9 cups water
1 tablespoon salt, plus extra for seasoning
2 1/2 cups yellow cornmeal or polenta
1 1/2 cups freshly grated Parmesan
1 1/2 cups whole milk, at room temperature
10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature, cut into 1/2-inch pieces
1/3 cup chopped fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Bring the water to a boil in a large, heavy pot. Add the salt. Gradually whisk in the cornmeal. Reduce the heat to low and cook, stirring often, until the mixture thickens and the cornmeal is tender, 15 to 20 minutes. Remove the pot from the heat. Add the cheese, milk, butter, and parsley. Stir until the butter and cheese have melted. Season with salt and pepper, to taste. Transfer the polenta to a bowl and serve.

Who knows who first mixed soy sauce and butter and discovered the pleasures the combination provides. Try the mixture on warm white rice, a steaming pile of greens or an old sneaker - regardless, the taste is a sublime velvet of sweet and salty, along with a kind of pop we call umami, a fifth taste beyond sweet, sour, bitter and salty. Soy butter provides warmth and luxury, elegance without pomp. For this recipe, we've adapted a dish that was on the menu at the chef Chris Jaeckle's All'onda, in Manhattan: a mixture of soy and butter with mushroom stock to pour over polenta and sautéed mushrooms. The result is a dinner of comfort and joy.

2 cups minus 3 tablespoons whole milk
1 teaspoon salt, or to taste
1 3/4 cups polenta or cornmeal
4 tablespoons unsalted butter, or to taste
1 tablespoon grated Parmesan, or to taste
1/2 ounce dried porcini mushrooms
5 tablespoons cold unsalted butter, cut into pats, divided
1 clove garlic, peeled and minced
8 ounces fresh mushrooms, wild or cultivated, sliced thin
1 teaspoon fresh thyme leaves
1 tablespoon soy sauce
1 tablespoon heavy cream
1 tablespoon extra-virgin olive oil
Freshly ground black pepper

Steps:

  • For the polenta, bring 4 1/2 cups water and the milk to a high simmer in a medium-size heavy saucepan set over medium-high heat. Add salt. Pour the cornmeal slowly into the liquid, stirring with a wire whisk to prevent clumping. Continue stirring as the mixture thickens, 2 to 3 minutes.
  • Turn heat to low. Cook for approximately 40 to 45 minutes, stirring every 5 to 10 minutes. If the polenta becomes quite thick, thin it with 1/2 cup water, stir well and continue cooking. Add up to 1 cup more water as necessary, to keep the polenta soft enough to stir.
  • Add the butter to pot, and stir well. Add the Parmesan, if using. Taste for seasoning. Set the covered saucepan in a pot of barely simmering water, and keep warm for up to an hour or so.
  • Meanwhile, put the dried mushrooms in a small bowl, and cover with about 1/2 cup boiling water. Allow to steep for 20 minutes. Remove the mushrooms, and pat dry, then chop roughly. Reserve the mushroom stock.
  • Melt 2 tablespoons of the butter in a sauté pan set over high heat until it has melted. Add the garlic and cook until it starts to sizzle, about 30 seconds. Do not let the garlic brown.
  • Add the fresh and reconstituted mushrooms and thyme to the pan, and sauté 3 to 4 minutes, turning until browned. Add about 1/4 cup of the mushroom stock to deglaze the surface, using a wooden spoon to scrape at the browned bits. Allow the stock to reduce by half, then turn the heat to medium-low and add the remaining 3 tablespoons of butter, whisking to combine, followed by the soy sauce, cream and olive oil. Allow mixture to cook until it thickens a little, then remove from heat. Taste for seasoning, adding black pepper, if desired.
  • Put the polenta in a warmed bowl, then top with mushrooms and the sauce. Serve immediately.

4 tablespoons unsalted butter, plus more, for the baking dish
1 pound mixed mushrooms, such as cremini, porcini or stemmed sliced shiitakes
Kosher salt and freshly ground black pepper
2 cups milk
1/2 cup heavy cream
1 cup polenta
2 teaspoons sugar
1/2 teaspoon baking powder
3 large eggs, separated
1 cup shredded white Cheddar (about 4 ounces)

Steps:

  • Preheat the oven to 375 degrees F. Butter a 2-quart baking dish.
  • Melt the butter in a large pot over medium heat. Add the mushrooms, 1 teaspoon salt and a couple turns of pepper and cook until the mushrooms are tender, about 4 minutes. Add the milk and heavy cream and heat until very warm.
  • Whisk together the polenta, sugar, baking powder, 1 teaspoon salt and a couple turns of pepper in a large bowl. Whisk the mushroom sauce into the polenta mixture until well combined and thick. Whisk the egg yolks in a small bowl. Whisk 1/2 cup of the hot polenta into the yolks, repeat twice, then pour the yolk mixture into the remaining polenta. Stir in the Cheddar.
  • Whisk the egg whites with a pinch of salt in a medium bowl until soft, glossy peaks form. Fold the egg whites into the polenta mixture in three additions.
  • Spoon the polenta mixture into the prepared baking dish. Bake until golden and puffed, 25 to 30 minutes. Serve immediately.

