ALFREDO SHRIMP TILAPIA
This is my version of Ruby Tuesday's New Orleans Tilapia. Tilapia fillets are baked then topped with alfredo sauce, sauteed red peppers and garlic cooked shrimp. I'm not very good at copycatting recipes, but we had this last night and it was mighty fine.

Steps:
- Preheat oven to 425*.
- Wash and dry tilapia filets, spread with olive oil and creole seasoning, to your taste.
- Place in well oiled baking pan, bake for 8-10 minutes, until just white.
- While fish is baking, saute slivers of red pepper in 1 tbs butter,until cooked, about 5 minutes.
- Warm alfredo in a small saucepan.
- In a frypan, melt 3 tbs butter, add minced garlic and cleaned, prepared shrimp, saute for about 5 minutes.
- When fish is ready, remove from pan from oven.
- Carefully remove fillets, 4 per plate.
- Place one quarter of the red pepper slivers and one quarter of the cooked shrimp on top of fillets.
- Top with 1/4 cup of alfredo, sprinkle of grated cheese and a dusting of more creole seasoning.
- If you like, you can put this under the broiler for about a minute.

- Lay fish in a single layer on a broiling pan and broil 6 minutes on each side. Cover with Alfredo sauce and return to the oven reducing the heat to 400. Bake 6-8 minutes each side and serve on it's own or over rice or pasta.
GARLIC ALFREDO TILAPIA
My version of Ruby Tuesday's New Orleans Seafood, minus the shrimp. I merged a few different recipes and came up with this. It comes pretty close! Three fillets are usually enough for my husband, my toddler, and myself. I serve this with rice and steamed broccoli, to really feel like Ruby Tuesday's recipe!

Steps:
- Preheat an oven to 425 degrees F (220 degrees C).
- Brush the tilapia fillets with oil on both sides, season with Creole seasoning to taste, then place into a 9x13-inch baking dish.
- Bake in the preheated oven until the flesh is no longer translucent, and the fish flakes easily with a fork, about 10 minutes.
- Meanwhile, melt the butter in a small saucepan over medium heat. Stir in the garlic, and cook until the garlic has softened and the aroma has mellowed, about 2 minutes. Stir in the Alfredo sauce and bring to a simmer. Reduce the heat to low, and keep warm until the fish is ready. Pour the sauce over the fish to serve. Sprinkle with additional Creole seasoning if desired.

TILAPIA WITH CREAMY SAUCE

- Preheat the oven to 375 degrees F (175 degrees C).
- Grease a baking sheet with cooking spray. Place the tilapia fillets on the sheet, and coat them lightly with cooking spray. Spoon the melted margarine over each fillet, then drizzle with 2 tablespoons of lemon juice. Season with lemon pepper and 2 tablespoons of dill.
- Bake for 15 minutes in the preheated oven, or until the fish is opaque and flakes easily.
- While the fish is baking, combine the cream cheese, 5 tablespoons of lemon juice and 2 tablespoons of dill in a small bowl. Heat in the microwave for 1 minute and 10 seconds, then stir to blend.
- Place fillets onto serving plates, and spoon sauce around them in a decorative fashion.

- Saute shrimp in a skillet with butter and minced garlic.
- Add Alfredo sauce to the shrimp and reduce heat to simmer.
- Heat up grill to 375 degrees.
- Season fillets on both sides.
- After grill is hot cook fish for 5-7 minutes,turn over once.
- Pour sauce over fish and garnish with parsley.

- To make Tilapia Crusting Mixture:
- Using a spoon, thoroughly mix all ingredients specified for crusting in a large bowl.
- Cover and refrigerate until ready to use.
- Italian Vegetables:
- In a large bowl, combine all vegetables and other ingredients specified for vege mixture and mix thoroughly.
- Place onto a baking sheet, forming a single layer. Set aside until ready for baking with tilapia.
- Assembling Parmesan Crusted Tilapia:
- Preheat oven to 450 degrees F.
- Place Tilapia fillets in a non-stick, shallow, baking pan.
- Pour 3 tablespoons of Alfredo sauce onto each tilapia fillet. Use bottom of spoon to evenly coat top of fish.
- Sprinkle 1/3 cup of prepared tilapia crusting mixture onto each piece and firmly pat breading evenly over Alfredo sauce. Place pan of tilapia on top rack and at the same time, place baking sheet with vegetables on the center rack, in the oven. After approximately 15 minutes, or when the internal temperature of fish reaches 150 degrees F, remove fish from oven and transfer onto a large platter.
- The vegetables should bake for an additional five minutes, or until tender, and remove from oven.
- Toss the vegetables with angel hair pasta (and extra Alfredo sauce if you like)and place around fish.
- Garnish with lemon wedges and serve immediately.
