Steps:
- Heat the olive oil in a large skillet over medium heat. Add the onions and bell peppers and saute until softened, about 10 minutes. Add the beef, breaking it up with a wooden spoon, and cook until browned, 3 to 5 minutes. Add the tomatoes, beans, tomato paste, vinegar, brown sugar, and some salt and pepper, and cook until slightly thickened, 10 to 15 minutes.
- Serve warm on the hamburger buns.
ZIPPY THREE-BEAN BAKE
I've come across many recipes for baked beans through the years, but none have the right amount of "kick." I created this recipe from several different ideas I've gathered over time. It's my husband's favorite.

- In a large skillet, partially cook the bacon. Remove with a slotted spoon to paper towels. Drain, reserving 1 tablespoon drippings. In the drippings, saute onion and garlic until tender. In a large bowl, combine the beans, onion mixture and bacon. Stir in the brown sugar, ketchup, mustard, chili powder and pepper. , Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 50-60 minutes or until bubbly.

We like a buffet with all the family here. We serve a variety of salads. This is also great for summer picnics and cookouts. Keeps well, and serves a lot of people.

THREE BEAN POTLUCK CASSEROLE
This a great dish for a crowd--it can be doubled or tripled. Ingredients can be kept on hand and preparation is simple and fast! Also can be made in slow cooker.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, break into medium pieces and set aside. In same skillet, brown beef and onion. Drain fat.
- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon/beef mixture in a large bowl and stir in the ketchup, sugar, vinegar, mustard, baked beans, kidney beans (with liquid) and butter beans (with liquid). Mix well.
- Spoon casserole mixture into a 9x13 inch baking dish and bake in the preheated oven for 1 hour, uncovered.

This is based on the original Bisquick Sloppy Joe Bake that you could get in the little yellow cookbook they sent out via postal mail. I looked for it but I couldn't find it so I dug out my copy from my personal cookbook. See my other recipe for baking mix if you do not want to use Bisquick.

Steps:
- Heat oven to 400°F Caramelize onions in skillet with butter on medium-low until golden and translucent (not brown), adding a pinch of white sugar about halfway through. Remove from heat, pour into ungreased 13x9x2 casserole dish.
- Add beef to skillet, cook until brown, drain and rinse meat, add to casserole dish and mix well with onions, ketchup, brown sugar, mustard powder, and tomato sauce.
- In a medium bowl, stir baking mix, milk and eggs with fork until just blended (do not over mix). See my other recipe for baking mix if you don't want to use Bisquick.
- Carefully pour topping over beef -- VERY SLOWLY -- so it stays on top. Sprinkle with sesame seeds and paprika for garnish.
- Bake 20-25 minutes or until light golden brown. Cut into squares and serve. Freezes and reheats beautifully.

- Brown and break up the beef in a large skillet. Add sauce to taste. Continue cooking until meat has no pink color.
- Drain grease, return meat to skillet, and then add the ketchup. Simmer for 15 minutes. Add a little water, if needed, till the mixture is moist but, not soupy.
- Serve on hamburger buns (or on bread as a sandwich). You can also sprinkle a little chopped raw onion over the top, if desired.

HERBY THREE-BEAN SALAD
Ready for picnics and potlucks, this zippy take on a classically American three-bean salad features crunchy green beans, creamy chickpeas and cannellini beans (and is vegan, too). The marinated vegetables (fennel, celery and onions) add texture and a vinegary kick, while a mix of herbs lend complexity and freshness. Feel free to use whatever combination of canned beans you like; kidney beans are classic, black beans velvety, black-eyed peas earthy. You can prepare this salad up to four hours ahead and keep it at room temperature, or you can make it the day before and refrigerate it. Toss well and add more salt and vinegar, if needed, just before serving.

- In a dry medium saucepan (one large enough to hold the green beans in Step 4), toast coriander seeds over medium heat, stirring frequently, until fragrant, 2 minutes. Transfer to a small bowl to cool. Once the seeds are cool enough to handle, use a mortar and pestle to crack them, or place them on a cutting board and crack with the flat side of a chef's knife. Set aside.
- Fill the same saucepan you used for the coriander with salted water and bring to a boil.
- While waiting for the water to boil, combine 1/4 cup vinegar, thyme, 1/2 teaspoon salt and 1/4 teaspoon black pepper in large mixing bowl. Slowly whisk in olive oil. Add onion along with fennel or celery, or both, and toss. Set aside to marinate for at least 10 minutes while preparing the rest of the salad.
- To the boiling water, add the green beans and blanch for 2 to 3 minutes, until they turn bright green and are crisp-tender. Immediately drain beans in a colander, then run cold tap water over them to stop the cooking. Once cool, pat them dry.
- Add the blanched green beans, chickpeas, cannellini beans, herbs and toasted coriander seeds to the marinated onions. Season with remaining salt and pepper, and gently toss to evenly combine. Taste and add more salt and vinegar if needed. (Keep in mind that you'll also be adding flaky salt to finish.) Drizzle with olive oil and flaky sea salt, and serve.
SMOKY WHITE BEAN AND BEEF SLOPPY JOES
This update on the kid-friendly classic uses half the meat as a traditional sloppy Joe recipe, but retains the qualities that everyone loves: a tart-sweet savoriness and a quick cooking time. You can substitute ground pork, turkey, lamb or plant-based ground meat for the beef; the key is to use a protein that's not too lean. A little fat helps carry the flavor of the meat through the entire dish. (If you use plant-based meat or you only have lean meat on hand, add another tablespoon of olive oil or your preferred fat.) The addition of adobo sauce from a can of chipotles imparts smoke, with just a hint of heat. (If you'd like a spicier version, by all means, chop up one or two of the chipotles and add them.) The leftover chipotles keep for at least two weeks in the fridge or indefinitely in the freezer, and they are a welcome addition to many dishes, like chicken tacos or chili.

- Warm the oil in a large (12-inch) skillet over high heat. Add the onion, season with 1 teaspoon salt, and cook, stirring often, until softened, about 5 minutes.
- Stir in the bell pepper, then spread out the vegetable mixture and let it cook undisturbed for about 1 minute. Stir well and repeat, letting the vegetables cook undisturbed for another minute or so at a time. You want the onions and peppers to get softened, seared and browned in spots, about 5 minutes total.
- Push the vegetables to the sides of the pan, making an empty spot in the middle of the pan, and add the ground beef. Season the beef with a pinch of salt, and smash it flat with a spatula, letting it cook undisturbed for 1 minute until brown underneath. Break up the beef with the spatula and cook 1 to 2 more minutes, until completely browned with no visible pink spots.
- Combine the vegetables and beef, then add the sugar and tomato paste, and cook for 1 minute to toast the tomato paste. Add the garlic powder and cumin, then the tomato purée, adobo sauce and vinegar. Stir in the beans. Reduce the heat to medium and let simmer to thicken slightly, about 3 minutes.
- Meanwhile, toast the buns.
- With a fork, roughly smash some of the beans to thicken the mixture. Taste and add more salt if necessary. Serve on toasted buns, topped with tomatoes and pickles.
