- Arrange 36 wafers on bottom and up side of 9-inch pie plate. Drizzle with 2 Tbsp. coffee.
- Beat cream cheese in large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mix; beat 1 min. Gently stir in COOL WHIP.
- Layer half each of the pudding mixture and grated chocolate in crust; cover with remaining wafers. Drizzle with remaining coffee. Repeat layers of pudding mixture and chocolate. Refrigerate 3 hours.

- Preheat oven to 350°F. Arrange ladyfingers on bottom and up side of 9-inch pie plate, cutting as necessary for ladyfingers to evenly line pie plate. Brush ladyfingers with 1/4 cup of the coffee.
- Beat cream cheese and sugar in large bowl with electric mixer set on medium speed until well blended. Add eggs and remaining 1/4 cup coffee; mix until well blended. Pour into prepared ladyfinger crust.
- Bake 35 to 40 minutes or until center is almost set. Cool completely on wire rack. Refrigerate several hours or overnight. Store leftover pie in refrigerator.

- Preheat oven to 350 degrees F (175 degrees C). Place a pan of water on the bottom of the oven.
- Crush the package of ladyfingers to fine crumbs. Mix the melted butter into the crumbs. Moisten with 2 tablespoons of the coffee liqueur. Press into an 8-inch springform pan.
- In a large bowl, mix cream cheese, mascarpone, and sugar until very smooth. Add 2 tablespoons coffee liqueur, and mix. Add the eggs and the flour; mix slowly just until smooth. Pour batter over crust in the springform pan.
- Place pan on middle rack of oven. Bake until just set, 40 to 45 minutes. Open oven door, and turn off the heat. Leave cake to cool in oven for 20 minutes. Remove from oven, and let it finish cooling, about 30 minutes. Refrigerate for at least 3 hours, or overnight.
- Grate semisweet chocolate over the top right before serving.

- Preheat oven to 325 degrees F (165 degrees C). Line a 9x13-inch pan with aluminum foil, making sure to cover the sides and leaving several inches of aluminum foil on each end.
- Mix graham crackers and butter in a bowl until crackers are moist; pat down into the prepared pan.
- Bake in preheated oven until firm, about 12 minutes. Set aside to cool.
- Beat cream cheese in a bowl with an electric mixer until fluffy. Add sweetened condensed milk; continue beating until incorporated. Blend sour cream and lemon juice into the cream cheese mixture. Chill in refrigerator for 20 minutes.

- Dip the ladyfingers in coffee.
- In two spring form pans lined with parchment paper, layer the coffee-dipped lady fingers in a single layer.
- Freeze until the ladyfingers are frozen.
- In a bowl, add the cream cheese, mascarpone cheese, and vanilla extract. Stir to combine.
- Add the milk, sugar, and gelatin to a bowl and whisk until the gelatin has dissolved.
- Pour the milk mixture through a sieve into the bowl of cream cheese.
- Pour 1 cup (290 g) of cheesecake batter into a springform pan. Refrigerate until firm, about 2 hours
- Add one layer of frozen ladyfingers on top of the refrigerated cheesecake layer.
- Add another cup (290 g) of cheesecake batter on top. Refrigerate for two hours, and repeat with remaining batter and ladyfinger layer.

- Heat oven to 350°F. Line 13x9-inch pan with foil; spray with cooking spray. In small bowl, mix crushed cookies and melted butter with fork. Press mixture in bottom of pan. Refrigerate while continuing with recipe.

- Preheat the oven to 325 degrees F. Lightly spray a 9-inch springform pan with nonstick cooking spray and wrap the bottom in aluminum foil.
- Combine the espresso powder and rum in a medium heat-safe bowl; stir in the boiling water until the espresso is dissolved.
- One at a time, dip 20 of the ladyfingers quickly into the espresso mixture. Line the bottom of the prepared pan with them, pressing them down firmly to fit as they soften. Sprinkle with the cocoa powder; set aside.
- Add the ricotta, mascarpone and sugar to the bowl of a food processor and pulse until just combined. Add the eggs one at a time, pulsing after each addition to combine; do not overmix.
- Pour the mixture into the pan over the ladyfingers and place the pan on a baking sheet. Bake until the cheesecake is golden and puffed around the edges, 1 hour and 15 minutes to 1 hour 30 minutes (the edges should be set and the center slightly jiggly). Let cool to room temperature.
- Unmold the cheesecake from the pan and dust with cocoa. Spread some mascarpone around the sides with an offset spatula. Cut the remaining ladyfingers in half and press them into the sides of the cake, curved-end up.

- Beat cream cheese and powdered sugar in large bowl with electric mixer on medium speed until smooth. Beat in rum on low speed; set aside.
- Beat whipping cream in chilled small bowl on high speed until stiff peaks form. Fold into cream cheese mixture.

- Preheat oven to 350°F Place a pan or baking dish filled with about an inch of water on the bottom of oven rack.
- Using a food processor or blender, process the package of ladyfingers to fine crumbs.
- In a small bowl, melt the butter, add 2 T. of the coffee flavored liqueur or espresso and add the crumbs. Mix to moisten the crumbs. Press the crumb mixture into an 8 or 9 inch springform pan.
- In a large bowl, mix cream cheese, mascarpone cheese, and sugar until very smooth. Add 2 tablespoons coffee flavored liqueur or espresso, and mix. Add the eggs and the flour and mix on slow speed until just smooth. The consistency of the mascarpone can vary sometimes making your batter to thick -- if this is the case add about a teaspoon to a tablespoon of cream. Pour batter into crust and place on the middle rack of the oven.
- Bake at 350°F for 45 to 60 minutes, or until just set.
- Let cool by opening the oven door with the heat off for about 20 minutes. Let the cake continue to cool and then refrigerate for at least 3 hours, or overnight, before serving.
- Enjoy with shaved chocolate or cocoa powder on top, it also helps to cover the mistake if the top cracks during baking :).

- You can do this in a food processor or by hand. I did it the easy way, in the food processor! First, in a small bowl whisk together the cream, egg, and vanilla until combined, set aside. In the bowl of the food processor add the flour, sugar, and salt. Pulse a few times to combine. Add the cubed butter 1/3 at a time, pulse between additions so it doesn't all stick together. Pulse a few times until the butter chunks are about pea-sized. Scrape sides and bottom as needed to ensure no extra large butter pieces. Slowly stream in the cream mixture and pulse until a ball forms.
- While the crust is cooling, make the filling by placing the mascarpone into a medium-sized bowl. Using a hand mixer whip on high for 1 minute until smooth. About 1 tablespoon at a time, add in the heavy cream and whip until smooth. Add the sugar, vanilla, and coffee extract and whip until smooth one more minute.
- In a large bowl, add the heavy cream, with a hand mixer whip on high until soft peaks are formed. Add the powdered sugar and cornstarch a little at a time, whip between additions. Add the vanilla and whip until medium to stiff peaks form, do not overmix or you will have butter.
- Mix together the Marsala wine and 1 teaspoon coffee extract in a shallow bowl. Place half of the mascarpone filling to the bottom of the pie crust and smooth out. Break the ladyfingers in half and dip the bottom into the Marsala mixture. Place on top of the filling, I placed them in a circle around the outside with one in the middle. With the remaining Marsala mixture, brush it on top of each cookie so it is all absorbed. Cover cookies with the remaining mascarpone filling. Place in the fridge for two hours to set.
