Steps:
- Place the thyme sprigs into a teacup. Pour about 1 1/2 cup boiling water, cover, and let it steep for about 5 minutes. Remove the sprigs before drinking.
- If you have a tea ball infuser, chop the thyme sprigs. Place them into the tea ball and put the ball into a teacup. Pour boiling water over it, cover, and let it steep for about 5 minutes.

- Bring water to a boil. Steep thyme and the coriander and fennel seeds for 10 minutes. Strain through a fine sieve. Serve warm or chilled. Strained tea can be refrigerated up to 1 day.

- In a pitcher, add the blueberries, thyme, lemon zest and lemon juice. Muddle until the blueberries are mashed and everything smells like lemon and thyme. Add the cold brew bags and 6 cups water. Rest in the refrigerator for at least 4 hours, stirring every hour.
- Strain the tea through a sieve lined with a wet coffee filter or wet paper towels. Sweeten to taste and serve over ice.