1 cup shiitake mushrooms, stemmed and cut in 1/2

1/2 cup white wine

1 pinch crushed red pepper flakes
1/3 cup chopped parsley leaves, for garnish
4 tablespoons olive oil
1/2 cup chopped sweet onion
1 tablespoon chopped garlic
32 ounces chicken stock
1/4 cup chopped fresh oregano leaves
1/4 cup chopped fresh basil leaves
16 ounces instant polenta
1/2 pint heavy cream
1 cup grated fontina
Salt and freshly ground black pepper
1/4 cup grated Parmesan
2 tablespoons minced chives, for garnish
1/4 cup orange liqueur (recommended Grand Marnier)
1/4 cup lime juice
1/4 soy sauce
1/8 cup honey
3 tablespoons chili sauce
1/4 cup fresh chopped basil leaves
2 tablespoons minced ginger
2 tablespoons orange zest
1/8 cup minced chile peppers
1 1/2 pounds jumbo shrimp, with heads on (about 18 shrimp)
1/2 cup chopped scallions, for garnish

Steps:

  • Mushrooms:
  • Heat the olive oil in a saucepan over medium-high. When the olive oil is hot add 2 sprigs of rosemary and cook for 2 minutes. Remove the rosemary and add the shallots.
  • Cook the shallots until translucent, about 4 minutes, then add the mushrooms and saute until they release their liquid, about 8 minutes. Stir in the white wine bring to a simmer about 3 minutes.
  • Add 1/2 teaspoon of salt and 1/4 teaspoon of black pepper and simmer for 3 minutes. Stir in a pinch of red pepper flakes. Transfer the mushrooms to a serving bowl and garnish with chopped parsley.
  • Polenta:
  • Heat the olive oil in saucepan over medium-high heat. When the oil is hot add the onions and saute for 5 minutes. Add the chopped garlic and cook for 3 minutes. Stir in the chicken stock and bring to boil, then add the oregano and basil. Slowly pour in the polenta and stir constantly until the polenta thickens. Stir in the heavy cream and fontina and mix until you have a smooth and creamy texture. Season with salt and pepper, to taste. Transfer the polenta to a serving dish and garnish with Parmesan and chives.
  • Shrimp:
  • Combine all of the marinade ingredients in a large bowl.
  • Devein the shrimp by cutting down the back with scissors and removing the vein. Leave the shrimp in the shell. Use your fingers to separate the shell from sides of the shrimp and add them to the marinade. Set aside to marinate for 1 hour. Set the grill temperature for medium-high and let it heat up. Put the shrimp on the grill and cook 2 to 3 minutes on each side. Reduce the remaining marinade on a side burner in a small pan. Remove the shrimp to a platter. Drizzle with the reduced marinade and garnish with scallions.

3/4 cup yellow cornmeal
1 cup diced ham

1 egg, beaten to blend

Steps:

  • Combine milk, 5 tablespoons butter, salt, pepper and nutmeg in heavy large saucepan. Bring to boil over medium heat. Gradually whisked in cornmeal. Stir until mixture is very thick and beginning to pull away from sides of pan, about 8 minutes. Remove from heat. Mix in ham, 3/4 cup cheese and egg. Transfer polenta to 8 x 8 x 2-inch glass baking dish. Dot with 1 tablespoon butter. Sprinkle with remaining 2 tablespoons cheese. (Can be prepared 1 day ahead. Cover; refrigerate.)
  • Preheat oven to 450°F. Bake polenta uncovered until heated through and beginning to brown on top, about 30 minutes. Cut into squares and serve.

1 1/2 pounds mushrooms (mixed cremini and white button)
3 tablespoons olive oil, divided
1 1/2 teaspoons kosher salt, divided, plus more to taste
1/8 teaspoon freshly ground black pepper, plus more to taste
5 cloves garlic, thinly sliced
1 medium yellow onion, thinly sliced
2 teaspoons fresh oregano leaves, minced
1 teaspoon fresh thyme leaves, minced
Pinch crushed red pepper flakes, plus more to taste
4 1/2 cups vegetable broth, divided
1 tablespoon tomato paste
2 teaspoons red wine vinegar
2 tablespoons unsalted butter, divided
1 cup instant polenta
1/4 cup grated Parmesan cheese, plus more for serving
1/4 cup chopped fresh Italian parsley leaves and tender stems, divided

Steps:

