BEST EVER LAYERED MEXICAN DIP
This is the quickest, easiest, best tasting Mexican dip ever! It's great to serve at parties. I always make two!

- In a clear pie pan, or similar dish, spread a layer of bean dip. Top the bean dip with a layer of guacamole. Allow the layers to thicken in the refrigerator for approximately 20 minutes.
- In a mixing bowl, while the bean dip and guacamole chill, combine the sour cream and taco seasoning. When the chilled mixture is sufficiently thickened, spread a layer of the sour cream mixture over the layer of guacamole. Top the sour cream layer with the grated cheese. Garnish the layers with the jalapenos and tomatoes.

- Spread refried beans in the bottom of a (1-quart) shallow edged serving dish (you can use a transparent dish if you'd like). Sprinkle the seasoning packet over the beans. Layer the diced tomatoes over the beans, the sour cream over the tomatoes, and the guacamole over the sour cream. Sprinkle the entire layered dip with cheddar cheese, followed by green onion and finishing it off with a layer of black olives. Cover and refrigerate until ready to serve.

FANTASTIC MEXICAN DIP
This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.

- Crumble ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, mix in the taco sauce and set aside.

EASY MEXICAN DIP
This dip is always a hit at parties. The kids like it too! It is a layered dip with tomatoes, lettuce, mexican flavoured sour cream and cheese. You can add a layer of refried beans down first if desired. Serve with corn chips. For a gluten free dip ensure the seasoning mix is gluten free or you can make your own using "Recipe#96014". If you like some extra heat use some cayenne pepper with the taco seasoning mix

- Mix the sour cream and the taco seasoning mix together in a small mixing bowl.
- Pour the cream into a shallow serving dish.
- Mash the avocado with a little lemon juice and layer it gentley over the sour cream layer.
- Top with some shredded lettuce, chopped tomatoes and grated cheese. The measurements given were estimates as I just make the dish to taste. Just use a light layer of the toppings.
- As a variation you can use a layer of mashed refreid beans spread over the dish before the layer of seasoned sour cream.
- refrigerate until required and serve with plenty of corn chips.

- add green chiles to taste.
- add hot sauce to taste.
- mix in cheddar til melted.
- stir in sour cream and serve with tortilla chips.
- if you're really energetic and want a finger food, you can use"Tostitos Scoops" and fill each one then top with additional grated cheese and bake at 300 for about 10 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Coat a 9 inch pie plate with vegetable oil spray.
- Press cream cheese evenly onto the bottom of the pie plate.
- In a large skillet, brown the hamburger. Drain excess fat. Mix in the taco seasoning and water. Cook and stir 2 to 4 minutes. Remove the skillet from the heat before mixing in salsa and jalapenos. Pour the beef mixture over the cream cheese in the pie plate. Sprinkle the Mexican-style cheese over the entire dish.
- Bake at 350 degrees F (175 degrees C) until the cheese has melted.

This is a Mexican cookie recipe that is often made for wedding, sweet 15's and birthday parties. Not at all low-fat. It makes between 5 to 8 dozen depending on the size of the cookie. Lard is what gives it that original flavor!!

- First make tea. Use 1 cup of water and 1 tbsp of Anise seed. Let it cool and set aside.
- Second get 1 tbsp of Anise seeds and crush in a mortar, set aside.
- Third make cinnamon sugar mix to dip hot cookies in, set aside.
- You are going to need 2 large bowls.
- In a large bowl, mix flour, salt and baking powder, set aside.
- In another large bowl, mix sugar, lard, crushed Anise seeds, and Anise tea until smooth. (may not need all of the tea, just eyeball it).
- Add flour mix, one cup at a time. Dough should be soft.
- SUGGESTION: Let dough rest for couple of hours or overnight. The Anise seeds will create a wonderful flavor!
- Lightly flour rolling surface. Roll out dough about 1/4 inch thickness. Use a heart shape cookie cutter or any small cookie cutter you like.
- Preheat oven to 400. Bake in an ungreased cookie sheet or stone for about 10 minutes or until edges are light brown.
- Remove from cookie sheet, let cookies cool about 2 minutes then roll warm cookie in cinnamon-sugar mix. (careful not to break cookie).
- *lard is recommended but you can use Mrs. Tucker's shortening, it works just as well. DO NOT USE OIL.
