GOAT CHEESE TOASTS

36 slices (1/2-inch thick) baguette bread
3 tablespoons olive oil
8 ounces soft fresh goat cheese
4 ounces cream cheese
2 teaspoons finely chopped fresh Italian parsley leaves
2 teaspoons finely chopped fresh thyme leaves
2 teaspoons finely grated lemon peel
Salt and coarsely ground multi-colored or black peppercorns
1/2 cup pitted Sicilian green olives or kalamata olives, finely chopped
2 tablespoons thinly sliced chives

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy large baking sheets. Brush olive oil over the bread slices. Bake until the crostini are pale golden and crisp, about 15 minutes.
  • Blend the goat cheese and cream cheese in a food processor until smooth and creamy. Add the parsley, thyme, and lemon peel. Using the on/off button, pulse just to blend. Season with salt and pepper, to taste. Spread the cheese mixture over the crostini. Sprinkle with the olives, chives, and more pepper. Arrange the toasts on a platter and serve.
  • Do-Ahead Tip: The crostini and cheese mixture can each be prepared 2 days ahead. Store the crostini in an airtight container at room temperature. Cover and refrigerate the cheese mixture. Let the cheese mixture stand at room temperature for 1 hour to soften slightly before spreading over the crostini.

Broiled Goat Cheese Toasts With Marinated Greens image

This is a simple appetizer that's a hit every time I serve it, due in large part to the vast appeal of warm cheesy things.

For the marinated greens:
2 bunches (about 1 ½ pounds) leafy greens: Swiss chard, kale, mature spinach, beet greens, or a combination of any of the above, washed
2 tablespoons olive oil, divided
1 clove garlic, minced
Pinch red pepper flakes, or to taste
Salt
Fresh lemon juice
For the toasts:
12 slices of baguette about ¾ inch thick, or other bread cut into 10 bite-size pieces
Olive oil
½ cup soft goat cheese
1 cup Marinated Greens, at room temperature
Zest of 1 lemon
Flaky salt
Freshly ground black pepper

Steps:

  • Marinated greens:
  • Trim off and discard the tough stems from the greens. Heat 1 tablespoon of the olive oil in a wide skillet or saucepan over medium-low heat. Add the garlic and red pepper flakes and stir for about 1 minute, until fragrant. Pile in the greens, in batches if necessary, and add a splash of water (you can also cover with a lid to compress them). Add a big pinch of salt and gently cook, stirring with tongs, until wilted and tender. Cooking times will vary depending on type of green, so watch and taste as you go. If cooking a combination of different greens, cook each type separately. Add a splash of water to the pan if it dries out.
  • Transfer to a colander to drain and cool until safe to handle. Gently squeeze out excess liquid using your hands or a spatula or wooden spoon, pressing against the side of the colander. Coarsely chop the greens, then transfer them to a medium bowl and toss with the remaining 1 tablespoon olive oil and a few drops of lemon juice. Taste and add more lemon juice, red pepper flakes, or salt as needed. Store in an airtight container in the refrigerator; allow to come to room temperature before serving.
  • Toasts:
  • Preheat the broiler to high.
  • Arrange the toasts on a baking sheet and brush both sides with olive oil. Transfer to the broiler and broil for 2 to 4 minutes, until lightly golden on the top. Flip the toasts. Smear each slice with about 2 teaspoons goat cheese, drizzle with a bit of olive oil, and return to the broiler. Broil, watching carefully, for just a minute or two, to heat through and lightly brown. Transfer to a serving platter and divide the greens on top. Zest the lemon over everything, sprinkle with a bit of flaky salt and black pepper, add a drizzle of olive oil, and serve while the toasts are still warm.