  • Prepare the mushrooms: Gently wipe the mushroom caps clean with a dry paper towel. Trim the bottom of stems and cut the mushrooms into quarters if large and halves if small. The cut pieces should be about the same size.
  • Cook the mushrooms: Heat a large skillet over high heat until it's hot. It may take about 1 minute. Carefully add the 1/4 cup water and mushrooms. Cook, stirring until all the water evaporates, about 12 minutes. The mushrooms will release more water, but they will become smooth and shiny. The timing depends on how much moisture the mushrooms have-they're ready when the skillet is dry. Add 1 tablespoon of oil and stir. Allow the mushrooms to sit undisturbed to brown for a minute or so, then stir again. Lower the heat if the mushrooms are darkening too quickly. Continue cooking the mushrooms until they are browned all over and crisp-tender, 4 to 5 minutes. Stir in 1/4 teaspoon of salt and black pepper. Transfer the mushrooms into a medium bowl.
  • Make the sauce: Heat the same large skillet used for the mushrooms over medium heat. Add the remaining 2 tablespoons oil, 1/4 teaspoon salt, garlic, onion, oregano, thyme, and crushed red pepper flakes. Cook stirring until the onions are tender and limp, about 10 minutes. Add a drizzle of oil if the vegetables look too dry. Lower the heat if the garlic is browning too quickly. Add the tomato paste and smoosh with the back of the wooden spoon into the pan to cook out some of the raw flavor, about 30 seconds. The paste might stick to your spoon but just keep swirling it around the pan. Stir in 1/2 cup vegetable stock. Return the mushrooms to the skillet and stir briefly to re-warm. Turn off the heat and stir in the vinegar and 1 tablespoon butter. Taste and season with more salt, black pepper, and red pepper flakes if you'd like. Set it aside while you cook the polenta.
  • Make the polenta: In a medium saucepan over high heat, bring 4 cups of vegetable stock and 1 teaspoon salt to a boil. Slowly add the polenta while whisking. Turn the heat down to maintain a gentle simmer. Once all the polenta has been added, switch to a wooden spoon and cook, stirring until the polenta is thick and bubbly, about 3 minutes. It will pull away from the sides of the saucepan. Taste it. It should be creamy, not grainy.
  • Season the polenta: Stir in the Parmesan, 2 tablespoons parsley, and the remaining 1 tablespoon butter. Turn off the heat.
  • Serve: Divide the polenta among shallow serving bowls. Spoon the mushrooms on top. Sprinkle with the remaining 2 tablespoons parsley and more Parmesan.

Mushroom Sauté on Charred Polenta and Seared Spicy Ham image

Dry red wine for the sherry or white wine
1 24-ounce tube of prepared polenta for the 8 slices of bread
1 10-ounce sack of Italian cheese blend or shredded Provolone for the Gruyère cheese
1/4 cup EVOO, for brushing the polenta and ham 12 slices deli-sliced capocolla (Italian spicy ham), cut as thick as a slice of bacon
1 15-ounce can (about 2 cups) crushed fireroasted tomatoes, such as Muir Glen brand

Steps:

  • Preheat a grill pan or large nonstick skillet to high. Cut the polenta into 12 disks. Pour the EVOO into a small dish. Using a pastry or grill brush, paint the polenta with EVOO and char the disks on each side, 5 or 6 minutes total. Remove the polenta and cover with foil to keep warm. Brush the capocolla ham with EVOO and sear on both sides, 2 to 3 minutes total.
  • Preheat the broiler to high.
  • Prepare the mushrooms in the same manner as for the master recipe, #271, swapping the red wine for the sherry or white wine. Add the tomatoes to the skillet when you would have added the cream in the original recipe.
  • In a shallow casserole, layer the polenta with ham. Top with the mushroom-tomato sauce and cover with the cheese. Place under the hot broiler 6 inches from the heat to melt and brown the cheese. Serve with a green salad.

6 garlic cloves, minced

Cool to room temperature, about 30 minutes. Cut polenta into 16 pieces, then cut each diagonally in half to make 32 triangles; place on a greased baking sheet. Bake at 350° for 12-15 minutes or until light golden brown., For mushrooms, saute mushrooms in oil and butter until tender. Add the garlic, thyme, salt and pepper; cook 1 minute longer. 1 cup shredded Fontina cheese

3 ounces thinly sliced black forest ham (or prosciutto)
1 large garlic clove
2 sprigs parsley

1 1/2 teaspoons lemon juice

Steps:

  • Heat oven to 350 degrees.
  • Lightly butter shallow 6-cup casserole. Heat 2 cups broth in medium saucepan to boiling. Stir remaining broth and the cornmeal together until smooth, then gradually stir into boiling broth. Cook, stirring constantly, over medium heat until polenta cleans side of pan, about 10 minutes.

  • Heat oil and butter in large heavy skillet over medium heat. When foam subsides, add shiitakes and saute, turning occasionally, until evenly browned, about 5 minutes. Add oyster and white mushrooms; saute, stirring constantly, until lightly browned, about 3 minutes. Sprinkle with salt and pepper. Add ham and garlic mixture. Cook, stirring constnatly, about 1 minute. Sprinkle with lemon juice and stir.
  • Serve polenta with mushrooms.
