- Combine the sugar and 1/4 cup water in a small saucepan and bring to a boil, stirring to dissolve the sugar. Remove from the heat and let cool to room temperature.
- Scald a pint jar with a little boiling water; just swirl and dump. Pack the cherries and orange peel into the jar, leaving 1 inch of headroom at the top.
- Stir together the cherry liqueur, almond extract and 2 1/2 ounces of the sugar syrup in a glass (save the remaining sugar syrup for sweetening drinks). Pour the mixture over the cherries. If needed, top off with cherry liqueur to cover. Seal the jar and refrigerate for a minimum of 3 days.

- Wash the cherries and remove the pits, leaving the cherries whole. Place them in a 1-quart sterilized jar.
- Add the sugar, salt and 1/2 cup water to a small saucepan and cook over medium heat until the sugar dissolves completely, about 8 minutes. Turn off the heat. Stir in the maraschino liqueur, almond extract and lemon juice.
- Pour the syrup over the cherries and stir to coat. Cover the jar with a lid and let cool completely before refrigerating. Keep refrigerated, gently shaking daily to redistribute fruit and syrup, 1 week before using.

- Pat cherries dry with paper towels and set aside. In a large bowl, combine butter, corn syrup, unsweetened chocolate and cream. Stir in confectioners' sugar., Knead until smooth. Roll into 18 balls; flatten each into a 2-in. circle. Wrap each circle around a cherry and lightly roll in hands. Place cherries, stem side up, in a shallow waxed paper-lined container. Cover and freeze at least 2 hours., The day before serving, remove the cherries from freezer. In a microwave, melt white baking chips and 1-1/2 teaspoons shortening; stir until smooth., Holding onto the stem, dip each cherry into white baking chips, allowing excess to drip off. Steps:
- Remove pits from cherries.
- Combine 8 cups water and ascorbic acid.
- Stir until crystals are dissolved.
- Add cherries to the solution.
- Don't allow the fruit to remain more than 20 minutes.
- Rinse fruit; drain well.
- Combine 1 1/2 cup water and sugar.
- Bring to a boil.
- Stir in food coloring and add the cherries.
- Reduce heat; simmer for 5 minutes.
- Cool completely, allowing cherries to soak 24 hours.
- Next day, bring to a boil and then stir in almond extract.
- Pack hot cherries into hot jars leaving 1/2 inch head space.
- Shake jars to get firm pack.
- Bring syrup to a boil and ladle hot syrup into jars.
- Process in water bath for 15 minutes for 1/2 pint jars.

- Brine cherries by bringing 6 cups of water to a boil and adding 3 tablespoons of sea salt; use a salt with no additives to ensure glossy-looking fruit (table salt can have all kinds of things in it). Remove brine from heat. Halve and pit the cherries, adding them as you go to the still-warm liquid, then let the cherries sit in liquid overnight, at least, in the fridge.
- Once the cherries are brined, bring the sugar, lime juice, and 3 cups of water to a simmer in a saucepan. Add the mashed cherries for a deeper, natural color (however, the cherries look pretty cool and slightly alien without it). Let this mixture reduce by a third, then cool. Drain the cherries and rinse them of brine. In a large, airtight jar, add the sugar mixture and the drained cherries. Top with at least a cup of Maraska maraschino liqueur, available at many downtown liquor stores, or substitute a spirit like bourbon or brandy. Because the cherries are preserved in alcohol, a snap-shut glass jar with a rubber gasket works just fine. They will easily keep in your refrigerator for a few months.