2 garlic cloves, peeled
2 bay leaves, broken into pieces
About 3 ounces goat cheese (in a log)
2 sprigs thyme
2 sprigs rosemary
Extra virgin olive oil as needed

Steps:

  • Place the peppercorns, garlic cloves and bay leaves in a clean, sterilized wide-mouthed jar. Pour in a film of olive oil.
  • Cut the goat cheese into rounds 1/2 inch thick (I get neat rounds using unflavored dental floss to cut through the cheese). Place one round in the jar and drizzle on some olive oil. Stack the remaining rounds, drizzling oil onto each round before topping with the next. Add the thyme and rosemary sprigs to the jar and pour in olive oil to cover the goat cheese rounds completely. Cover the jar and leave at room temperature for several hours, then refrigerate.

This recipe offers a clever shortcut for a notoriously finicky dish, yielding an aromatic, billowy cloud of eggs, cheese and herbs. There are two tricks: First, separate and heat both the egg whites and yolks over a water bath before reuniting them. And second, don't overwhip the whites. Take them to a medium stiff peak - when upturned on a whisk, they should flop over a tiny bit. Serve soufflazy for breakfast, brunch or as a first course at a dinner party, with buttered toast and a salad of bitter greens or arugula.

8 large eggs, separated
6 ounces goat cheese, crumbled (about a heaping cup)
1 teaspoon finely chopped fresh thyme
Salt
Freshly ground black pepper
3 ounces Gruyère, finely grated on a box grater (about 1 heaping cup)

Steps:

  • Adjust an oven rack to the center position. Heat oven to 425 degrees.
  • Grease the bottom and sides of a 9-by-12-inch rimmed baking sheet or 10-inch springform pan. Set aside.
  • Make a water bath: Fill a medium pot with 2 inches of water, and bring to a simmer over medium heat.
  • In a large metal bowl, whisk together the egg yolks, goat cheese, thyme, a pinch of salt and black pepper until the cheese breaks down. Reduce the heat so that the water stops simmering but continues to steam, and set the bowl over the pot. Whisk continuously until the mixture lightens in color and begins to thicken slightly. Use a rubber spatula to scrape the bottom and sides of the bowl every minute or so. The bowl should never get so hot that the eggs cook and begin to stick to the sides. When the mixture is thick, foamy and very warm to the touch (about 6 minutes), remove bowl from heat, and stir in Gruyère. Taste, adjust seasoning with salt as needed and set aside in a warm spot.
  • Combine egg whites and a pinch of salt in another large metal bowl, and set over water bath. Using a clean whisk, whip egg whites over the water until they are very warm to the touch. Alternatively, use an electric hand mixer fitted with whisk attachment set to slow speed to beat whites until they are very warm to the touch. Remove bowl from heat, and continue whipping to silky, medium-stiff peaks, about 4 minutes total by hand or 3 minutes total with electric mixer.
  • Use a rubber spatula to gently add in half the egg whites to the yolk mixture, and fold until combined. Fold in remaining whites, scraping through to the bottom of the bowl to ensure thorough mixing. Pour mixture into prepared baking sheet (or cake pan), and slide carefully onto center oven rack.
  • Bake for 11 to 13 minutes (18 to 21 minutes if using cake pan), refraining from opening the oven door, until the soufflé puffs up, turns golden brown and an inserted wooden skewer comes out mostly (but not entirely) clean. If you jiggle the pan, there should be the slightest hint of wiggle left to the soufflé.
  • Use a serving spoon to scoop onto plates. Serve immediately with buttered toast and green salad, if desired.

1 teaspoons fresh thyme, coarsely chopped
1 teaspoon fresh rosemary, coarsely chopped

10 slices country bread

Steps:

  • Cut the cheese into half-inch slices.
  • Mix the thyme, rosemary, pepper, oil and Cognac together and marinate the cheese slices in the mixture for four hours, or longer if desired.
  • Slice a loaf of country bread, about the diameter of a baguette, into 10 slices. Brush the marinade from the cheese on both sides of the bread and toast.
  • Arrange a slice of cheese on the toast and place in a 300-degree oven, toasting for four to five minutes, until the cheese is hot. Serve hot.

