TOASTED OAT AND BLACK BEAN SOUP



Toasted Oat and Black Bean Soup image

A hearty and mildly spiced soup that is a meal in itself. If you want it milder, leave out one of the jalepenos, and if you want it spicier, try adding some hot sauce or cayenne pepper. The oats are an unusual addition, but is essential for thickening the soup.

1/2 cup oats
1 teaspoon cumin
1 teaspoon chili powder
1 tablespoon oil
1 onion, chopped
2 stalks celery, chopped
3 garlic cloves, chopped
2 jalapeno peppers, chopped
1 (28 ounce) can diced tomatoes or 4 tomatoes, chopped
3 cups vegetable broth or 3 cups chicken broth
1 (19 ounce) can black beans, drained and rinsed
1/4 cup cilantro, chopped
1 lime

Steps:

  • In a dry frypan, toast the oats, cumin and chili powder over medium-high heat, stirring constantly, until the oats are lightly browned. Set aside.
  • In a pot, heat the oil over medium heat. Cook the onions, celery, jalapeno, and garlic for 2-3 minutes, stirring constantly.
  • Add the tomatoes, oat mixture and broth and bring to a boil. Reduce heat to medum low and simmer for 15 minutes, or until it has thickened sufficiently.
  • Add the black beans, return to a simmer until heated throughout.
  • Garnish with spring of cilantro and squirt of lime juice.

12 inches aluminum foil, depending upon pan size

Steps:

  • Preheat oven to 350 degrees F.
  • Line baking sheet with tin foil, if desired.
  • Spread oats in a shallow layer on a cookie sheet.
  • Bake for 15 to 20 minutes or until lightly browned, stir occasionally.

3 tablespoons olive oil
1 cup oats
5 large tomatoes, halved and sliced
⅓ cup onion, chopped
1 clove garlic, chopped
3 cups water, divided
½ bunch fresh cilantro
2 teaspoons chicken bouillon granules
½ teaspoon salt

Steps:

  • Heat a large deep skillet or Dutch oven over medium-low heat. Pour in the olive oil, and let it heat up. Add the oats; cook and stir until toasted.
  • In a blender or large food processor, combine the tomatoes, onion, garlic, 1 cup of water, and cilantro. Blend until smooth. Pour into the pan with the toasted oats. Stir in the remaining 2 cups of water, and bring to a boil. Mix in the salt and chicken bouillon. Cover, and simmer for 15 minutes. Enjoy hot or warm.

2 tablespoons vegetable oil
1 medium onion, chopped
1 green bell pepper, chopped
1 large carrot, peeled and thinly sliced
3 cloves garlic, minced
2 (15 ounce) cans black beans
1 (14 ounce) can chicken broth
2 cups cubed cooked ham
¼ teaspoon cumin
½ teaspoon salt
ground black pepper to taste
1 cup shredded Cheddar cheese
1 cup sour cream

Steps:

  • Heat the oil in a large pot over medium heat. Stir in the onion, bell pepper, carrot, and garlic, and cook 5 minutes, until tender. Mix in 1 can black beans and chicken broth.
  • In a blender, puree remaining can of beans until smooth. Mix into the pot. Bring soup to a boil. Reduce heat to low. Mix in ham, cumin, salt, and pepper. Simmer 20 minutes. Garnish with Cheddar cheese and sour cream to serve.
