1-1/4 cups crushed vanilla wafers (about 40 wafers)
3/4 cup finely chopped almonds
1/4 cup sugar
1/3 cup butter, melted
FILLING:
4 packages (8 ounces each) cream cheese, softened
1-1/4 cups sugar
4 large eggs, room temperature, lightly beaten
1-1/2 teaspoons almond extract
1 teaspoon vanilla extract
TOPPING:
2 cups sour cream
1/4 cup sugar
1 teaspoon vanilla extract
1/8 cup toasted sliced almonds

Steps:

  • In a bowl, combine the wafer crumbs, almonds and sugar; stir in the butter and mix well. Press into the bottom of a greased 10-in. springform pan; set aside. , In a large bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Stir in extracts. Pour into crust. Place on a baking sheet., Bake at 350° for 50-55 minutes or until center is almost set. Remove from the oven; let stand for 5 minutes (leave oven on). Combine the sour cream, sugar and vanilla. Spoon around edge of cheesecake; carefully spread over filling. Bake 5 minutes longer. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight., Just before serving, sprinkle with almonds and remove sides of pan. Refrigerate leftovers.

1/3 cup sweetened shredded coconut
1/3 cup finely chopped almonds

  • Topping:.
  • In a nonstick skillet melt the butter on low heat. Add coconut and almonds to the butter till is toasted brown, stirring occasionly(This will take up to a hour or two. After this is toasted, set aside to cool off to room temperature.
  • Base:.
  • In a bowl combine cream cheese and condensed milk until creamy. Add Cool Whip and mix.
  • Put it all together:.
  • Put 1/4 of the creamy mixture in each pie shell and spread till level.

1/2 cup sugar
1 cup full-fat Greek yogurt, such as Fage, room temperature

Steps:

  • Special equipment: a 9-inch springform pan
  • Preheat the oven to 350 degrees F.
  • For the crust: Add the chocolate graham crackers and the almonds to a food processor. Process until finely chopped. Add the butter and salt and process to the consistency of wet sand. Press the crust into the bottom of a 9-inch springform pan. Refrigerate until ready to use.

Steps:

  • For the crust: Preheat oven to 350 degrees F.
  • Tightly wrap the outside of a 9-inch diameter springform pan with 2 3/4-inch-high sides with 3 layers of heavy-duty foil. Finely grind the almonds, cracker crumbs, and sugar in a food processor. Add the butter and process until moist crumbs form. Press the almond mixture onto the bottom of the prepared pan (not on the sides of the pan). Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan. ½ cup chopped pecans

1 large egg
4 oz caramel candy
3 tablespoons heavy cream
flaky sea salt, for sprinkling
½ cup chocolate ganache, for drizzling

Steps:

  • Preheat the oven to 300˚F (150˚C). Line a baking sheet with parchment paper.
  • Add the sliced almonds and 3 ounces of the coconut flakes to the prepared baking sheet and toast for 15 minutes, or until golden and fragrant.
  • Increase the oven temperature to 350˚F (180˚C). Line 2 baking sheets with parchment paper.
  • Add the toasted coconut and half of the toasted almonds to a food processor and process until broken down into fine crumbs.
  • Add the flour and salt, and process until combined.
  • In a medium bowl, combine the butter, sugar, and vanilla, and beat with an electric hand mixer until fully combined and the sugar is dissolved.

Steps:

  • For Cake:
  • Preheat oven to 350°F. Butter three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Line bottoms with waxed paper. Butter waxed paper. Combine chocolate, 1 cup water and espresso powder in heavy small saucepan. Stir over low heat until chocolate melts and mixture is smooth. Remove from heat. Cool completely, stirring occasionally.
  • Using electric mixer, beat brown sugar and butter in large bowl until light and fluffy. Add eggs 1 at a time, beating well after each addition. Add chocolate mixture and vanilla and beat until blended. Sift four, baking soda, baking powder and salt into medium bowl. Add dry ingredients to butter mixture alternately with sour cream in 3 additions, beginning with dry ingredients and beating well after each addition.
  • Divide batter equally among prepared pans. Bake cakes until tester inserted into center comes out clean, about 30 minutes. Cool cakes in pans on racks 10 minutes. Using small knife, cut around sides of pans to loosen cakes. Turn cakes out onto racks. Remove waxed paper; cool completely.
  • For filling:
  • Combine sugar and 1/4 cup water in heavy medium saucepan. Stir over low heat until sugar dissolves. Increase heat to high and boil without stirring until syrup turns deep amber, brushing down sides of pan with wet pastry brush and swirling occasionally, about 10 minutes. Remove from heat. Carefully add cream (mixture will bubble vigorously). Place pan over medium low heat and stir until caramel bits melt, about 5 minutes. Stir in coconut and 1 cup almonds. Cool filling until thick enough to spread, stirring occasionally, about 45 minutes.
  • For Frosting:
  • Melt butter and chocolate in heavy small saucepan over low heat, stirring until smooth. Transfer to large bowl. Stir in vanilla. Whisk in 1 cup powdered sugar and 1/4 cup sour cream. Whisk in remaining powdered sugar and sour cream.
  • Place 1 cake layer on platter. Spread half of filling evenly over top, leaving 1/2-inch border. Top with second cake layer. Spread with remaining filling, leaving 1/2-inch boarder. Top with remaining cake layer. Spread frosting over sides and top of cake. Press 2 cups sliced almonds onto sides of cake. Using pastry spatula, swirl frosting on top of cake decoratively.   • Preheat oven to 325ºF if using a silver 9-inch springform pan (or to 300°F if using a dark nonstick 9-inch springform pan). Finely chop 1 cup of the almonds; mix with graham crumbs and butter. Press firmly onto bottom of pan. Bake 8 min; cool completely.
  • Beat cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Add sour cream and liqueur; mix well. Add eggs, one at a time, beating on low speed after each addition just until blended. Pour over crust.

