TOASTED OAT MUFFINS WITH APRICOTS, DATES, AND WALNUTS
Toasting oats adds such great flavor to these muffins. I've tried them with chopped fresh apple and raisins too. Feel free to change up the fruits and nuts based on what you have on hand.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Grease a muffin tin or line with paper liners.
- Spread oats on a rimmed baking sheet and place in the preheating oven until toasted and fragrant, 5 to 8 minutes.
- Mix toasted oats, flour, brown sugar, baking powder, baking soda, ginger, cinnamon, salt, and allspice in a large bowl. Add walnuts, apricots, and dates.
- Whisk melted butter, buttermilk, egg, and vanilla extract together in a separate bowl. Pour over the flour mixture and mix briefly until batter is combined. Scoop batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 20 minutes. Cool in the tin for 5 minutes. Transfer to wire racks to cool.

TOASTED OATMEAL WITH WALNUTS AND APRICOTS
Walnuts are excellent sources of unsaturated fat. The nuts have been shown to reduce levels of LDL and increase HDL.

- Preheat oven to 350 degrees. Spread walnuts and oats on 2 rimmed baking sheets. Bake until walnuts are toasted and oats are golden brown, about 10 minutes for walnuts and 12 minutes for oats.
- Bring water to a boil in a saucepan over medium heat. Stir in oats, apricots, cinnamon, and salt. Return to a boil. Reduce heat, partially cover, and simmer, stirring occasionally, until oats are tender and mixture has thickened, about 25 minutes. Meanwhile, chop walnuts.
- Spoon oatmeal into 4 bowls. Sprinkle each serving with some of the walnuts and flaxseed, and drizzle with honey. Serve immediately.
OATMEAL DATE MUFFINS
Adapted from a recipe in Cooking Light. These yummy, filling, healthy muffins are the perfect alternative to cereal. If you don't like dates, any dried fruit will work.

Steps:
- Combine oats and buttermilk and refrigerate for 8 hours.
- Preheat oven to 350.
- Combine flour, buttermilk mixture, brown sugar, canola oil, baking powder, baking soda, salt and eggs in large bowl.
- Beat with a mixer on medium speed until smooth.
- Fold in dates.
- Bake in muffin tins at 350 for 12-15 minutes.
- Cool muffins on wire rack.
OATMEAL WALNUT MUFFINS
This is a very moist muffin. Easy and quick to make. Always gets requests for the recipe. I put walnuts and brown sugar on my morning oatmeal, so I thought 'why not incorporate them into a muffin recipe'?

Steps:
- Preheat oven to 350°F.
- Place paper liners in each of 12 muffin cups.
- Whisk eggs well, then whisk in oil, oatmeal and vanilla.
- In another bowl, combine flour, brown sugar, baking powder and baking soda until there are no more lumps of brown sugar. Add walnuts and toss to coat.
- Add liquid mixture and fold in, just until the dry ingredients are moistened.
- Spoon into muffin cups, filling 3/4 full. An ice cream scoop works well for this. You may have enough batter for a 13th muffin.
- Bake 18 - 20 minutes or until they test done. Allow to cool 10 minutes in the muffin pan, then turn out onto a wire rack to cool completely.
- These freeze well.
APRICOT-OATMEAL MUFFINS
Sweet bits of dried apricots balance the hearty texture of oats in mouth-watering muffins.

- Heat oven to 400°F. Grease bottoms only of 6 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups.
- In medium bowl, mix flour, 1/2 cup oats, the baking powder and salt. In small bowl, mix brown sugar, milk, oil, vanilla and egg with fork or wire whisk until blended. Stir milk mixture into flour mixture just until flour is moistened. Fold in apricots. Divide evenly among muffin cups. Sprinkle each with about 1/2 teaspoon oats.
- Bake 23 to 25 minutes or until toothpick inserted in center comes out clean. Remove from pan to cooling rack. Serve warm or cool.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 12 cup muffin pan, or line with paper muffin cups. Place apricots into a small bowl, and pour the boiling water over them. Let stand for 5 minutes.
- In a medium bowl stir together the flour, sugar, baking soda and salt. In a separate bowl, whisk together the melted butter, oil, buttermilk and egg. Pour the wet ingredients into the dry ingredients, and stir until just blended. It is okay for the batter to have some lumps. Drain water from apricots, and mix them into the batter. Spoon into the prepared muffin cups.
- Bake for 15 minutes in the preheated oven, or until the top springs back when lightly pressed. Cool in the pan over a wire rack.

- Preheat oven to 350 degrees. Stir together ground oats, flour, 1 cup whole oats, baking powder, salt, cinnamon, and allspice in a large bowl; set aside.
- Put brown sugar and butter in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until pale and fluffy, about 5 minutes. Mix in eggs and vanilla, scraping down sides of bowl as needed.Reduce speed to low. Add oat mixture, and mix until just combined. Mix in walnuts and dates.
