POMEGRANATE SPRITZER RECIPE
This Pomegranate Spritzer is the perfect holiday mocktail. Warm spice-infused pomegranate juice is topped with sparkling water. See how!

Steps:
- Get the sparkling water into the fridge to chill.
- In a small saucepan, combine the pomegranate juice, 4 slices orange slices, 2 cinnamon sticks, the cloves, and allspice berries. Bring to a boil, then reduce to a low simmer for about 30 minutes. Turn off the heat and use a slotted spoon to remove the orange slices and spices.
- Chill the juice in the refrigerator until ready to use. Be sure it's cold or else it'll knock the bubbles out of the sparkling water.
- To serve, pour ¼ cup (2 oz) of the mulled pomegranate juice into a glass. (I use stemless wine glasses but use what you have on hand. You can even chill the glasses for an extra-refreshing spritzer.) Then top with 1 cup (8 oz) sparkling water immediately before serving. Garnish with a cinnamon stick, slice of orange, and pomegranate arils.

- In a large pitcher, combine juice, sparkling water, and fresh lime juice.
- Add honey and stir well.
- Slice the remaining 1 1/2 limes into slices. Reserve a few lime slices for garnish.
- Add lime slices & several sprigs of fresh mint to pitcher. Stir one more time.
- Refrigerate until ready to serve.
- Serve over ice. Garnish with lime slices, pomegranate seeds and/or fresh mint.
TOAST THE HOLIDAYS WITH A POMEGRANATE SPRITZER
This is a wonderfully festive beverage to open a dinner party: Sweet-tart pomegranate juice is balanced by bitters and spiked with vodka and fizzy rosé. Find pomegranate arils in the refrigerated area of the supermarket produce section; they'll save you at least 10 minutes because you won't need to pull the arils from a whole pomegranate.

- Combine pomegranate juice and sugar in an 8-cup microwavable measuring cup. Microwave at high until warmed, about 2 minutes; stir until sugar dissolves. Stir in vodka, lime juice, and bitters; chill 20 minutes. Gently stir in rosé. Serve in Champagne glasses; top each with 4 to 5 pomegranate arils.

Steps:
- Make the pomegranate molasses: In a small saucepan, stir together the pomegranate juice, sugar, and lemon juice. Bring to a simmer over medium heat, then reduce the heat to low and cook for 20-30 minutes, stirring occasionally, until syrupy. Be careful not to burn the syrup. Remove the pot from the heat and let the pomegranate molasses cool completely before using. Any leftovers will keep in an airtight container in the refrigerator for up to 2 weeks.
- Make the cocktail: Add a few tablespoons of sugar to a small plate. Dip the rim of a champagne glass in the pomegranate molasses, then in the sugar to coat.
- Add ½ tablespoon of the pomegranate molasses to the bottom of the glass, then pour in the lemon juice and pomegranate juice. Fill the rest of the way with sparkling wine.
- Float the pomegranate seeds on the top of the cocktail and garnish with the rosemary sprig.
- Serve immediately.
- Enjoy!