2 cups finely ground graham crackers (from 15 rectangles)
3 cups (10 ounces) finely shredded unsweetened coconut
5 ounces semisweet chocolate, finely chopped
2 ounces milk chocolate, finely chopped
1 cup plus 3 tablespoons granulated sugar
1 stick ( 1/2 cup) unsalted butter, cut into 2-inch pieces, plus more for pan
3 large eggs plus 5 large egg yolks
12 ounces cream cheese, room temperature

Steps:

  • Preheat oven to 350 degrees. Butter a 9-inch square baking pan. Line with parchment paper, leaving a 2-inch overhang on 2 sides. Butter parchment.
  • Stir together graham cracker crumbs and 2 cups coconut.
  • Place chocolates and 3 tablespoons sugar in a heatproof bowl, and set over a pan of simmering water. Heat, stirring, until melted. Add butter, and stir until melted and smooth. Remove from heat, and let cool slightly. Whisk in 1 egg.
  • Stir chocolate mixture into coconut mixture. Press evenly into prepared pan. Bake until set, 10 minutes. Transfer to a wire rack, and let cool in pan.
  • Using a mixer fitted with a whisk attachment, beat cream cheese and remaining cup sugar on high speed until very smooth and fluffy, about 5 minutes. Reduce speed to medium, and add egg yolks and remaining 2 eggs, 1 at a time, until well combined. Scrape sides of bowl. Beat on medium-high speed until completely smooth, about 3 minutes.
  • Pass mixture through a fine-mesh sieve into a bowl, and stir until smooth. Pour over cooled crust. Sprinkle remaining cup coconut evenly over the top.
  • Bake, rotating pan halfway through, until top layer is just set and coconut is golden brown, 40 to 45 minutes. Let cool completely in pan on a wire rack. Refrigerate, loosely covered, overnight.
  • Run a sharp knife around edges of pan, and use parchment to lift out cheesecake. Run a knife under hot water, and dry well. Use it to cut cheesecake into 1-inch squares, wiping knife clean between cuts.

They bake up soft and chewy, into perfect two-bite-size treats. This recipe uses toasted almond flour, which deepens the flavor. A dip in melted bittersweet chocolate gives the financiers a polished look and balances out their sweetness. This recipe makes 12, but easily doubles for a crowd.

  • Heat the oven to 350 degrees. Grease a 12-cup mini-muffin tin.

Picture and recipe are from Southern Living Cookbook 1998 Annual Recipes. This is a scrumdillicious cheesecake recipe. If you are a chocoholic like me, you will love it. It always goes over well when you have company over.

1 1/2 c chocolate wafer cookie crumbs 28 to 30 cookies
3 Tbsp sugar
1/4 c melted butter
4 (8oz) pkg cream cheese, softened
3 large eggs
1 c sugar
1 pkg (14 oz) angel flaked coconut
1 pkg milk chocolate morsels (11.5 oz)
1/2 c slivered almonds, toasted
1 tsp vanilla extract
1/2 c semi-sweet chocolate chips
GARNISH
TOASTED CHOPPED ALMONDS

Steps:

  • 1. Stir together first 3 ingredients; press mixture into bottom of a 10 inch spring form pan.
  • 2. Bake at 350 degrees for 8 minutes, cool
  • 3. Beat cream cheese, eggs and one cup sugar at medium speed with an electric mixer until fluffy. Stir in coconut and next 3 ingredients. Pour into prepared crust and bake at 350 degrees for one hour. Cool on wire rack.
  • 4. Place semi sweet chips in a zip lock bag and submerge in hot water until chips are melted. Snip a hole in the corner of the bag and drizzle chocolate over the top of the cheesecake. Cover and chill for 8 hours..

  • Place your shredded coconut in a skillet over medium-low heat. Cook, stirring frequently, for about 5 minutes until the coconut is a light golden brown. Remove from the skillet and set on a plate to cool. Cool completely before using in the recipe.
  • Wrap the outside of a 9-inch springform pan with aluminum foil. Grease the inside and set aside (see notes). Mix the crust ingredients and press into your prepared pan, going up the sides. Set crust aside while you make the filling.
  • Beat the cream cheese and sugar in a stand mixer fitted with the paddle attachment or using a hand mixer and a large mixing bowl.

  • For crust: Preheat oven to 350°. Combine Oreo crumbs, coconut, sugar, and butter. Press the crumb mixture into the bottom and about an inch up the sides of a 9" springform pan.
  • Filling: Beat cream cheese till smooth. Add sugar and beat till creamy. Lightly beat in the eggs, extracts, and salt till thoroughly combined. Fold in the coconut and almonds.
  • Pour mixture on top of the crust. Turn oven down to 325° and bake for about 75 more minutes or until the outer 2 1/2" is set. Remove from oven and cool completely on a cooling rack.

  • In a food processor, cream the cheese and sugar. Add the remaining ingredients and pulse until just smooth. With a spatula, scrape down the sides a few times. Pour over the crust.
  • In a saucepan, bring the sugar and water to a boil. Cook without stirring until the mixture is golden brown. Off the heat, add the hot cream and the butter. Beware of splattering. Bring to a boil. Simmer over low heat until the caramel is smooth. Let cool for 15 minutes. Pour over the cheesecake. Spread the almonds on the surface of the caramel. Refrigerate for 1 hour before serving.