8 ounces fresh goat cheese
12 blades fresh chives
2 sprigs fresh rosemary, leaves stripped from stem

1 crusty roll, sliced thin on an angle
2 ounces fresh goat cheese, 2 buttons
1 tablespoon fresh chopped parsley
3 blades chives
1/2 a sprig of rosemary, stripped

Steps:

  • Arrange sliced baguette or sliced crusty roll rounds on a cookie sheet or broiler pan. Toast under hot broiler until lightly golden on each side. Remove toasts from broiler and arrange on a serving plate. Remove goat cheese log or buttons from packaging and set on cutting board. Chop and combine fresh chives, rosemary and parsley. Add coarse black pepper to the herb mixture. Roll goat cheese in the herbs to coat evenly. Set goat cheese alongside toasts. Using a spreader or butter knife, spread herbed cheese on warm toasts.

10 pounds bittersweet chocolate, tempered
5 pounds white chocolate, tempered
Cocoa butter
Powdered food coloring, as desired

Steps:

  • Make the molds: Place the Elastack molding material in a saucepan over medium heat until melted. Use metal rulers to outline the mold that you would like to make. For my centerpiece, I used drama masks, a phantom mask, a souvenir plate and taxi magnets. Place the rulers on a parchment paper lined sheet pan, and place the item to be molded in the center of that space. Pour the melted Elastack over the item to be molded until it is completely covered. Let this set for about 30 minutes until the Elastack hardens.
  • When the molds are complete, gently remove the molded item. Now you are ready to fill the cavity with either white or dark chocolate. I used white chocolate for the taxi, plate, phantom mask and 1 of the drama masks. I used dark chocolate for the other drama mask. Use a ladle or spoon to fill the mold with chocolate. Once the chocolate starts to harden, about 5 minutes, scrape the edge clean with a paring knife. When the chocolate sets, it shrinks or retracts from the sides of the mold. A clean edge will keep it from sticking and cracking as it shrinks. You can place the mold in the refrigerator for several minutes to help the chocolate to harden. When the chocolate sets, carefully remove the chocolate from the mold by peeling away the molding material. Repeat this process with all of the molds you have made.
  • Make the statue: Use a ladle to fill a mold with white chocolate. When it is full, empty it into the bowl of chocolate. The inside of the mold should be evenly coated with chocolate. Wipe the edge of the mold clean on the side of the bowl and place it upside down on a wire rack placed over a baking sheet. Once the chocolate starts to harden, about 5 minutes, scrape the edge clean with a paring knife. When the chocolate sets, it shrinks or retracts from the sides of the mold. A clean edge will keep it from sticking and cracking as it shrinks. You can place the mold in the refrigerator for several minutes to help the chocolate to harden. Unmold.
  • If you want to paint the statue, mix together a few tablespoons of the cocoa butter with a small amount of powdered food color. It will be easier if you use a yogurt machine to store and warm your paints. Use a paintbrush to apply color where you are inspired to do so. I also used the copper luster dust to give the statue a realistic look.
  • If you want to paint the plate, use a dry paintbrush to apply the copper luster dust to the face of the plate.
