SIMPLE TOASTER OVEN HONEY CORNBREAD
Steps:
- For the toaster oven just make sure your controls are set to bake and 400 degrees you don't need to preheat the toaster oven it heats up fast enough but for the oven, version preheat oven to 400 degrees F (200 degrees C). Lightly grease a 5/7 baking dish for the toaster oven or an 11x7 inch baking pan for the oven, set to the side.
- In a medium/large bowl, stir together flour, cornmeal, sugar, salt, and baking powder. Make a well in the center of the dry ingredients. Add the milk, cream, oil, honey, and egg/eggs; stir to combine. Pour batter into prepared baking pan.
- Bake in the toaster oven/preheated oven for 25 to 30 minutes, until a toothpick inserted into the center, comes out clean.
TOASTER OVEN CORN BREAD
I wanted to show that my toaster oven was useful for more than just small warm-ups and toast. I tried a corn bread and I was very pleased with the results. Obviously, this can be done in a full size oven, but It worked well. Oh, and I used my Magic Bullet to make Oat flour. How cool is that?

Steps:
- Put the Oatmeal into a blender or food processor and process until it forms a powder. Add to a bowl with the cornmeal, salt, sugar, and baking powder and stir to blend. Add the soy milk, egg, and applesauce and stir until blended. Add it chili powder if desired.
- Pour batter into a 6 x 8 that fits into your toaster oven. Set to bake at 400ºF for 20 minutes.

Steps:
- Preheat the oven to 350°F
- Oil a 9-by-13-inch metal baking pan.
- In a medium skillet, toast the cornmeal over moderately high heat, stirring constantly, until lightly browned, about 5 minutes.
- Transfer to a large bowl and whisk in the flour, baking powder and salt. Set aside.
- In a separate bowl, whisk the milk with the honey and eggs.
- Add the liquid to the dry ingredients and whisk until moistened.
- Add the butter and whisk until smooth.
- Pour the batter into the prepared pan and bake for 30 minutes, until golden and a toothpick inserted in the center comes out clean.
- Let the corn bread cool on a rack for 15 minutes.
- Cut into squares and serve warm or at room temperature.

Steps:
- Preset convection oven to 375 for 20 minutes + 5-10 minutes.
- "If you use a convection oven, the cornbread turns out lovly.".
- Spray inside of each SS hotel pan with oil.
- Mix together separetly the dry ingredients and wet ingredients.
- Combine and stir until lumps are gone.
- Pour batter into pans about 3/4 " of batter, cover with tin foil and into convection oven.
- Rotate each pan half way through time set. At end of 20 minutes, uncover, check for uniform light brown color and solid in middle, put back in for 5-10 minutes until knife comes out of middle cleanly.
- Cut into squares of 30 per pan.

FIREHOUSE CORNBREAD BY THE 3S
I came up with this during my previous life as a firefighter after finding myself having to repeat my more popular recipes over and over. This one is easy to communicate and even easier to remember, since all of the measurements are in multiples of 3, which explains some of the more arcane measurements! A triple recipe, of course. I use this recipe both to serve with soup or chili, as well as the foundation for Nana's cornbread turkey stuffing. Enjoy!
