a small handful at a time. Add the next bit once the previous is completely melted and creamy within the liquid. When all the cheese is added reduce the heat to low and stir in the nutmeg, salt and pepper.
- In a baking dish, combine the cooked pasta, sausage, and cheese sauce.
- Bake in the oven for about 10 minutes. Remove and garnish with chopped parsley.

SAUSAGE TORTELLINI ALFREDO
A wonderful combination of rich alfredo sauce and three cheese tortellini -with veggies and Italian sausage to make matters worse (or better!). This is not for the faint of heart for calories, but that's why they invented the "just a garden salad for me" lunch! :) This recipe looks fancy enough for company but uses pre-made sauces and pasta for convenience. I have used Buitoni refrigerated pasta and sauce as well as those listed in the recipe. Using homemade versions could only make it tastier!

- Prepare tortellini according to package directions. Drain and hold warm.
- In a large nonstick skillet, break up Italian sausage and cook on medium heat for 5 minutes.
- Add garlic, mushrooms, onions and peppers. Continue to cook, stirring occasionally until sausage is no longer pink.
- Add alfredo sauce and pepper. Reduce heat to low. Simmer until flavors are well blended, or until you can't wait any longer. (try to hold out at least 10 minutes).
- Add drained pasta to skillet and stir well to combine. Serve immediately with freshly grated parmesan cheese.