  • Make the dark chocolate apple outline: Use a food safe rubber tube that is 6-feet long and 1 1/2-inches in diameter. Position it on a parchment paper lined flat surface. I used heavy cans of fruits and vegetables to shape the tube into the form of an apple. Place the tempered chocolate in a large pastry bag. Use the bag to fill the tube with chocolate. Prop 1 end up so you can see when the tube is full. When the entire tube is full, seal the ends and allow the chocolate to harden. When the chocolate has set completely, carefully use an X-acto knife to cut through the center of the tube. Carefully peel the tubing from the chocolate.
  • Make the apple stem: Use the same technique as described above to make the apple stem. My finished stem is about 12 inches long.
  • I used vegetable oil to glaze my chocolate apple and stem to give it a nice shine. Use any oil and apply it with a pastry brush.
  • Make a base: Use flexible aluminum strips or very large cake ring to form a base. The base I made was 15-inches in diameter. Place it on a parchment paper lined surface. Pour tempered dark chocolate inside the ring to form a 1/2-inch-thick layer. When the chocolate has set, remove the ring and peel off the parchment paper.
  • Make a support pole: Roll a piece of 32-inch long piece of parchment paper into a cone that has a bottom diameter of 21/2 inches and tapers to a point. Tape it closed. This piece will support the mold so make sure it is long enough and thick enough to support the centerpiece you are making. Set the cone on end and fill with dark chocolate. When it is full, invert the cone over the bowl of chocolate allowing the excess chocolate to flow back into the bowl. Spin the cone so the chocolate inside is evenly coated. Let set. When the chocolate has set, repeat this step a few more times. You want the cone to be quite sturdy as the rest of the centerpiece will rest on this cone. Allow the chocolate cone to set until hard. Remove the parchment paper. Use a hot knife to trim the base of the cone so it is flat. Then use the knife to scar the bottom of the cone and the base. You want to make it somewhat textured so it will form a better seal to the base. Use tempered chocolate to glue the pole onto the base. Position it well so you can rest the molded chocolate against it.
  • Make the theatre tickets: Use an offset spatula to spread a 1/4-inch-thick layer of tempered white chocolate over a sheet of acetate. Let the chocolate set slightly. If you are using the silkscreen, it will be easier if you cut the ticket after you have transferred the design to it. Melt the dark chocolate over a double boiler. Hold the silkscreen over the chocolate. Use a plastic scraper with a straight edge. Apply about a teaspoon of chocolate to the scraper and gently pull the chocolate across the design. Carefully lift off the silkscreen. It will dry almost immediately. Use the tip of a hot paring knife to cut the ticket with the centered design. When the chocolate is set, peel off the acetate.
  • Make the signs and logo decorations: Use an offset spatula to spread a 1/4-inch-thick layer of tempered white chocolate over a sheet of acetate. Let the chocolate set slightly. Use a paring knife to cut the shape of the decoration you would like to make. When the chocolate is set, peel off the acetate. If you want to paint the chocolate, mix together a few tablespoons of the cocoa butter with a small amount of powdered food color. It will be easier if you use yogurt machine to store and warm your paints. Use a paintbrush to apply color where you are inspired to do so. I made signs for NYFD and NYPD and logos for The Mets and The New York Yankees.
  • If you use an airbrush, simply place a few drops of color in the receptacle of the airbrush and decorate, as you are inspired.
  • Assemble: Use tempered chocolate and chocolate cold spray to "glue" the molded pieces and decorations onto the centerpiece.

HERBED GOAT CHEESE AND ROASTED PEPPER TOASTS

A more-than-one-bite hors d'oeuvre, these savory toasts make a satisfying snack to serve with drinks or to take on a picnic. They taste best at room temperature or just barely warm. Roasting the peppers can done a day ahead, as can marinating the goat cheese, making this treat very easy to put together.

1 large red or yellow bell pepper
Kosher salt and black pepper
1 (8-ounce) log or 2 (4-ounce) logs soft goat cheese
1/4 cup extra-virgin olive oil
Fresh thyme sprigs
Fresh rosemary sprigs
Red-pepper flakes
1 day-old baguette or ciabatta loaf
1 garlic clove, peeled

Steps:

  • Roast the pepper: Place the bell pepper directly over the open flame of a gas burner, under the broiler or on a hot, glowing charcoal grill. Let the skin of the pepper blacken and blister, using tongs to turn the pepper frequently. When completely blackened, after 5 to 8 minutes, transfer to a plate to cool.
  • Using a paring knife, cut pepper in half lengthwise. Cut away seeds and stem and discard. Scrape away the skin and discard. Do not rinse. It's OK if a few bits of charred skin remain.
  • Cut pepper halves into long strips about 1-inch wide. Season lightly with salt. (The pepper can be prepared up to 24 hours ahead of serving.)
  • Marinate the goat cheese: Slice the goat cheese log into 10 pieces (each about 3/4-inch thick). Place pieces in a single layer on a plate and pour 1/4 cup oil over.
  • Strip leaves from a few thyme sprigs and a rosemary sprig, roughly chop and sprinkle over the cheese. Finish with a bit of freshly ground black pepper, and a small pinch of red-pepper flakes. Cover and set aside. (This can also be done up to 24 hours ahead.)
  • Set oven to 350 degrees. Cut the baguette on a diagonal into 10 slices, each about 1/4-inch thick. (If using ciabatta, cut into similar-size pieces.) Arrange on a baking sheet in a single layer, then place in oven for about 5 minutes, until bread is barely toasted.
  • Remove from oven and carefully give each toast a light swipe with the garlic clove. Lay a strip of roasted pepper across each toast to cover. Place a goat cheese round in the center of each toast. Spoon the remaining olive oil from the plate generously over each piece of cheese and any exposed toast.
  • To finish, return to the oven and bake, uncovered, until the bread is nicely browned and the cheese has gotten a bit of color, 8 to 10 minutes. Let toasts cool a bit, then arrange on a platter and serve. (They taste best at room temperature or just barely warm.) Toasts can be baked up to 1 hour ahead and popped in the oven to reheat slightly.

GOAT CHEESE WITH CARROTS AND BEET HORSERADISH ON TOAST



Goat Cheese with Carrots and Beet Horseradish on Toast image

Make your own cheese log with softened goat cheese mixed with grated carrot and coated in dill. Chill, then serve with prepared beet horseradish and toast or flatbread.

1 medium carrot, grated (about 1/2 cup)
Kosher salt and freshly ground black pepper
1/2 cup chopped dill
1/4 cup jarred beet horseradish
Crostini or flatbread crisps, for serving

Steps:

  • Coarsely crumble the goat cheese. Toss with the grated carrot and season with salt and pepper.
  • Lay out a sheet of plastic wrap and spread the dill into a 12 by 4-inch rectangle in the center. Form the cheese mixture into a log in the center of the dill and roll up tightly, twisting the ends to seal. Refrigerate until firm, about 20 minutes.
  • Unwrap the log and transfer to a platter. Put the beet horseradish in a small bowl on the platter. Serve with the crostini or flatbread crisps.

2 tablespoons extra-virgin olive oil
8 bread rounds cut to the diameter of the cheese rounds, each about half an inch thick

Steps:

  • Preheat the broiler to high.
  • Slice the rounds crosswise into eight pieces of more or less equal thickness.
  • Arrange the slices of cheese in one layer in a shallow dish or plate. Sprinkle with equal amounts of pepper, thyme and oil. Let marinate for at least 15 minutes.
  • Toast the bread on both sides and arrange the rounds on a baking sheet. Arrange one slice of cheese on each bread round. Pour any remaining oil over the cheese.
  • Place under the broiler about one or two minutes or just until piping hot. Serve on hot plates.

  • On a baking sheet broil the bread slices under a preheated broiler about 3 inches from the heat for 1 to 2 minutes on each side, our until they are golden, and brush on side of each toast lightly with the oil. spread the oiled sides evenly with the goat cheese, covering them completely, and sprinkle the cheese with pepper to taste. Return the goat cheese toasts to the broiler and broil them for 1 minute, or until the cheese is melted slightly and glistening. Serve the toasts warm or a room temperature.

1 large log (11 ounces) soft goat cheese
Olive oil, for drizzling
1 jar (6 ounces) best-quality store-bought pesto

Steps:

  • Preheat oven to 425 degrees. Cut baguette into 16 slices (each about 1/2 inch thick). Space slices evenly on a baking sheet. Cut cheese into 16 rounds, placing them atop slices as you work. (If cheese crumbles, press it firmly onto bread.)
  • Drizzle oil over cheese, letting it drip onto crusts. Bake until undersides of bread are golden brown and cheese begins to brown, 10 to 15 minutes. Top each toast with 1/2 teaspoon pesto. Serve warm.

Steps:

  • Preheat oven to 375 degrees F.
  • Arrange the bread slices on a large baking sheet.
  • Brush olive oil over the bread slices.
  • Bake until pale golden and crisp, about 15 minutes.
  • Blend goat cheese and cream cheese in a food processor until smooth and creamy.
